I rediscovered this old-time recipe recently and found it's everyone's favorite. Even 4-year-olds have asked for these frosted bars as nursery treats. -Carol Nagelkirk, Holland, Michigan

1 cup butter, softened
1 cup sugar
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
1 tablespoon ground cinnamon
1 tablespoon ground cloves
1 tablespoon ground ginger
2 large eggs, room temperature
1/2 cup molasses
1 cup hot brewed coffee
FROSTING:
1/2 cup butter, softened
3 ounces cream cheese, softened
2 cups confectioners' sugar
2 teaspoons vanilla extract
Chopped nuts, optional

Steps:

  • Preheat oven to 350°. Cream butter and granulated sugar. Sift together flour, salt, baking soda and spices; add to creamed mixture. Add eggs, 1 at a time, beating well after each addition, and molasses. Blend in coffee. Spread in a 15x10x1-in. baking pan. , Bake 20-25 minutes. Cool. For frosting, cream butter and cream cheese; add confectioners' sugar and vanilla. Spread over bars. If desired, top with nuts.

3/4 cup butter or margarine, softened
1/2 cup packed brown sugar
1 egg
1/3 cup molasses
2 1/2 cups Gold Medal™ all-purpose flour
2 teaspoons baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
1/2 teaspoon granulated sugar
1/4 teaspoon ground cinnamon
1 cup Betty Crocker™ Whipped vanilla frosting (from 12-oz container)

Steps:

  • Heat oven to 350°F. In large bowl, beat butter and brown sugar with electric mixer on medium speed until well blended. Beat in egg until well blended. Beat in molasses until creamy. On low speed, beat in remaining bar ingredients until soft dough forms. Press dough in bottom of ungreased 13x9-inch pan.
  • Bake 15 to 18 minutes or until edges look dry and center springs back when touched gently with finger. Cool completely, about 1 hour.
  • In small bowl, mix granulated sugar and 1/4 teaspoon cinnamon. Spread frosting over bars; sprinkle with cinnamon-sugar mixture. For bars, cut into 6 rows by 4 rows.

1-1/2 cups butter, softened
1 cup sugar
1 cup packed brown sugar
2 large eggs
1/2 cup molasses
2 teaspoon vanilla extract
4-1/2 cups all-purpose flour
1 tablespoon ground ginger
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground cloves
FROSTING:
1/3 cup packed brown sugar
1/4 cup milk
2 tablespoons butter
2 cups confectioners' sugar
1/2 teaspoon vanilla extract
Pinch salt

Steps:

  • In a large bowl, cream butter and sugars. Add the eggs, one at a time, beating well after each addition. Stir in molasses and vanilla; mix well. Combine dry ingredients; gradually add to creamed mixture. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 325° for 12-15 minutes or until cookies spring back when touched lightly (do not overbake). Remove to wire racks. , For frosting, in a large saucepan, bring the brown sugar, milk and butter to a boil; cook and stir for 1 minute. Remove from the heat (mixture will look curdled at first). Cool for 3 minutes. Add confectioners' sugar, vanilla and salt; mix well. Frost warm cookies.

1 cup plus 1 tablespoon sugar
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup plus 2 tablespoons mild-flavored (light) molasses
2 large eggs
2 cups all purpose flour
2 teaspoons baking soda
1 1/4 teaspoons ground cinnamon
3/4 teaspoon ground ginger
1/2 teaspoon salt
1 1/2 cups chilled whipping cream, divided
3/4 cup boiling water

Steps:

  • Preheat oven to 350°F. Butter and flour 9x9x2-inch metal baking pan. Using electric mixer, beat 1 cup sugar and butter in large bowl until blended. Beat in 3/4 cup molasses, then eggs 1 at a time. Sift in flour, baking soda, cinnamon, ginger, and salt; beat until blended. Beat in 1/4 cup cream, then 3/4 cup boiling water. Transfer batter to prepared pan.
  • Bake cake until tester inserted into center comes out clean, about 45 minutes. Cool cake in pan on rack.
  • Beat 1 1/4 cups cream and 1 tablespoon sugar in medium bowl until peaks form. Fold in 2 tablespoons molasses just until streaks appear (do not overmix). Cut cake into slices; transfer to plates. Serve with molasses whipped cream.

⅓ cup shortening
½ cup white sugar
1 egg
½ cup molasses
½ cup water
2 cups self-rising flour
½ teaspoon salt
1 teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon ground cinnamon

Steps:

  • Cream the shortening, sugar, egg, molasses and water. Mix in the flour, salt, ginger, nutmeg, cloves and cinnamon. Cover and chill for 1 hour.
  • Preheat oven to 400 degrees F (205 degrees C).
  • Drop teaspoonfuls of dough onto ungreased cookie sheets about 2 inches apart. Bake for about 8 minutes.

  • Mix butter, sugar, egg, molasses and water together in a large bowl. Stir dry ingredients together in a medium bowl and combine with wet ingredients. It will feel like a wet dough. Chill dough for at least 15 minutes. Preheat oven to 400 degrees. Drop by teaspoonfuls on a light greased cookie sheet. Bake 8 minutes or until hardly no imprint remains when lightly touched. While slightly warm frost with maple flavored icing.
  • To make icing blend maple syrup and hot water together. Add sugar and stir. If it's too thick, add more hot water. Too thin, add more sugar. Spread on cookies with a spatula or drizzle. Makes approximately 4 dozen.
