- 1. Preheat oven to 350 degrees. Grease a 9" baking pan.
- 2. In a mixing bowl, cream margarine and sugar. Beat in eggs on at a time, then add pineapple and bread cubes.
- 3. Bake in a 350 degree oven for one hour. Let sit a few minutes to firm up before serving.
PINEAPPLE DRESSING
I got this recipe from my grandmother. She goofed up a recipe for baked pineapple and actually came up with a better dish, or we think so. Easy to make. You can assemble the day before and bake when ready.

Steps:
- In a bowl, combine drained pineapple, egg, sugar, butter.
- Begin adding bread pieces and stir. Bread should absorb liquid. Continue adding bread until bread will no longer absorb liquid. This can be anywhere from 6-10 slices.
- Put in a 9x9" baking dish.
- Bake 350 for 30-45 minutes. Top should begin to brown when it is done.
- I almost always double the recipe, use a 9 x 13 pan, and bake for 1 hour.
PINEAPPLE STUFFING
This nostalgic stuffing is almost like dessert that can be enjoyed during the meal (and after if you want). We've added a little vanilla here since it pairs well with the pineapple and is especially great with ham, balancing the sweet with the savory.

- Preheat the oven to 350 degrees F. Spray an 11-by-7-inch baking dish with cooking spray.
- Arrange the bread cubes in an even layer on a sheet pan. Bake until the bread is just beginning to dry but not browned, about 5 minutes. Set aside.
- Beat the butter and sugars in a large bowl with an electric mixer on medium speed until fluffy, about 2 minutes. Add the eggs and mix on low speed until well incorporated. Add the vanilla, can of pineapple with the juices and 1/2 teaspoon salt and mix until well combined. Fold in the cooled bread cubes.
- Pour into the prepared pan. Bake until deep golden brown and bubbly, 45 to 50 minutes.

MY SOUTHERN PINEAPPLE DRESSING

- In large bowl, cream butter, sugar and vanilla.
- Add eggs, milk and pineapple, mix well.
- Stir in "craisins" and pecans.
- Fold in bread.
- Pour into greased 13x9-inch glass baking dish, do not smooth flat--leave tiny peaks.
- Bake, uncovered, in 350ºF oven for 35-45 minutes until caramelized and peaks are tinged brown.
- I serve this warm, not hot.
- Goes great with turkey, ham, chicken, and pork as a side dish.
- Leftovers even go great re-heated with vanilla or butter pecan ice cream!
PINEAPPLE DRESSING
This dressing goes well with ham, pork roast, or barbecue ribs. I got this recipe from a friend of the family. I make it on Thanksgiving and Christmas at the request of a few family members.

- Melt butter.
- Tear bread into small pieces.
- Combine eggs, sugar, melted butter in large bowl.

- In large mixer bowl, cream butter, sugar and vanilla. Beat in eggs and milk. Scrape bowl down on sides and bottom, and beat again to make sure all is incorporated. Mix in pineapple.
- Gently mix in dried fruits and pecans. *All dried fruits that I use can be found at any grocery store made by Ocean Spray. The craisins are pretty much a must. You can use all craisins, or any combination of dried fruits desired.
- Fold in bread just until all is coated. Don’t over mix! Start with about half and fold in just a little, then add rest and fold just until moistened.
- Pour and spoon into sprayed 13×9 glass baking dish. Don’t smooth top flat. Leave little peaks, but make sure it’s all in there evenly.
