Easiest Ever MOIST Apple Cake image

A very moist, perfectly spiced Apple Cake! This is incredibly easy to make - no mixer required. This must be made with fresh apples, not canned. See note 5 for information about different measures in different countries & different oven types. Also, I do not recommend substituting butter for all or part of the oil - it does not come out as moist and you can't taste buttery flavour anyway because of the spice flavourings! FREEZES great!

2 cups flour (, plain / all purpose (Note 1))
3/4 tsp baking soda ((bi-carb soda) (Note 1))
3/4 tsp EACH salt, cinnamon and ground cloves
1/2 tsp ground nutmeg ((or 1/4 tsp freshly ground))
1 1/4 cups white sugar ((Note 2))
1 cup vegetable oil
2 eggs (, large, at room temperature (55-60g/2oz each))
1 1/2 tsp vanilla extract
2 cups apple ( , peeled, cored and cut into 8mm/ 1/3" cubes (~2 large, 3 small) (Note 3))
1/2 cup flaked raw almonds
Icing sugar . confectioners sugar, for dusting

Steps:

  • Preheat oven to 180°C/350°F (all oven types).
  • Grease and line a 21 cm / 9" springform cake pan. (Note 4)
  • Place flour, baking soda, salt and spices in a large bowl and whisk to combine.
  • Whisk oil and sugar in a bowl, then whisk in eggs and vanilla.
  • Pour the wet ingredients into the dry and mix with a wooden spoon until JUST combined. Stir through apple (optional: add 3/4 cup chopped walnuts or other nuts).
  • Pour into cake pan. Sprinkle over almonds.
  • Bake for 50 minutes - 1 hr. Check at 50 minutes - it is cooked when a skewer inserted into the centre comes out clean.
  • Cool for 10 minutes before turning out onto a rack to cool. Dust with icing sugar if using, then serve. This cake doesn't need cream or ice cream because it is so moist, but I wouldn't turn it down!

This is a Fivekiller family-favorite fresh apple coffee cake. I got this recipe from my mother's handwritten recipes while cleaning out the old homestead in Cherokee, North Carolina. Our family wants it for dessert at all family gatherings. Store in the refrigerator.

3 cups thinly sliced apples
3 large eggs
2 cups white sugar
1 cup vegetable oil
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
1 ½ cups chopped walnuts
1 cup raisins
1 teaspoon vanilla extract
1 (8 ounce) package cream cheese, softened
¼ cup unsalted butter, melted and cooled
2 cups confectioners' sugar
1 teaspoon lemon juice
1 lemon, zested

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking pan and spread apples evenly over the bottom.
  • Beat eggs with a mixer until thick and light. Mix in sugar and oil.
  • Stir flour, cinnamon, baking soda, and salt together in a bowl; add to the egg mixture and beat until incorporated. Stir in walnuts, raisins, and vanilla extract; batter will be very thick. Spread batter over the apples in the pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Let cool, about 30 minutes.
  • Meanwhile, beat cream cheese until fluffy. Beat in melted butter. Add confectioners' sugar, lemon zest, and lemon juice; mix until well combined. Spread frosting over the cooled cake.

1 cup vegetable oil
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/4 teaspoons baking powder

2 cups finely chopped peeled tart apples
1 cup chopped walnuts
1-1/4 cups whipped topping

Steps:

  • Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

These are my favorite cakes! I LOVE Them! These can be prepared as a muffins or shortcakes or one round cake!

Number Of Ingredients 10

300 g all-purpose flour
100 g light brown sugar
1 teaspoon ground cinnamon
2 teaspoons baking powder
2 eggs
230 ml light soymilk
60 ml corn oil
1 fresh apple, peeled, cored and shredded
1 tablespoon brown sugar, for sprinkling
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 180°C.
  • Spray 12 muffin cups or use a silicon heart or donuts cup (what ever you like).
  • Combine together the flour with the sugar, the baking powder and 1 tsp of cinnamon.
  • In another bowl beat the eggs, add the milk and the oil.
  • Stir in the flour mixture.
  • Squeeze the juice from the shredded apples and add them to the batter.
  • Stir with a wooden spoon.
  • Fill the cups 3/4 full.
  • Combine together 1 tbsp of light brown sugar with 1 tsp ground cinnamon.
  • Sprinkle the top of the cakes with this mixture.
  • Pour in the preheated oven.
  • Bake about 20-25 minutes.
  • Remove from the oven and chill about 5 minutes on a wire rack.
  • Walnuts and raisins can be added if desired.
  • The top of these cakes will be crispy and sweet!
