Our friend made these roll-ups for a Mexican-themed garden party. A sprinkling of onion soup mix makes them a little different. -Denice Louk, Garnett, Kansas

Yield about 3-1/2 dozen.

Number Of Ingredients 8

2 packages (8 ounces each) cream cheese, softened
1 cup sour cream
2 cups shredded cheddar cheese
1/2 cup picante sauce
1 can (4-1/2 ounces) chopped ripe olives, drained
2 tablespoons taco seasoning
1 tablespoon onion soup mix
8 flour tortillas (10 inches), room temperature

Steps:

  • In a small bowl, beat cream cheese and sour cream until smooth; stir in the cheddar cheese, picante sauce, olives, taco seasoning and soup mix. , Spread over tortillas; roll up jelly-roll style. Wrap in plastic; refrigerate for at least 1 hour. Just before serving, cut into 1-in. pieces.

Mexican Cream Cheese Rollups image

Light, tasty, creative appetizer, and can become almost fat-free with the substitutions I recommend. Yum! (Cook time==refrigeration time).

1 (8 ounce) package cream cheese, softened (I use FF cream cheese)
1/3 cup mayonnaise (I use FF mayo)
2/3 cup pitted green olives, chopped
1 (2 1/4 ounce) can black olives, chopped
6 green onions, chopped
8 10-inch flour tortillas
1/2 cup salsa

Steps:

  • In a medium bowl, mix together cream cheese, mayonnaise, green olives, black olives and green onions.
  • Spread cream cheese mixture in a thin layer onto each tortilla.
  • Roll up tortillas.
  • Chill about 1 hour, or until the filling is firm.
  • Slice chilled rollups into 1 inch pieces.
  • Serve with salsa for dipping.

4 green onions, chopped
1 can (4-1/4 ounces) chopped ripe olives, drained
1 teaspoon garlic powder
5 flour tortillas (10 inches), room temperature
Salsa, optional

Steps:

  • In a small bowl, combine the first seven ingredients. Spread over tortillas. Roll up tightly and wrap in plastic. Refrigerate for 1 hour or until firm. , Unwrap and cut into scant 1-in. slices. Serve with salsa if desired.

  • Place yeast and sugar in the bowl of a stand mixer fitted with a bread hook. Mix and then pour in warm water. Allow to bloom for about 10 minutes, or until mixture becomes bubbly, swells, and is fragrant.
  • Blend in minced jalapeno, 1/4 cup melted butter (reserving the other 1/4 cup for basting the rolls at the very end), vegetable oil, flour, salt, and cilantro. Blend with bread hook for 7-10 minutes, or until dough is elastic and pulls away from the side of the bowl.
  • Lightly coat a large mixing bowl with cooking spray. Turn dough into the bowl and flip one time to coat. This will prevent the dough from sticking to your bowl. Cover with a damp kitchen towel and place in a warm, draft-free place to rise for approximately 30 minutes.
  • When bread has risen, cut into half and then divide each half into 7 equal pieces. Flatten each piece with your palm, place a cheese chuck in the center and then cover, pinch and roll. Make sure there are no seams for the cheese to escape while baking. Repeat with for a total of 14 rolls.
