CARROT, TOMATO AND BASIL BABY FOOD

Steps:
- Put the carrots in a small saucepan, cover with boiling water and simmer, covered with a lid, for 10 minutes. Alternatively steam the carrots for 10 minutes or until tender.
- Whilst the carrots are cooking, prick the skins of the tomatoes and pour over boiling water and leave for 30 seconds.
- Draining and rinse with cold water - the skins will peel away with ease.
- Add the cauliflower to the carrots and cook covered for a further 7-8 minutes, adding extra water if necessary.
- In another pan, melt the butter, add the tomatoes and saute until mushy. Stir in the basil and cheese until melted.
- Use a hand blender to purée the carrots and cauliflower with the tomato sauce, adding about 3 tbsp of the cooking liquid.

LOVELY LENTILS (BABY FOOD)
I have been making baby food and purees for the last 5 months. I love it and baby does too! I was confident baby would turn this recipe down but this is one of his absolute favorites! Credit goes to Annabel Karmel and her fabulous baby food ideas. After preparing a batch of this, I spoon portions into an ice cube tray, flash freeze, remove from trays and then store in bags in the freezer. Two cubes reheated is the perfect portion for a hungry nine month old

Steps:
- In a medium saucepan saute the onion, carrot, and celery in vegetable oil for 5 minutes or until softened.
- Add lentils and sweet potatoes and slowly add stock.
- Bring to a boil.
- Cover, reduce heat and simmer.
- Puree in a blender and portion out as desired. This recipe will make anywhere from 5-10 servings.
- Can be refrigerated for 1 week or frozen for 6 weeks.

SQUASH APPLE PUREE (BABY FOOD)
This baby food is easy to make and prepare ahead to freeze and use as desired. I used to hand make most of the food my little one ate and it isn't terribly difficult once you get in to groove. You can alway save a few baby food jars and take this with you that way for convenience

- Chop squash and apple.
- Place in a buttered dish and drizzle with yogurt, breast milk or soy milk.
- Bake, covered for 40 minutes at 325F.
- Puree in baby food grinder or blender.
- *Note:Youcan make this in quantity and freeze in ice cube trays.
- After it's frozen, transfer the cubes to small bags to thaw and warm as needed.

- Preheat oven to 350°.
- Combine: flour, baking soda, salt, sugar, cinnamon, carrots and oil.
- Add eggs slowly, mix thoroughly.
- Spray jelly roll pan or 4 sided cookie sheet with nonstick cooking spray, dust with flour.
- Pour batteer into prepared pan. Bake 30-40 minutes or until center is done.
- Cool completely and frost.
