Meat loaf is my all-time favorite dish to cook. One year, an aunt and I put together a cookbook that included over 50 variations of that hearty, old-fashioned main course.-Jim Hopkins, Whittier, California

Number Of Ingredients 11

2 eggs
1/4 cup milk
1 tablespoon Worcestershire sauce
1 teaspoon seasoned salt
1 teaspoon onion powder
1 cup quick-cooking oats
1 carrot, shredded
2 tablespoons chopped fresh parsley
1-1/2 pounds ground beef
1 pound ground pork
1/2 cup ketchup

Steps:

  • In a large bowl, beat eggs. Add milk, Worcestershire sauce, seasoned salt and onion powder; mix well. Stir in oats, carrot and parsley. Combine beef and pork; add to egg mixture and mix well. Press into a 9x5-in. loaf pan. Top with ketchup. Bake at 350° for 1-1/2 hours or until no pink remains and a thermometer reads 160°; drain.

I found this recipe years ago in the Best Recipes from the backs of boxes, bottles, cans and jars cookbook. It's still my husband's favorite meatloaf. I usually add another can of soup for the gravy so that we have plenty to pour over mashed potatoes too. Most times I also add some sauteed mushrooms to the gravy.

1 (10 3/4 ounce) can cream of mushroom soup
2 lbs ground beef
1/2 cup breadcrumbs or 1/2 cup oats
1 egg, beaten
1/3 cup onion, finely chopped
1 teaspoon salt
1/3 cup water

Steps:

  • Mix thoroughly 1/2 cup soup, beef, breadcrumbs, egg, onion, and salt.
  • Shape firmly into loaf (8x4-inch); place in shallow baking pan.
  • Bake at 375ºF for 1 hour, 15 minutes.
  • In saucepan, blend remaining soup, water, and 2 to 3 tablespoons drippings.
  • Heat, stirring occasionally.
  • Serve with loaf.

1 lb real lean ground beef
1 egg
1/2 tablespoon onion powder (powder gives stronger flavor) or 1/2 tablespoon minced onion (powder gives stronger flavor)
14 saltine crackers, crushed
1/4 cup ketchup, approx
1 teaspoon Worcestershire sauce
salt and pepper, to taste

Steps:

  • Mix all ingredients together.
  • Form into a loaf and place in a foil-lined bread pan. (There usually is about 2 inches of space on both ends between the meatloaf and the pan).
  • Making sure the top is flat to insure even cooking.
  • You can top it with extra ketchup, if desired.
  • Bake at 425°F for 45 minutes.

2 lbs ground beef
1 cup dry breadcrumbs (see note below)
1 cup water or 1 cup broth
2 carrots, shredded
1 onion, peeled and minced
1 1/2 teaspoons salt
1/2 teaspoon pepper (scant)
1/2 teaspoon garlic powder or 2 garlic cloves, minced

Steps:

  • Into a large bowl, put the hamburger, bread crumbs, water or broth, prepared vegetables and seasoning. Start mixing and mashing everything together with your hands. Don't be squeamish. Continue to mix and mash until everything is evenly distributed, and the water is fully incorporated. Press the mixture into a 9- by 5-inch loaf pan, or any pan which will hold a full 2 quarts. Smooth out the top so it will be pretty. Bake this at 350F for at least an hour, if the meat was at room temperature, 1 1/2 hours if it was still cold from the refrigerator. Remove the meatloaf from the oven and allow it to sit for a couple of minutes to firm up. Drain off the fat.
  • NOTE: The bread crumbs are not written in stone. Depending on what you have, you may substitute dry oatmeal, cracker crumbs, or crushed cornflakes. If nothing else is available, use four slices of fresh bread torn ino small bits.

This is one of my husband's favorite meals. Served with creamy mashed potatoes and he's a happy camper!

Number Of Ingredients 12

1 1/2 lbs ground beef (I use 80/20 but you can use leaner beef if preferred)
1 cup tomato sauce
2 eggs
1 (2 ounce) packet lipton soup mix
1 teaspoon black pepper
1 teaspoon salt
1 tablespoon soy sauce
1 cup onion, dices
1/2 cup bell pepper, diced
1 tablespoon olive oil
8 saltine crackers, crushed
1/2 cup ketchup

Steps:

  • Heat a 10 inch skillet with the olive oil and saute the onions and bell peppers until softened.
  • Allow the mixture to cool while you assemble the rest of the ingredients.
  • In a large bowl add the meat, tomato sauce, seasonings, eggs and crackers.
  • Mix the ingredients together using a large fork so you don't over compact the meat.
  • Next mix in the cooled vegetables.
  • Form the meat into a loaf shape on a shallow rimmed backing sheet.
  • Top with the ketchup.
  • Bake in a 350 degree oven 1 hour.

1/4 cup chopped green bell pepper
1/4 cup chopped red bell pepper
1/4 cup chopped onion
2 eggs
1 box Stove Top Stuffing Mix, any flavor
1/4 teaspoon garlic salt
1/4 teaspoon lemon pepper
1/4 teaspoon salt
1/2 cup ketchup
Black pepper

Steps:

  • Preheat oven 375°F. Add all ingredients together except for ketchup and black peper. Mix together with hands.
  • Smash mixture evenly in an 8x8 square baking pan. Take black pepper and sprinkle lightly over top. Then spread ketchup evenly.
  • Bake for 25 to 30 minutes or until cooked through.
