FESTIVAL-STYLE GRILLED ITALIAN SAUSAGE SANDWICHES
These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

Steps:
- Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
- Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.
- Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook vegetables until tender and peppers are slightly charred. Remove vegetables and sausages from the grill.
- Place the peppers in a paper bag, close, and cool slightly. Remove and discard the charred skin from the peppers; slice peppers into strips. Slice the onion halves. Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl. Add the peppers and onions, and toss until evenly coated. To serve, place sausages in sandwich rolls, and top with the pepper and onion mixture.

- Heat gas or charcoal grill. In small bowl, mix relish ingredients; cover and refrigerate until serving.
- In another small bowl, mix mustard and oregano; set aside.
- Place sausages on grill over medium heat. Cover grill; cook 10 minutes, turning occasionally. Continue grilling 8 to 10 minutes longer, turning and brushing occasionally with mustard mixture, until no longer pink in center. Discard any remaining mustard mixture.

- Slice the onion thinly and separate into rings. Core the apple and slice thinly. Mix mustard and oregano together. Prick sausages in several places with a fork.
- In a medium bowl toss the onions, apple, and olive oil. Fold a 36x18" sheet of heavy foil in half. Place onion/apple mixture on the foil. Fold edges together and crimp to seal.
- Heat the grill to medium heat (direct). Place foil packet on grill; close and grill for 10 minutes.
- Add sausages to the grill rack (leave the foil packet on). Brush with mustard mix. Grill 16-18 minutes, until no longer pink, turning occasionally and brushing with mustard mix.

- In a 6-qt. stockpot, combine beer, prepared mustard and ketchup. Add sausages, sliced onion and, if necessary, water to cover. - Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add onions and sauté until slightly softened, about 5 minutes. Stir in vinegar, sugar and caraway seeds. Reduce heat to medium-low and sauté until onions are deep brown and very tender, about 20 minutes longer. Season to taste with salt and pepper. (Can be prepared 2 hours ahead. Let stand at room temperature. Rewarm over low heat before using.)

Spread remaining butter over upper bread slices. Turn sandwiches, cover and cook until bottoms are brown, about 4 minutes longer.

- In a large skillet, saute peppers in oil just until tender. Sprinkle with salt and pepper. - Warm. Take the sausages out of the fridge and let them sit at room temp for about 15 minutes so the skins warm a bit. This helps keep them from splitting, spilling their guts, and dumping oil on the fire causing flareups and putting soot on the food.
- Pepper prep. In Chicago, those in the know use a special breed of skinny, thin walled, sweet green variety called Melrose peppers, hard to find outside Cook County. But colorful bell peppers are common and they work just fine. Split the peppers in half cutting through the stem. Pull out the stem and the seed pod. Rinse the pepper inside and out. Cut lengthwise into ¼ inch strips. Set aside. Slice the onion in half, pole to pole. Peel off the skin and the tough outer layer. Lay them on the cutting board cut side down and slice off the top and discard. Keep slicing across the layers making half moons working towards the root. Discard the root.
- Fire up. Heat the grill to medium high, about 325°F, and leave the lid open. Put an 8 to 12" frying pan on the heat, add the olive oil, and swirl to cover the bottom. Add the peppers and onions. Stir to coat with oil. You can grill the peppers and onions if you wish, and that's how I usually do it, although it is not exactly traditional and you don't get the richness of the olive oil. You can cook the peppers and onions a day in advance, indoors if you wish, and just warm them before serving.
- Grill. The sausages are usually pretty curved. Bend them gently to try and straighten them slightly. Lay them on the grill between the rungs of the grate. I know this seems weird, usually you lay the across the grates. But if you lay them between the rungs, you can roll them from rung to rung, making a ¼ turn each roll, and get each side nice and dark brown with some dark grill marks, and you won't burn them. The stripes will look goofy running lengthwise, but nobody will argue with the results. Cook with the lid open so you can watch them to prevent burning. Do not poke them to drain the fat! This just dries them out and causes flareups and soot. If you are so concerned about the few extra calories, then grill yourself a carrot. They must cook until they are 160°F in the center to be safe. There should be no pink. If you cook them longer they can dry out. Usually they are well cooked after 2 or 3 sides are browned.
