My husband loves his food extra-cheesy, so I can never put too much cheese over the top of these enchiladas! You can set out small bowls of diced onions and tomatoes so folks can add their own garnishes. -Joylyn Trickel

1 pound ground beef
1 medium onion, chopped
1 can (16 ounces) chili beans, undrained
1 can (10 ounces) enchilada sauce, divided
1/2 cup salsa, divided
Canola oil
7 corn or flour tortillas (8 inches)
1 cup shredded cheddar cheese
2 tablespoons sliced ripe olives

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, 2/3 cup enchilada sauce and 2 tablespoons salsa; set aside. , In a small skillet, heat 1/4 in. of oil. Dip each tortilla in hot oil for 3 seconds on each side or just until limp; drain on paper towels., Top each tortilla with 2/3 cup beef mixture. Roll up and place seam side down in an 11x7-in. baking dish. Drizzle with remaining enchilada sauce and salsa. Sprinkle with cheese and olives. , Bake, uncovered, at 350° for 20-25 minutes or until bubbly.

3 tablespoons chili powder
2 tablespoons paprika
1 tablespoon ground cumin
1 tablespoon garlic powder

1 (8 ounce) can tomato sauce
4 cups water
½ cup all-purpose flour, divided
1 ½ teaspoons sugar
2 tablespoons cooking oil
12 (6 inch) corn tortillas
4 cups shredded American cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat the ground beef in a large skillet over medium heat. Cook, stirring to crumble, until no longer pink. Drain off grease and season with chili powder, paprika, cumin, garlic powder, and salt. My son needed an enchilada recipe for his Food Science class. He wanted my recipe, but I don't use a recipe per se'. I have guestimated here and I think it should be pretty close to what I make. My enchiladas are comfort food. We have these for New Years because we are usually tired of turkey and ham by then. These can be made all beef or all cheese.

1 lb ground beef
1 small onion, chopped fine
1/8 teaspoon garlic salt
1/4 cup olive oil or 1/4 cup vegetable oil
1/4 cup flour
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
2 tablespoons chili powder
1/2 teaspoon dried basil
1 teaspoon ground cumin
1/4 teaspoon dried coriander
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper
1/8 teaspoon salt
1 (15 ounce) can tomatoes, pureed in blender
14 ounces chicken broth
1/2 cup water
12 corn tortillas
1/2 lb monterey jack cheese, grated
1/2 lb cheddar cheese, grated

Steps:

  • Brown ground beef with onion and garlic salt just until pink is gone.Remove beef from skillet and set aside.
  • In the same skillet heat the oil. Add the next 11 ingredients and stir over heat until bubbly and spices have released their fragrance.
  • Stir in tomato puree, and stir till well blended. Stir in broth and water. Bring to a boil and lower heat.Taste and adjust seasoning. Leave to simmer until slightly thickened.
  • Preheat oven to 400*.
  • In a casserole dish spoon a couple of tablespoons of the sauce to coat bottom. Pick up one tortilla with tongs and dredge the tortilla through the sauce.
  • Leave the tortilla submerged just enough to soften but not fall apart.
  • Lay tortilla in the casserole and spoon 1/12 of the beef mixture & 1/12 of the Jack cheese. Roll the tortilla over the filling and lay seam side down in the casserole.
  • Repeat with the rest of the tortillas. Pour remaining sauce over all the enchiladas. Sprinkle the Cheddar over the top of the casserole.
  • Bake in 400* oven for 20 minute or until sauce is bubbling and cheese is melted.

  • Prepare taco meat per package directions, set aside.

  • Pre heat oven to 350 F.

This is a FABULOUS recipe for beef enchiladas! I got this recipe from my stepmom several years ago...and my family just loves them! I usually serve them with Mexican rice and a salad! This makes a big batch so there are always leftovers! Enjoy!

10 burrito-size flour tortillas
2 (8 ounce) monterey jack cheese
1 onion, chopped
1/2 cup butter
1/4 cup flour
8 ounces sour cream
1 (14 ounce) can chicken broth

Steps:

  • Brown meat with onions. Drain fat.
  • Roll meat, cheese and onions in tortillas. (I use one bag to roll and one to top!).
  • To make sauce: Melt butter.

  • Preheat oven to 350 degrees F (175 degrees C).

My wife really likes these. Several times a year she volunteers me to make them for potlucks and such at her place of employment. Sometimes, as I lay awake at night, I think these enchiladas may be what finally convinced her to marry me. (WARNING: If you don't like cheese,or if you're afraid of a little thing like a clogged artery, these are not for you).

1 lb hamburger
1 (32 ounce) package Velveeta cheese
2 cans Rotel Tomatoes (or similar brand)
vegetable shortening
20 corn tortillas
6 -8 cups shredded mild cheddar cheese or 6 -8 cups shredded longhorn cheese
1 medium onion, chopped

Steps:

  • Brown the hamburger Cut velveeta into half-inch cubes and place in saucepan with 2 cans of Rotel tomatoes.
  • Cook over medium heat, stirring occasionally until thorughly melted and blended.
  • Stir the browned hamburger into the cheese sauce, then set sauce aside (NOTE: you may have to swat a few hands as they try to use your sauce for a dip).
  • Completely, but lightly cover both sides of one tortilla with shortening (Don't be afraid to use your hands), then place the tortilla on a microwave-safe plate.
  • Completely but lightly cover one side of the next tortilla and place it atop the first tortilla, shortening side up.
  • Repeat Step 2 until all tortillas are stacked, then microwave the entire stack on high for 5 minutes and allow to cool.
  • Combine shredded cheese and chopped onion in a bowl and gently mix together using your hands.
  • Lightly cover the bottom of a baking dish (mine is 13x9, I think) with some of the cheese sauce (This will prevent the tortillas from becoming stiff and chewy as they cook).
  • Place a generous portion of the cheese/onion mixture onto a tortilla, then roll the tortilla like a cigar (not too tight though).
  • Place into the baking dish, seam side down to prevent the enchilada from unrolling.
  • Repeat until all tortillas have been stuffed, rolled, and placed into the baking dish.
  • Cover the enchiladas with the cheese sauce and any leftover cheese/onion stuffing.
  • Bake at 350 for 20-30 minutes, depending on your oven.
  • Allow to cool for 5 minutes before serving.
