Having lived in Germany, I try to keep my German cooking as authentic as possible. This lovely lebkuchen recipe is a culinary Christmas custom. -Cathy Lemmon, Quinlan, Texas

Number Of Ingredients 25

1 cup plus 2 tablespoons all-purpose flour
1/4 cup sugar
Dash salt
1/3 cup cold butter, cubed
3 tablespoons water
1 teaspoon vanilla extract
TOPPING:
1/4 cup butter, softened
1/4 cup sugar
1 large egg, room temperature
1 tablespoon canola oil
2/3 cup quick-cooking oats
1/2 cup all-purpose flour
1/3 cup ground almonds
1/3 cup ground hazelnuts
1/4 cup baking cocoa
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon each ground cloves, cardamom and allspice
1/4 cup finely chopped candied lemon peel
1/4 cup finely chopped candied orange peel
GLAZE:
6 ounces semisweet chocolate, chopped
2 ounces unsweetened chocolate, chopped
1/4 cup butter, cubed

Steps:

  • In a small bowl, combine the flour, sugar and salt; cut in butter until mixture resembles coarse crumbs. Combine water and vanilla; gradually add to crumb mixture, tossing with a fork until dough forms a ball. , On a lightly floured surface, roll out dough to 1/16-in. thickness. Cut with a floured 2-1/2-in. round cookie cutter. Place on ungreased baking sheets. Bake at 325° until set, 8-10 minutes. Remove from pans to wire racks to cool. , For topping, in a small bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and oil. Combine the oats, flour, nuts, cocoa, baking powder and spices; gradually add to creamed mixture and mix well. Fold in candied peels. , Drop 1 rounded tablespoon topping onto each cookie; gently press down. Place 2 in. apart on ungreased baking sheets. Bake at 325° until set, 13-16 minutes. Remove from pans to wire racks to cool. , In a microwave-safe bowl, melt chocolate and butter; stir until smooth. Dip each cookie halfway in chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Store in airtight containers.

This recipe is over 150 years old and has been baked by my family for many generations for Christmas. They are much easier to make than other lebkuchen and ingredients have been updated to what's available now. They are made with almond flour, hence are gluten free and also contain no dairy.

25 backoblaten (German baking wafers)
2 cups blanched almond flour
1 ¼ cups white sugar
3 eggs
½ cup ground hazelnuts
7 tablespoons finely chopped candied lemon and orange peel
2 teaspoons ground cinnamon
1 teaspoon vanilla sugar
1 pinch ground cloves
2 cups chopped dark chocolate

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper and arrange backoblaten (German baking wafers) on top, leaving a 1-inch space between them.
  • Combine almond flour, sugar, eggs, ground hazelnuts, candied lemon and orange peel, ground cinnamon, vanilla sugar, and ground cloves and mix into a firm dough.
  • Shape mixture into balls. Arrange balls on the prepared wafers; press gently to flatten into 1/2-inch-high rounds.
  • Bake in the preheated oven until light brown in color, 15 to 20 minutes. Cool completely, about 30 minutes.
  • Place chocolate in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Cover the top of each lebkuchen with chocolate.

2 3/4 cups flour, sifted
2 teaspoons cinnamon
1 teaspoon clove
1 teaspoon cardamom seed, finely crushed
1 teaspoon baking soda
1 teaspoon baking powder
1 1/4 cups sugar
3/4 cup honey
2 tablespoons water
2 cups semisweet chocolate morsels
1 cup walnuts, chopped
1/2 cup candied fruit, finely chopped
2 eggs, well beaten
1/4 cup orange juice

Steps:

  • Sift the flour, cinnamon, cloves, seeds, baking soda and powder together and set aside.
  • Bring sugar, honey and water to boil in saucepan over moderate heat.
  • Stir the chocolate, walnuts, fruit, eggs, and orange juice into honey mixture until blended.
  • Blend the flour mixture in gradually.
  • Store dough in tightly covered dish, at room temperature, for 3 days, to ripen.
  • Preheat oven to 325°F
  • Spread dough in greased 15" x 10" X 1" pan and bake at 325 F for 35 to 40 minutes.
  • Cool. Wrap in foil and store till ready to use. (This keeps very well for weeks and improves in flavor on storing).
  • When ready to use, unwrap, and sust with confectioners' sugar. Cut in 3" x 1" bars.

1 ¼ cups white sugar
¾ cup honey
2 tablespoons water
2 cups semisweet chocolate chips
1 cup chopped almonds
½ cup candied mixed fruit, chopped
2 eggs, beaten
¼ cup orange juice
2 ¾ cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground cloves
2 teaspoons ground cardamom
1 teaspoon baking soda
1 teaspoon baking powder
1 ½ cups confectioners' sugar
2 ½ tablespoons orange juice
¼ cup green decorator sugar
¼ cup cinnamon red hot candies

Steps:

  • Combine sugar, honey and water in a large saucepan. Bring to a rolling boil, then remove from the heat and set aside to cool. In a medium bowl, stir together the honey mixture with the chocolate chips, almonds, candied fruit, eggs, and orange juice. Sift together the flour, cinnamon, cloves, cardamom, baking soda and baking powder; stir into the fruit and nut mixture. Tightly cover the bowl, and refrigerate for 2 to 3 days to blend the flavors.
  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10x15 inch jellyroll pan. Spread the dough evenly into the prepared pan.
  • Bake for 35 to 40 minutes in the preheated oven. Cool and frost with the orange frosting.
  • To make the orange frosting, put the confectioners' sugar in a small bowl, and beat in the orange juice 1 tablespoon at a time until the desired consistency is reached. Spread over the cooled bars. Cut bars into diamond shapes, and place cinnamon candies on top then sprinkle with the green sugar.

