48 Organic Cardamom Pods or Star Anise
2 teaspoons Organic Whole Black Peppercorns
4 Tablespoons Organic Fennel Seeds
2 teaspoons Organic Coriander Seeds
2 teaspoons Organic Whole Cloves
4 sticks of Organic Sweet (True Cinnamon) Cinnamon Sticks
1 Jar Crystalized Ginger
2 Cups Organic Loose Leaf Darjeeling Tea or Assam Tea

Steps:

Preheat oven to 350 degrees F. Break the anise star pods, if using in lieu of the cardamom, in half. Then crumble the cinnamon sticks into smaller pieces. Next, place the anise star pods (or cardamom) and cinnamon into a large dish with the black peppercorns, fennel seeds, coriander seeds and cloves. Heat your spices in the oven for about 5 minutes until fragrant. Then remove the warm chai tea spices from the oven. Allow to cool. Crush the cooled spices as much as possible using the bottom of a glass or cup. In a large bowl, combine the tea, candied ginger and spices. Mix well. Fill two 6.75 oz. bags or mason jars with the tea, then label with brewing instructions.

Ingredients

3/4 cup non-fat powdered milk
1 1/4 cups non-dairy powdered coffee creamer
1 1/2 cups powdered French vanilla flavored coffee creamer
2 cups granulated sugar
1 1/4 cups brown sugar, packed
2 cups instant tea, unsweetened
2 1/2 teaspoons ground cinnamon
1 1/4 teaspoons ground cloves
1 1/4 teaspoons ground cardamom
1 1/2 teaspoons ground nutmeg
1 teaspoon allspice
1/4 teaspoon white pepper, finely ground

Steps:

Combine all ingredients -- Stir in spices.
In a blender or food processor.blend 1 cup at a time until mixture is consistency of fine powder.
To serve:.
Stir 2 heaping tablespoons Chai Tea Mix into mug of hot water -- or I use 2" milk.to make it creamier.
Makes 8-9 cups of tea mix.
Yield 7 cups.divide as you see fit.or keep for yourself.

What a nice (and EASY!) gift to give at the holidays or any time of the year! Uses dry ingredients (like powdered instant iced tea mix) that are easily found at the grocery store. I put my mix in a pretty glass container and tie with a ribbon with an instruction card attached. Each recipe makes about 4 servings.

1/2 cup nonfat dry milk powder
1/2 cup powdered vanilla coffee creamer (dry)
3 tablespoons powdered sugar
1/4 cup unsweetened instant tea (dry)
1 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/2 teaspoon ground cloves

Steps:

Mix all together and place in pretty airtight container and attach these instructions: For each serving, place 3 to 4 heaping teaspoons mix in a cup.
Fill with 8 ounces very hot water.
For creamier chai, use half milk and half water.

Watch out Starbucks, you'll be out of business in no time. The nutmeg and allspice is an added spice hit, use as desired. Also, I've been playing around with the amount of sugar, I like the sweetness with just 1/2 cup sugar, some suggest no sugar at all. If you don't care for the residue in the bottom of your cup, you can strain the mix with a fine sieve. Food for thought. Note 12-21-12 (I want to thank the gal that just reviewed The Chai Tea.... she used it in her K coffee machine by just running hot water into the cup, perfect temperature for the tea mix)
