Take off the meat and turn up the heat with these kicky Mushroom Tacos made with portobello mushrooms, jalapeños, onion, and garlic. Serve on warm corn or flour tortillas with your favorite toppings.

2 Tablespoons olive oil (, divided)
3 Portobello mushroom caps (, stems removed, or 1 lb cremini mushrooms or shitake mushrooms, chopped)
½ of an onion (, chopped)
1 jalapeno (, minced, (remove the seeds and veins for less heat))
2 Garlic Cloves (, minced)
1-2 Tablespoons taco seasoning (, to taste)
½ lime
4-8 Warm corn or flour tortillas (, for serving)
Cilantro
Salsa or pico de gallo
Cheese (cotija, Mexican blend, oaxaca)
Sautéed bell peppers
Shredded cabbage or lettuce
Black beans (, warmed)
Corn (, warmed)
Avocado
Hot sauce

Steps:

  • Use a spoon to scrape off the gills from the portabella mushrooms and slice into long thin pieces.
  • In a large skillet, heat the oil over medium heat. Once the oil is hot, add the onion and jalapeños. Sauté for 5 minutes. Add garlic and cook for 30 seconds.
  • Add mushrooms to a bowl and toss with 1 tablespoon of oil, a sprinkle of lime juice, and taco seasoning.
  • Raise the skillet heat to medium high and add the mushrooms. Cook, stirring only occasionally, for about 10 minutes.
  • Warm the tortillas. Add mushroom filling inside each tortilla and desired toppings on top. (See recipe notes for topping ideas.)

Vegetarian Mushroom Tacos. Healthy and flavorful vegan tacos made with tofu and baby bella, shiitake, or oyster mushrooms in a sweet and spicy Asian sauce.

2 tablespoons extra-virgin olive oil (divided)
12-14 ounces tofu Italian "sausage" or regular precooked Italian turkey or chicken sausage links
1/2 small head green or red cabbage (cored and thinly sliced (about 8 cups))
24 ounces baby bella (cremini) mushrooms (thinly sliced)
1/3 cup plus 2 tablespoons water
4 large cloves garlic (minced (about 1 1/2 tablespoons))
1 tablespoon minced fresh ginger
1 bunch scallions (thinly sliced, dark green parts divided from the light green and white parts)
3 tablespoons seasoned rice vinegar
3 tablespoons hoisin sauce
2 tablespoons plus 2 teaspoons low-sodium soy sauce
1-2 teaspoons ground fresh chili paste (sambal oelek), sriracha, or similar hot sauce or a pinch of red pepper flakes ( (optional))
1/4 cup finely chopped dry roasted unsalted peanuts (plus additional for serving)
Warmed flour tortillas

Steps:

  • Heat 1 tablespoon oil in a large, deep dutch oven or wok over medium high. Add the chopped tofu "sausage" or chicken/turkey sausage. Cook until brown on all sides, about 5 to 6 minutes. Remove to a plate and set aside.
  • Add the remaining 1 tablespoon olive oil. Once hot, add the cabbage, mushrooms, and 1/3 cup water. It will seem like a ridiculous amount of cabbage, but it will cook down significantly. Let cook until the cabbage is tender and the mushrooms are browned, soft, and have given up their liquid, about 15 minutes, stirring often at first so that the cabbage at the bottom of the pan browns but does not burn. If at any point the mixture starts to become dry and stick to the bottom, splash in a little more water as needed.
  • Add the garlic, ginger, and white and light green parts of the green onions. Cook, stirring constantly, until very fragrant, about 1 minute.
  • Add the sauteed tofu or sausage, rice vinegar, hoisin, soy sauce, chili paste, and remaining 2 tablespoons water. Stir until everything is warmed through and combined. Taste and adjust seasoning as desired. Stir in the peanuts and remove from heat and sprinkle with reserved dark green onions. Pile inside warm tortillas and enjoy hot with a sprinkle of extra peanuts.

