2 and 1/2 cups (10 and 1/4 ounces) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
12 ounces unsalted butter, at room temperature
8 ounces full-fat cream cheese, at room temperature
2 cups (14 ounces) granulated sugar
1 teaspoon vanilla extract
5 large eggs, at room temperature
2 cups (227g/8 ounces) fresh or frozen blueberries
4 ounces full-fat cream cheese, room temperature
2 ounces unsalted butter, room temperature
2 and 1/2 cups confectioners' sugar, sifted, more if needed
1/8 teaspoon salt (tiny pinch!)
1 and 1/2 Tablespoons heavy cream
Fresh blueberries

Steps:

  • Preheat oven to 325°F (163°C). Generously grease a 10-inch (12-cup) bundt pan, being sure to coat all of the nooks and crannies. I suggest using a non-stick baking spray that has flour in it, or greasing the pan with shortening or butter, then dusting it with flour. Set pan aside until needed.
  • In a medium mixing bowl, whisk together the flour, baking powder, baking soda, and salt; whisk well to combine then set aside until needed.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, beat the butter and cream cheese at medium speed until smooth and creamy, about 1 minute. Gradually add in the sugar, then increase the speed to medium-high and continue beating until light and fluffy, about 3 minutes. Beat in the vanilla extract.
  • Reduce the speed back to medium, then add in the eggs, one at a time, beating well after each addition and scraping down the sides of the bowl as needed. Reduce the speed to low and add in the flour mixture, mixing just until combined. Turn mixer off.
  • Using a rubber spatula, gently fold the blueberries into the batter, mixing until just combined.
  • Scrape the batter into the prepared pan.
  • Bake for 65 to 75 minutes, or until the cake is golden and a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan, set on a wire rack, for 20 minutes. Then invert the cake onto the rack and cool completely.
  • In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using a handheld electric mixer, beat the cream cheese and butter on medium-speed until completely smooth. Reduce the speed to low and gradually add in the confectioners' sugar, beating until all of the sugar is completely combined. Add in the salt and heavy cream. Once all of the ingredients have been incorporated, increase the speed to medium-high and beat for a minute.
  • Spread frosting on the top and sides of the cooled cake. Top with fresh blueberries.
  • Slice and serve, or store in an airtight container in the fridge, for up to 5 days.

Make this simple blueberry cake recipe! This blueberry cake is tender and delicious, loaded with blueberries, and not too sweet. It's naturally sweetened and whole grain as written, too (check recipe notes for more flour options). Recipe yields one 9-inch round cake, enough for 8 slices.

1 ¾ cups plus 1 teaspoon white whole wheat flour or regular whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon fine sea salt
¼ teaspoon ground cinnamon
½ cup maple syrup or honey
6 tablespoons melted butter
2 eggs, preferably at room temperature
⅔ cup buttermilk*
2 teaspoons vanilla extract
3 cups blueberries, fresh (1 ½ pints) or frozen, divided
1 tablespoon turbinado sugar (also called raw sugar), for sprinkling on top
Optional serving suggestions: Vanilla ice cream, Greek yogurt or whipped cream

Steps:

  • Preheat the oven to 400 degrees Fahrenheit. Line the base of a 9-inch springform pan with parchment paper cut to fit inside. Butter the sides of the pan to prevent the cake from sticking.
  • In a large mixing bowl, combine 1 ¾ cups of the flour with the baking powder, baking soda, salt and cinnamon. Stir them together with a whisk.
  • In a medium mixing bowl, combine the maple syrup and butter and beat together with a whisk. Add the eggs and beat well, then add the buttermilk and vanilla. Mix well. (If the butter solidifies in contact with cold ingredients, gently warm the mixture in the microwave in 30 second bursts, then stir again.)
  • Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). In a small bowl, toss 2 cups of the blueberries with the remaining 1 teaspoon flour (this helps prevent the blueberries from sinking to the bottom). Gently fold the blueberries into the batter. The mixture will be thick, but don't worry.
  • Pour the batter into the prepared pan. Distribute the remaining blueberries on top, focusing them more toward the center of the cake. Sprinkle the top of the blueberries with the turbinado sugar.
  • Bake for 34 to 38 minutes, until the cake is golden on top and a toothpick inserted into the center comes out clean (blueberry bits aside). Place the cake on a cooling rack to cool. Before releasing the springform sides, you might need to run a butter knife along the outer edge of the cake to loosen it from the pan.
  • Serve as desired. Store leftover cake covered, at room temperature for 2 days, or in the refrigerator for up to 5 days. Or, freeze leftover cake for up to 3 months.

