Big Fat Greek Eggplant (Aubergine) Salad image

This is Andrew Zimmer's recipe. He recommends roasting the eggplant on a gas grill--you can also do it on a gas stovetop or over charcoal that isn't too hot. This is enough for 4 to 6 generous salad servings or, as a topping for crostini, enough for a whole baguette, sliced relatively thin and lightly grilled.

2 eggplants
1/3 cup scallion
1/3 cup parsley
1 tablespoon minced garlic
1 tablespoon fresh oregano (or 2 tsp. dried oregano)
1 tablespoon lemon juice
2 tablespoons red wine vinegar
1/4 cup capers
1/2 cup diced tomato
1/4 cup chopped parsley
salt, pepper and lemon to taste

Steps:

  • Roast the eggplant over a gas grill for 25 minutes at 450 degrees.
  • Place in a colander and allow it to cool. Puree the scallions, parsley, garlic and oregano in a food processor.
  • In a separate bowl, combine lemon juice, red wine vinegar, some capers, tomato, chopped parsley and the herb mixture.
  • Next peel away the skin of the eggplant revealing charred flesh on the inside; leave the seeds; in a lot of recipes they're called "the poor man's caviar.".
  • Roughly cut up the eggplant, and combine it with the remaining ingredients.
  • Lastly, add salt, pepper, lemon to taste. Serve the eggplant salad (hot or cold) on grilled bread.

My recipe for Moussaka, the classic Greek meat-and-eggplant dish, takes a bit of work but is so worth it (my photo doesn't do it justice, since it was sliced cold the day after, then photographed!). This can prepared with all ground beef, or a ground beef/lamb blend. Recipe may be halved and baked in slightly less time in an 8 x 8 baking dish (remember to use exactly half of all listed ingredients!).

1/4 cup virgin olive oil
2 freshly mashed garlic cloves (use garlic press)
1/4 teaspoon fresh ground black pepper
1/4 teaspoon fine sea salt
1/2 cup grated parmesan cheese
2 tablespoons virgin olive oil
1 1/2 lbs lean ground beef or 1 1/2 lbs ground lamb
1 large chopped onion
1 medium chopped green bell pepper
2 tablespoons minced kalamata olives
2 tablespoons minced flat leaf parsley
2 tablespoons chopped fresh garlic
1 teaspoon fine sea salt
1/2 teaspoon fresh ground black pepper
1 (14 ounce) can diced tomatoes
3/4 cup dry greek red wine
1 (6 ounce) can tomato paste
2 tablespoons red wine vinegar
2 teaspoons Greek honey
1 1/4 teaspoons crushed dried oregano
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/2 tablespoon ouzo or 1/4 teaspoon pure anise extract
1/4 teaspoon fresh grated lemon zest
1/4 teaspoon crushed dried mint
1/4 teaspoon fresh ground white pepper
1 pinch crushed red pepper flakes
3 tablespoons grated parmesan cheese
1/2 cup bechamel sauce (reserved from recipe below)
1/2 cup salted butter
1/2 cup all-purpose flour
4 cups whole milk
4 large egg yolks
2 teaspoons extra virgin olive oil
2 teaspoons fresh lemon juice
1 teaspoon fine sea salt (level)
1/2 teaspoon fresh ground white pepper
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon garlic powder
1 pinch cayenne pepper
3/4 cup grated parmesan cheese
1 tablespoon grated parmesan cheese

Steps:

  • PREPARE EGGPLANT: Cut off the stem sections of 2 large fresh eggplants. Peel eggplant using a sharp vegetable peeler. Cut eggplants lengthwise in even 1/8" thick slices. Pour 1/4-1/3 cup extra virgin olive oil into a large microwave-safe bowl. Mash 2 garlic cloves using a garlic press and add to oil. Add 1/4 teaspoon fine sea salt and 1/4 teaspoon fresh ground black pepper. Stir. Heat mixture in microwave about 30-45 seconds on high. Rub or brush the sliced eggplant with the oil mixture until lightly coated. Wipe the bowl clean with a paper towel and set aside. Arrange seasoned eggplant single-layer onto a flat-ridged or press-type grill on medium-high heat. When the eggplant has dark grill marks, turn and grill other side the same (skip turning eggplant if using a press-type grill). Allow eggplant to "sweat" until needed. Sprinkle, then pat, finished eggplant slices liberally using 1/2 cup powdered parmesan cheese.
  • IN a large food processor, chop 1 large onion, 1 medium bell pepper, one handful pitted kalamata olives, 1 handful flat leaf parsley leaves, and 8-12 garlic cloves.
  • HEAT 2 tablespoons extra virgin olive oil in a large saucepan over medium heat; ADD the above chopped vegetables, 1 1/2 lbs lean ground beef, 1 teaspoon fine sea salt and 1/2 teaspoon fresh ground black pepper; SAUTE until meat is browned and vegetables have softened.
  • ADD 1 (14 ounce) can diced tomatoes, 3/4 cup dry greek red wine, 1 (6 ounce) can tomato paste, 2 tablespoons red wine vinegar, 2 teaspoons greek honey, 1 1/4 teaspoons crushed dried oregano, 1 teaspoon ground cinnamon, 1/4 teaspoon ground allspice, 1/4 teaspoon freshly grated nutmeg, 1/2 tablespoon ouzo or 1/4 teaspoon pure anise extract, 1/4 teaspoon fresh grated lemon zest, 1/4 teaspoon crushed dried mint, 1/4 teaspoon fresh ground white pepper, 1 pinch crushed red pepper flakes, and 3 tablespoons grated parmesan cheese; STIR well; COVER; REDUCE heat; SIMMER for 45 minutes or longer (sauce will be thick); RE-SEASON sauce to taste with fine sea salt if needed (leave sauce just slightly under-salted since sauce will concentrate while baking).
  • INTO the previously wiped large bowl, separate 4 large eggs, retaining the yolks in bowl (refrigerate egg whites sealed, for another use while fresh);.
  • WHISK in 4 cups whole milk until smooth; ADD 2 teaspoons extra virgin olive oil, 2 teaspoons fresh lemon juice, 1 level teaspoon fine sea salt, 1/2 teaspoon fresh ground white pepper, 1/4 teaspoon freshly grated nutmeg, 1/8 teaspoon garlic powder, and 1 pinch cayenne pepper; WHISK again until blended; SET aside.
  • MELT 1/2 cup salted butter over medium heat; ADD 1/2 cup all-purpose flour and cook for just one minute; POUR milk and egg mixture all at once into roux while whisking constantly; CONTINUE whisking often until sauce thickens up and begins to bubble; REMOVE from heat; WHISK in 3/4 cup powdered parmesan cheese until smooth and glossy; COVER loosely with plastic wrap; BLEND 1/2 cup of the BECHAMEL into the fully-simmered SAUCE.
  • PREHEAT oven to 350 F; OIL a 2-3 quart casserole dish with olive oil; SPREAD 1/2 (one half) of the EGGPLANT single-layer in bottom of baking dish; POUR the entire SAUCE mixture over top then smooth; ADD the remaining EGGPLANT over the SAUCE; POUR all of the BECHAMEL sauce over the eggplant; SMOOTH bechamel sauce. NOTE: YOU CAN SPRINKLE THE TOP OF CASSEROLE NOW LIGHTLY WITH GRATED PARMESAN CHEESE (PLUS MINCED FRESH PARSLEY IF DESIRED) OR YOU CAN GARNISH WHILE STILL HOT, JUST AFTER BAKING.
  • BAKE for 1 hour; ALLOW to rest 20 minutes before slicing.

Steps:

  • Adjust oven rack to middle position and heat oven to 400 degrees F.
  • In a large bowl, whisk eggs, cheeses, oregano, salt and pepper to taste.
  • Heat oil and garlic in a large (12-inch) ovenproof nonstick skillet over medium-high heat until garlic starts to sizzle and turn golden. Add spinach and cook until excess moisture evaporates, about 1 minute. Add ham, shaking skillet to distribute evenly. Add egg mixture. Cook, without stirring, until eggs start to set around edges, about 1 minute.
  • Transfer pan to oven and bake until frittata is puffed and set, 10-12 minutes. Slide or invert onto a large plate, cut into wedges, and serve.

  • ROLL meat mixture into walnut-sized balls.
  • SCANT pour 1 cup flour into a tear-resistant bag.
  • PLACE uncooked meatballs into a bag containing flour.
  • GENTLY shake a few meatballs at a time in bag with flour.
  • REPEAT procedure until all meatballs are coated with flour.
  • FRY flour-coated meatballs in at least 1/2 inch hot olive oil until browned and fully cooked, about 1/2 batch at a time (meatballs may be deep-fried in a deep-fryer, or in an electric wok, which is the easiest method providing the best results).
  • COMBINE the TZATZIKI SAUCE recipe ingredients and chill. Use this as a sauce, dip or dressing for gyros, or pita sandwiches with sliced cold meatballs in pita bread, or rolled in a flatbread with fresh tomatoes and onions. Delicious!
  • Serve and say, "OPA"!

