My Festy Feta Burger ! image

This is for the contest that Sherri has on JAP. The ingredients all start with the letter F and it was great! I made this tonight (1-29-12). My little grandson Paxton (age 2) wouldn't leave my side while I was making this and he ate half of my burger! The Festy Burgers are made by Festival Foods and are sold in Lambeau Field which is home of the Green Bay Packers football team. I just had to add ingredients starting with the letter F, this was a big hit, by the way there aren't any left! The Fennel Relish is my own relish that I canned last summer. Play with your food !!!

1 package(s) original festy burgers (6 to a pack)
FRESH FRENCH DRESSING WITH FETA (FOR TOPPING)
6 tablespoon(s) mayonnaise
3 tablespoon(s) ketchup
3 tablespoon(s) feta cheese (crumbled)
ADDITIONAL TOPPINGS
6 teaspoon(s) fennel relish (can replace with sweet pickle relish with anise flavoing mixed in)
6 teaspoon(s) feta cheese (crumbled)

Steps:

  • Go to Festival Foods and purchase original Festy Burgers (you can order them online too) (Official burger of Lambeau Field and the Green Bay Packers! Made by Festival Foods)
  • Place your original Festy Burger into a skillet or on the grill. Cook until done.
  • Mix together in a small bowl the ingredients for the French Dressing with Feta. Cut your Festival bun in half. place a heaping teaspoon of dressing onto each half of the bun.
  • Put some fennel relish on top of the dressing on each bun half.
  • Sprinkle each bun half with feta cheese.
  • Put one Festy burger on the bottom half of the bun.
  • Sprinkle more Feta cheese onto burger (optional).
  • Place the top of the bun on top of the burger.
  • Feast your eyes on the best burger in town!

Turkey burgers have their fans, but we prefer feta burgers with ground beef and spinach. We serve them on toasted buns with lettuce, tomato and tzatziki. -Susan Stetzel, Gainesville, New York

1 tablespoon olive oil
2 shallots, chopped
2-1/2 cups fresh baby spinach, coarsely chopped
3 garlic cloves, minced
2/3 cup crumbled feta cheese
3/4 teaspoon Greek seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds lean ground beef (90% lean)
8 whole wheat hamburger buns, split
Optional toppings: refrigerated tzatziki sauce, fresh baby spinach and tomato slices

Steps:

  • In a large skillet, heat oil over medium-high heat. Add shallots; cook and stir until tender, 1-2 minutes. Add spinach and garlic; cook until spinach is wilted, 30-45 seconds longer. Transfer to a large bowl; cool slightly., Stir feta cheese and seasonings into spinach. Add beef; mix lightly but thoroughly. Shape into eight 1/2-in.-thick patties., Grill burgers, covered, over medium heat until a thermometer reads 160°, 6-8 minutes on each side. Grill buns over medium heat, cut side down, until toasted, 30-60 seconds. Serve burgers on buns. If desired, add toppings.Freeze option: Place patties on a baking sheet lined with plastic wrap; wrap and freeze until firm. Remove from pan and transfer to a freezer container; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 160°.

A Greek-inspired twist on burgers. Great with cole slaw or a kale salad. I devised this recipe when I had a bunch of mint, parsley, and feta cheese on hand.

1 ½ pounds ground beef
⅓ cup crumbled feta cheese
2 tablespoons minced onion
2 tablespoons minced red bell pepper
2 tablespoons chopped fresh mint
2 tablespoons minced fresh parsley
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon seasoned salt
½ teaspoon ground black pepper

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Mix ground beef, feta cheese, minced onion, red bell pepper, mint, parsley, garlic powder, onion powder, seasoned salt, and black pepper together in a large bowl until evenly mixed; shape into 6 patties.
  • Cook the burgers until they are beginning to firm, and are hot and slightly pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).

1 lb. lean ground beef
1/4 cup ATHENOS Traditional Crumbled Feta Cheese
4 kaiser rolls, split, toasted

Steps:

  • Preheat grill to medium heat. Shape meat into 8 thin patties. Cover each of 4 of the patties with 1 Tbsp. feta cheese; top with second patty. Pinch edges of patties together to seal.
  • Place on grill. Grill 7 to 9 minutes on each side or until cooked through.
  • Fill rolls with patties.

  • Combine the ground buffalo/beef, Worcestershire, and seasonings in a medium bowl. Knead together with your hands until well combined, then form the mixture into 8 equally-sized balls. Flatten them to make thin patties.
  • Divide the feta cheese between four patties, then top each with a second patty. Press the edges together to seal the cheese inside, then smooth out the sides with the palms of your hands. Sprinkle generously with salt.
  • Cook on the grill until the burgers are cooked to your desired doneness, 4-5 minutes per side for medium. Aim for between 145 and 160 degrees F.   • Combine the ground meat(s), garlic, mint, oregano, salt and pepper in a mixing bowl and knead well. Add 2 to 4 tablespoons of olive oil to the mixture while kneading, to create a soft, succulent mass. The mixture should be dense but slightly unctuous. Cover and refrigerate for 30 minutes to 12 hours. (You can make ahead, the day before.)
  • Mash the feta, cayenne or paprika, and lemon juice together in a bowl using a fork, or pulse on and off in a food processor, to form a thick paste. Divide the mixture into 8 eqyal portions, about a tablespoon each, and shape into small balls.
  • Right before preparing the burgers, core and cut the tomatoes into 1-inch/2.5-cm cubes, place in a bowl, season lightly with salt and set aside.
  • Divide the ground meat mixture into 8 equal parts. Rub the palms of your hands with a little olive oil and shape each portion into a burger. Using your thumb, make an indentation in each burger and fill with the spicy feta ball. Pinch together the meat to seal the indentation, so that the feta is not exposed.