1 teaspoon baking powder
1/2 teaspoon salt

1 cup sugar
2 large eggs
1/2 teaspoon vanilla
2 cups frozen blueberries, rinsed and drained
1 teaspoon lemon juice
1 teaspoon grated lemon zest
1/2 teaspoon cinnamon
Confectioners' sugar, for dusting
1 cup mascarpone, at room temperature
1/4 cup heavy whipping cream, at room temperature
3 teaspoons honey
Zest of 1 lemon
1 vanilla bean, halved lengthwise, seeds scraped

Steps:

  • For the blueberry cake: Preheat the oven to 350 degrees F. Lightly butter a 9-inch springform pan and dust with flour.
  • Whisk 1 cup of the flour with the baking powder and salt in a medium bowl; set aside.
  • Combine the butter and sugar in a large bowl and beat with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs one at a time, beating until well combined. Beat in the vanilla. Reduce the mixer speed to low and slowly add the flour mixture, beating until smooth. Spoon the batter into the prepared pan and smooth with an offset spatula. In a bowl, combine the berries with the remaining 1 teaspoon flour and the lemon juice, lemon zest and cinnamon; spoon over the batter.
  • Bake until golden and a toothpick inserted into the center comes out clean, about 50 minutes. Remove from oven and let cool in the pan for 10 minutes. Carefully slide a thin knife around the edges of the cake to release it from the pan. Transfer the cake to a platter, berry-side up, and dust lightly with confectioners' sugar.
  • For the lemon-mascarpone cream: In a medium bowl, whisk together the mascarpone and whipping cream until just combined. With a rubber spatula, fold in the honey, lemon zest and vanilla seeds.
  • To serve, spoon a dollop of the lemon-mascarpone cream on top of a slice of blueberry cake. (Refrigerate leftover cream in an airtight container for up to 2 days.)

My Mom's Magnificent Blueberry Cake image

My mom is a magnificent cook, and this blueberry cake has been a favorite for many generations of people around the world. It is very forgiving, freezes very well, and can easily be doubled for a 9"x13" pan. While fresh blueberries are best, I stock up on them when in season, freeze them, and then bake this cake with frozen berries, and it is still wonderful. One issue in our family, though, is that some of us (who shall remain nameless) annoy others by picking off all the crumbles from the top, thereby diminishing the experience for everyone else. What can I say? It's hard to resist!

1/4 cup butter or 1/4 cup margarine
3/4 cup sugar
1 egg
2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup milk (I use soymilk to keep it dairy-free)
1 pint blueberries
1/2 cup sugar
1/4 cup butter
1/3 cup flour
1 teaspoon cinnamon

Steps:

  • In a large bowl, beat together the butter, sugar, and egg till well blended.
  • Sift or mix together dry ingredients in another bowl.
  • Add to creamed mixture slowly, alternating with milk/soymilk; mix well.
  • Fold in blueberries.
  • Pour into greased 8" square pan.
  • Mix together topping ingredients until large crumbles are formed.
  • Sprinkle over batter.
  • Bake at 375F for about 45 minutes.
  • Try not to pick off all the topping before your loved ones get a chance at it!

½ cup butter
½ cup white sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 egg yolks
1 ½ cups all-purpose flour
1 teaspoon baking powder
⅓ cup milk
2 egg whites
¼ cup white sugar
1 ½ cups fresh blueberries
1 tablespoon all-purpose flour
1 tablespoon white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
  • Cream butter or margarine and 1/2 cup sugar until fluffy. Add salt and vanilla. Separate eggs and reserve the whites. Add egg yolks to the sugar mixture; beat until creamy.
  • Combine 1 1/2 cups flour and baking powder; add alternately with milk to egg yolk mixture. Coat berries with 1 tablespoon flour and add to batter.
  • In a separate bowl, beat whites until soft peaks form. Add 1/4 cup of sugar, 1 tablespoon at a time, and beat until stiff peaks form. Fold egg whites into batter. Pour into prepared pan. Sprinkle top with remaining 1 tablespoon sugar.
  • Bake for 50 minutes, or until cake tests done.