1 pound(s) eggplant, peeled and cut into quarter inch slices
3 medium onions, chopped
3 clove(s) garlic, minced
2 teaspoon(s) olive oil
1 can(s) (16 oz) stewed tomatoes, chopped and undrained
8 ounce(s) tomato sauce, canned
4 teaspoon(s) parsley, chopped
CREAM TOPPING
1 pound(s) ricotta cheese
1/2 pound(s) cream cheese
3 large eggs

Steps:

  • Preheat oven to 400°F. Place eggplant slices on a 12"x16" baking pan and cover tightly with foil. Cook for 20 to 25 minutes.
  • In a large pan, sauté onion and garlic in olive oil until onion is soft. Add the remaining ingredients and cook sauce for 4-5 minutes.
  • Meanwhile, beat together ricotta, cream cheese and eggs until blended.
  • To assemble the casserole, spread sauce on the bottom of a 9"x13" casserole dish. Layer 1/2 of the eggplant slices and 1/2 the sauce. Repeat with remaining eggplant and sauce. Spread cream topping on top.
  • Lower oven temperature to 350°F. Bake for 30-35 minutes or until lightly browned.

1 cup reduced-fat ricotta cheese
1 cup low fat cottage cheese
3 garlic cloves, peeled
1 egg
1/2 cup packed fresh basil leaf, plus additional basil leaves for garnish
1/4 teaspoon ground black pepper
3 cups marinara sauce
1 large eggplant

Steps:

  • In a food processor, process cheeses, garlic, egg, ½ cup basil and pepper until combined and smooth.
  • Mist a 5- to 6-qt slow cooker with cooking spray. Spread a thin layer of marinara (about 1/3 cup) over bottom of slow cooker. Arrange one-third of eggplant slices over sauce, overlapping edges. Spread half of cheese mixture over eggplant and then spoon one-third of remaining marinara evenly over top. Repeat with another one-third of eggplant, half of cheese mixture and one-third of sauce, and finish with remaining one-third of eggplant and sauce.
  • Cover and cook on low for 6 to 8 hours. (TIP: If casserole is still watery, cook on high, uncovered, for an additional 10 minutes.) Garnish with additional basil.

1/2 cup water (for steaming spinach)
12 ounces feta cheese, crumbled
3/4 cup whole strained Greek yogurt
1/2 cup drained marinated artichoke hearts, chopped
1/2 cup green onion, thinly sliced
1/4 cup fresh mint leaves, minced
2 tablespoons chopped fresh dill
1 tablespoon fresh garlic clove, minced
1 teaspoon fresh lemon zest, finely grated
1 1/2 tablespoons lemon juice, freshly squeezed
1 teaspoon freshly grated nutmeg
1/2 teaspoon fresh ground black pepper
1/2 teaspoon fine sea salt
1/2 teaspoon sugar
2 large eggs, beaten
1/2 lb thawed phyllo pastry dough (use 14-inch x 9-inch)
1/2 cup unsalted butter, melted
3/4 cup parmesan cheese, finely grated

Steps:

  • THAW phyllo dough according to package directions; PLACE oven rack in lower third position; PREHEAT oven to 425°F ; SELECT a 14 x 9 deep metal baking sheet pan; SPRAY inner baking sheet surface with non-stick cooking spray; INSERT and fit a large sheet of parchment paper (not waxed paper!) into sheet pan; PRESS parchment paper in firmly.
  • RINSE spinach and transfer into a large microwave-safe bowl containing 1/2 cup water; COVER bowl with a large plate; MICROWAVE on high power for 5 minutes. LET stand 1 minute; WEARING oven mitts, remove bowl from microwave; REMOVE plate from bowl; CAREFULLY drain spinach in colander placed in sink; PRESS spinach against colander to extract excess water; PLACE drained spinach on cutting board; COARSELY chop spinach; PLACE chopped spinach onto center of clean kitchen towel; SQUEEZE out as much moisture as possible into sink.
  • TRANSFER spinach into a large mixing bowl; ADD the remaining filling ingredients; STIR mixture until thoroughly combined.
  • LAY one sheet phyllo into baking dish, and brush thoroughly with melted butter; REPEAT procedure with 9 more phyllo sheets, brushing each with butter.
  • SPREAD spinach mixture evenly over phyllo, leaving a one-quarter inch border free on all sides.
  • COVER spinach with one phyllo sheet, brushing with butter; SPRINKLE buttered phyllo sheet with 2 tablespoons grated parmesan cheese; LAY another 2 sheets phyllo on top of cheese-sprinkled layer; BRUSH with butter (do not add cheese to the following two sheets); REPEAT with one more phyllo sheet.
  • PRESS layers gently with hands to release residual air pockets; SCORE the pie using a sharp knife through the top 3 phyllo layers into 9-12 equal pieces.
  • BAKE for 20-25 minutes, or until phyllo is golden brown and crispy; COOL pie at least 10 minutes.
  • LIFT out and slide parchment insert containing pie carefully onto a cutting surface; SLICE along scores, lifting pie from parchment with a sharp spatula before serving.
  • SERVE and enjoy!
