GRANDMA'S SECRET HOT SAUCE
This was the dipping sauce my grandmother would make for her pan-fried pot stickers. To this day, the flavors remind me of her cooking. It's one of those sauces that is so simple yet perfect. I've made it many times in my professional career, and it constantly amazes and bewilders all the chefs who have tried it. Now it's yours to pass on and impress with.

Steps:
- Place the peppers, garlic, both sugars and salt in a food processor and pulse until roughly chopped. Transfer the mixture to a clean container, cover and let sit at room temperature. A mason jar with a loosely fitting lid or a clean bowl with plastic wrap will work.
- Fermentation should begin in about 2 days. When bubbles begin to form, stir your "mash" once or twice a day to combine and help it settle. Continue until the mixture stops bubbling, about 6 to 8 days.
- Transfer the mash to a blender, add the vinegar, and puree until very smooth. Strain the sauce
- through a fine-mesh sieve. Add the xanthan gum and puree again until smooth and thick. Store your sauce in squeeze bottles in the fridge for up to 3 months!

Grandma used to make this on Sunday nights, it is the best! Even if you are usually not a big chocolate lover, you will LOVE this.

Steps:
- Heat medium sized sauce pan at medium heat.
- Put chocolate and butter into the pan, melt.
- Mix sugar into butter and chocolate mixture.
- In a separate bowl, beat eggs with a few tablespoons of milk.
- Stir egg mixture into chocolate sauce as fast as you can!
- Don't take too long because the eggs will scramble-mixing half of the egg mixture in at a time makes it easier.
- Add enough milk to dissolve the sugar and make a smooth sauce.
- Use more than called for, if necessary.
- Add salt and vanilla.
- Enjoy!
- Store left overs in the fridge for up to a week.
- You may be tempted to eat it out of the jar!

FUDGE FROSTING/ HOT FUDGE SAUCE
Originally the recipe was used as frosting for my grandma's chocolate mayonnaise cake, but also works well as a hot fudge sauce for ice cream. It's not overpowering in sweetness or flavor and I love the smooth texture. You decide or do what I did and try both. Cooking, prep, and yield is approximate.

- Stir first five ingredients over medium low heat until thick, when it just starts to bubble.
- Remove from heat.
- Stir in vanilla and butter.
- If using as frosting let cool.
MY GRANDMA'S HOT FUDGE SAUCE
Steps:
- First, combine all ingredients together in a saucepan except for the vanilla.
- Over high heat bring the ingredients to a boil. Once to boil, boil this for 1 1/2 minutes.
- Take off burner and add vanilla. Serve over ice cream. Enjoy!

- Combine sugar, cocoa powder, milk, and butter in small kettle. Melt and bring up to a boil. Boil for 1 minute longer and remove from the burner.
- Add vanilla. Mix well.
- Serve over vanilla ice cream. Refrigerate leftovers and reheat later. So good! Yum!
