DIJON MUSTARD BAKED CATFISH
My fiancee and I love to fish for catfish and had been trying to come up with an alternative to fried fish. He came up with this FABULOUS baked catfish recipe! It was so yummy I was inspired to share it the same night! We paired it with corn on the cob and greens. If you are looking for a tasty recipe for baked fish, this is it!!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Season catfish fillets with seasoned salt. Mix orange juice, lemon juice, Dijon mustard, soy sauce, Worcestershire sauce, and hot sauce in a bowl.
- Heat olive oil in large oven-safe skillet over medium-high heat; fry catfish in hot oil until lightly browned, 1 to 2 minutes per side. Spread mustard sauce on both sides of each fillet; drizzle remaining sauce over fish. Arrange bell pepper, onion, and garlic over fish.
- Bake in preheated oven until fish is easily flaked with a fork, 15 to 20 minutes.

- THE DAY BEFORE - combine the mustard with egg and add the catfish.
- Cover and marinate overnight.
- The next day, place enough oil in an 8 quart saucepan or dutch oven (or fryer) to hold the catfish fillets in two batches (up to eight cups of oil).
- Heat oil to 360 degrees.
- Mix the dry ingredients and spices together.
- Roll the catfish fillets in the dry mix.
- Shake off the excess and fry about 5 minutes until golden brown.
- Drain and serve hot.

- Preheat oven to 400 degrees. Coat shallow baking dish with nonstick cooking spray. Pat fish dry with paper towels. Sprinkle fillets with lemon pepper; place in shallow baking dish. Bake 8-10 minutes or until fish flakes easily with a fork.
- Meanwhile, melt butter in medium skillet over medium heat. Add shallot and mustard seed; cook and stir 2 minutes. In small bowl, stir mustard and cornstarch into broth. Add broth mixture to skillet; cook and stir until thickened. Stir in dill. Drizzle sauce over fillets and serve.

- Combine dressing and egg whites, whisk well.
- Combine cornmeal, parmesan, flour, pepper and salt in shallow dish.
- Pat fish dry, dip in egg mixture and dredge in cornmeal mixture.

- Bake 8-12 minutes each side until lightly browned and fish flakes easily.

BAKED CATFISH FILLETS
These are sooo yummy! They taste almost like fried catfish because of the cornmeal, and come out nice and crispy on the outside and soft on the inside. The ranch dressing adds a real zing, too!

- Preheat oven to 425 degrees.
- Whisk wet ingredients together in a bowl and combine dry ingredients on a piece of wax paper.
- Spray a glass baking dish with Pam or olive oil.
- Rinse catfish in cool water and DRY THOROUGHLY with paper towels.
- Dip each catfish fillet in wet ingredients and dredge in breading to coat. Just a nice, light covering is enough. Don't try to completely cover in breading.
- Place catfish fillets in glass baking dish & refrigerate for 10 minutes. This step, plus making sure the fillets are very dry before dipping in the egg will help the breading stick to the fish and NOT the pan!
- Bake at 425 for 10 to 12 minutes per side.
- Serve with lemon wedges for garnish.

I have this a few times a year, you can do it on the grill,skillet or in the oven.The lemon and dill add a wonderful taste to the farm raised catfish.

- 1.Stir together mayonnaise, buttermilk, lemon rind, lemon juice, dill, and garlic in a small bowl.
- 2.Place half of mayonnaise mixture in another small bowl to serve with fish; cover and chill until ready to serve.
- 3.Rinse fillets, and pat dry with paper towels. Brush the catfish fillets evenly with remaining half of mayonnaise mixture; sprinkle evenly with salt and pepper.
- 4.Dredge fillets in breadcrumbs. Arrange fillets on a lightly greased rack in an aluminum foil-lined broiler pan.
- 5.Bake at 425°F (220°C) or until fish flakes with a fork and is opaque throughout,about 15 minutes to 20 minutes,no longer.
- 6.Serve the baked catfish fillets immediately with chilled mayonnaise mixture.