This is a good recipe given to me by my friend Jenny's grandmother. She said to plan your work, then work your plan. She was so right!

COOKIE:
1 c honey
3/4 c dark corn syrup
1/2 c molasses
3/4 c brown sugar, packed
3 large eggs,beaten
2 Tbsp lemon juice
1 tsp grated lemon rind
1/4 c hershey's dark cocoa
2 3/4 c flour or more to make a stiff dough to roll out
1 1/2 Tbsp baking soda dissolved in a little hot water
1 tsp each- cinnamon, cloves,allspice and nutmeg
1/2 c finely diced citron
1 c chopped almonds
1/2 tsp fennel seed, ground cardamon, both are optional

Steps:

  • 1. Mix together in a saucepan and bring to a boil the honey, molasses,and corn syrup. Cool completely. Stir in brown sugar,eggs,lemon juice, and rind, mixing well. Set aside. Sift together the flour ,cocoa,cinnamon, cloves,allspice and nutmeg. Mix in citron and nuts. Combine the sugar and flour mixture and add the baking soda with the water,using dough hook to mix well. Add more flour to make a stiff dough to roll. Chill dough overnight. Roll small amount at a time, keeping rest chilled. Roll out 3/8 inch thick and cut into oblongs 1 1/2 x 2 1/2 inches. Place 1 inch apart on greased baking sheet. Bake in 350^ oven for 12-15 minutes. Bake until when touched lightly with your finger no imprint remains. Brush the following glaze on the hot cookies as soon as they come out of the oven. --- Glaze:--this should be very thin as it sets up fast Boil together: 1 c. granulated sugar 1/2 c. water until sugar dissolves, and reaches 230^. Then remove from heat and add: 1/4 c. powdered sugar or more Brush hot icing THINLY and QUICKLY over cookies, and place 1 or 2 half almond slice on each cookie. If icing gets to thick, reheat slightly, add a teaspoon or more hot water.
  • 2. It's good to have the kids help out here with the nuts or even the brushing on of the icing.

2 tsp. ground cinnamon
11/2 tsp. ground cardamom
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. ground cloves
11/4 c. sugar
3/4 c. honey
2 tbsp. water
2 eggs
1/4 c. orange juice
12 oz semisweet chocolate pieces
1 c. chopped walnuts
1/2 c. mixed candied fruit
Confectioners' sugar

Steps:

  • Combine sugar, honey and water in a 2-qt saucepan. Cook over medium heat, stirring constantly until it comes to a boil. Remove from heat. Pour into large bowl. Cool to room temperature. Add eggs and orange juice to cooled honey mixture. Beat 1 minute, using an electric mixer at medium speed. Add dry ingredients to egg mixture.\, beating 2 minutes at medium speed. Stir in walnuts, chocolate pieces and candied fruit. Spread batter in greased 151/2x101/2x1" jelly roll pan. Bake at 325 deg. for 35 minutes, or until top springs back when touched lightly with finger. Cool in pan on rack. Cover with aluminum foil. Store 3 days at room temperature to develop flavor. Dust with confectioners' sugar. Cut into 2" squares. Makes 35. Barb, instead of dusting with powdered sugar, I usually make a plain icing and flavor it with lemon juice.

  • Mix all the dry ingredients: flour, almonds, baking powder, baking soda and the spices in a large bowl. Heat up the butter with the honey until it melts, let it cool a little and pour over the dry ingredients. Mix well into a sticky dough. Chill for at least an hour in the fridge.
  • Turn out the dough onto a generously floured surface, dust with more flour and roll out to about 5mm thickness. Dot the jam or marmalade on the bottom half of the pastry, at least 6-7cm apart. Gently fold the top half over the bottom half and cut around the jam mounds with a pastry cutter. Make sure the edges are well sealed and place the cookies on a baking tray lined with parchment.
  • Preheat the oven to 180C/350F/gas 4. Bake the Lebkuchen for 15 minutes and leave to cool still on the parchment sheets on a wire rack.
  • Tempering chocolate is not essential but it ensures better gloss, crispiness and easier coating. The simple method is to melt two thirds of the amount over a bain-marie (in a bowl set over a pan with simmering water); add the remaining third and stir continuously until it cools down to barely lukewarm (31C for dark, 27C for white); about 10 minutes. The chocolate will stay liquid long enough to dip all the Lebkuchen.