4 cups finely chopped mushrooms
1 (1 ounce) package taco seasoning
8 (6 inch) corn tortillas, or as needed
1 head iceberg lettuce, shredded
1 tomato, diced
1 onion, diced
¼ cup guacamole, or to taste
¼ cup sour cream, for topping
¼ cup taco sauce, or to taste

Steps:

  • Melt butter in a saucepan over medium heat. Add mushrooms and cook until soft, 5 to 7 minutes. Drain excess butter and return to heat. Add taco seasoning and stir to combine, about 2 minutes more.
  • Serve each tortilla topped with a few tablespoons of mushroom mixture, shredded lettuce, tomato, onion, guacamole, sour cream, and taco sauce.

4 tablespoons olive oil
1 ½ cups chopped onion
3 cloves garlic, minced
1 pound ground venison
1 (8 ounce) package mushrooms, finely chopped or pulsed in a food processor
1 package taco seasoning, or to taste
1 cup shredded cabbage
2 tablespoons lime juice, or to taste
2 tablespoons chopped cilantro
salt and ground black pepper to taste
8 corn tortillas
1 (8 ounce) jar salsa, or as desired
¼ cup crumbled blue cheese, or to taste

Steps:

  • Heat olive oil in a saute pan over medium-high heat. Add onions and cook about 3 minutes. Add garlic and cook 2 minutes more. Add venison and mushrooms; saute until venison is cooked through, 5 to 7 minutes more. Season with taco seasoning.
  • Toss cabbage, lime juice, cilantro, salt, and pepper together in a bowl.
  • Place about 2 tablespoons cabbage mixture onto a tortilla and top with about 2 tablespoons meat mixture. Top with salsa and blue cheese. Repeat with remaining fillings, tortillas, and toppings.

3 scallions, sliced (white and light green parts separated)
1 1/2 cups diced butternut squash

4 teaspoons chili powder
24 4-inch corn tortillas, warmed
Thinly sliced jalapeños, for topping
Lime wedges, for serving

Steps:

  • In a large nonstick skillet, heat the vegetable oil over medium-high heat. Add the white and light green scallion parts, the butternut squash, shiitakes and garlic, and cook until the squash begins to soften, about 3 minutes. Stir in the chili powder and cook 30 seconds. Add 2 cups water and simmer until the vegetables are tender and a thick sauce forms, about 8 minutes.

1 large ripe Hass avocado, pitted, peeled and cut into ¼-inch dice
2 jalapeños, stemmed and finely chopped (seeded if desired)
1/2 cup cilantro leaves, finely chopped
3 tablespoons fresh lime juice (from 1 to 2 limes)
Coarse kosher salt
18 ounces oyster mushrooms (from 2 to 3 medium clusters)
1/3 cup neutral oil, such as canola
1/4 teaspoon ground cumin
1 1/2 teaspoons coarse kosher salt
Black pepper
12 corn tortillas

Steps:

  • Make the pico de gallo: Combine the tomato, avocado, jalapeños, cilantro and lime juice in a bowl and season with salt. Gently fold together. Set aside to allow flavors to marry while the mushrooms cook.
  • Make the tacos: Tear the oyster mushrooms into bite-size pieces, leaving some mushroom tops whole. To make sure the mushrooms become crisp, cook in two batches: Heat a large cast iron or other heavy skillet over medium-high and coat with half of the oil. Once the oil is hot, add half of the mushrooms in a single layer without crowding the skillet. Cook, stirring every few minutes, until deep golden brown and crisp, 10 to 15 minutes. Transfer to a plate, then repeat with the remaining oil and mushrooms. Return the first batch to the skillet, and add the cumin and salt, and season with pepper. Stir well, then remove from the heat.
  • While the mushrooms are cooking, warm the tortillas on a comal or heavy skillet over medium-high heat until soft and pliable. Wrap them in a dish towel to keep them warm until ready to serve. Divide the mushrooms and pico de gallo among the warm tortillas. Serve immediately.
