CARROT COOKIES WITH BESAN



Carrot Cookies With Besan image

These cookies use besan/gram (chickpea) flour and whole wheat flour and contain no salt. The besan lends a somewhat nutty flavor, and shortening keeps the cookies soft.

1/4 cup shortening
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
1/2 cup besan
1/2 cup whole wheat flour
1 teaspoon baking powder
1/2 cup finely grated carrot

Steps:

  • Peel and finely grate one full carrot.
  • Cream together the shortening and sugar.
  • Mix in the egg.
  • Add in the flour and baking powder.
  • Fold in finely grated carrot until blended well.
  • Drop by spoonfuls onto greased cookie sheet.
  • Bake at 375 for 10-13 minutes.

These are best made fresh and served hot. The batter can be made in advance and refrigerated. However, if they are made ahead of time, then reheat in a stack of four, properly wrapped, in the microwave oven (1 to 2 minutes) or the conventional oven (10 minutes at 375 degrees F). Healthy Alternative: Make on a heavy skillet, using oil spray or very little oil. Use them as wraps and fill with sauteed vegetables or beans.

1 1/2 cups gram flour, sifted (besan)
1/2 cup buttermilk
oil, to pan-fry
1 finely chopped onion
1 teaspoon chopped green chili pepper
1/2 teaspoon grated ginger
1/2 teaspoon black pepper
1 teaspoon salt

Steps:

  • Mix everything together (except oil) with a whisk or your hand.
  • Add more buttermilk if needed, to make a thick consistency batter, as for pancakes.
  • Heat a griddle (or skillet) on medium heat.
  • Grease with 1 teaspoon of oil the first time only.
  • Pour 2 tablespoons of batter and spread evenly and thinly with the back of a serving spoon into a round shape.
  • Add ½ teaspoon of oil around the edges.
  • Cook for 1 to 2 minutes until the top appears dry and the bottom has just begun to brown.
  • Turn over with a flat spatula; brown the other side very lightly, adding ½ teaspoon of oil around the edges.
  • Make all the crepes the same way.
  • Serve hot with any chutney.

Roasted besan flour adds fine taste, texture and aroma to the stuff. I tried this with cabbage and it was a lip smacking side dish

3 tablespoons besan flour
3 tablespoons oil
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seed
2 onions, cut into small pieces
4 garlic cloves, crushed
1/4 tablespoon salt
500 g thinly sliced cabbage
1 teaspoon red chili powder
6 curry leaves

Steps:

  • Heat a wok and in medium flame dry roast the besan flour carefully to golden brown without burning it and keep aside.
  • Heat oil in a pan. Saute it with mustard seeds and cumin seeds.
  • After it splutters add the onions and fry till colour changes and now add the garlic and give a stir.
  • Add salt and stir.
  • Now add the cabbage.
  • Don't add water or don't close the lid.
  • Let the cabbage get cooked by stirring then and there for 10 minutes in medium flame.
  • Now add the red chilly powder and mix well.
  • Add the rosted besan flour and stir for a minute.
  • Garnish with curry leaves.
