1-1/2 cups chopped fresh mushrooms
1/4 cup chopped celery
1/4 cup chopped green onions
1/4 teaspoon dried marjoram
1/4 cup butter, divided
1 package (6 ounces) chicken-flavored stuffing mix, coarsely crushed, divided
4 boneless skinless chicken breast halves (6 ounces each)
1 egg
2 tablespoons milk
1 teaspoon paprika

Steps:

  • In a small skillet, saute the mushrooms, celery, onions and marjoram in 2 tablespoons butter for 3-4 minutes or until vegetables are tender. Stir in 1/2 cup stuffing mix., Flatten chicken to 1/4-in. thickness. Spoon mushroom mixture down the center of each. Roll up and secure with toothpicks. , In a shallow bowl, whisk egg and milk. Place the remaining stuffing mix in another bowl; stir in paprika. Dip chicken in egg mixture, then coat with crumb mixture. Place seam side down in a greased 8-in. square baking dish. , Melt remaining butter; drizzle over chicken. Bake, uncovered, at 375° for 30-35 minutes or until meat is no longer pink. Discard toothpicks.

4 boneless skinless chicken breast halves (6 ounces each)
1 small onion, chopped
1/4 cup chopped green pepper
1/2 teaspoon canola oil
3/4 cup seasoned bread crumbs
1/4 cup water
1/2 teaspoon poultry seasoning
1/4 cup all-purpose flour
3/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
Cooking spray
MUSHROOM SAUCE:
1/2 pound sliced fresh mushrooms
1/4 cup finely chopped onion
2-1/2 teaspoons canola oil
1 tablespoon all-purpose flour
1/2 cup 2% milk
1/2 cup reduced-fat sour cream
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Flatten chicken to 1/2-in. thickness. For stuffing, in a small nonstick skillet coated with cooking spray, saute onion and green pepper in oil until tender. Transfer to a small bowl. Stir in the bread crumbs, water and poultry seasoning., Place 1/4 cup stuffing over each chicken breast. Roll up from a short side and secure with toothpicks. In a shallow bowl, combine the flour, paprika, salt and pepper. Coat chicken in flour mixture., Place seam side down in an 11x7-in. baking dish coated with cooking spray. Spritz chicken with cooking spray. Bake, uncovered, at 350° for 45-50 minutes or until a thermometer reads 170°. 1 cup fat-free milk
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 lb. sliced fresh mushrooms
1 Tbsp. butter
6 small boneless skinless chicken breasts (1-1/2 lb.), pounded to 1/4-inch thickness
1/2 cup KRAFT 2% Milk Shredded Colby & Monterey Jack Cheeses

Steps:

  • Heat oven to 400ºF.
  • Whisk dressing and flour in medium microwaveable bowl until blended. Gradually stir in milk. Microwave on HIGH 3 to 4 min. or until thickened, stirring every 2 min.
  • Prepare stuffing as directed on package; set aside. Cook and stir mushrooms in butter in skillet until tender. Add to stuffing; mix well.

2 lightly beaten eggs
1 1/2 lbs boneless skinless chicken breast halves (6 small)

  • Preheat oven to 400°.
  • Combine stuffing mix and water in large bowl and let stand for 5 minutes.

2 cloves garlic, thinly sliced
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken made with Whole Wheat
1-1/2 cups hot water
2 carrots, shredded (1 cup)
1/4 cup chopped walnuts, toasted
3 Tbsp. chopped fresh Italian parsley

Steps:

  • Combine 1 Tbsp. lemon zest, sage and pepper; rub on chicken. Place chicken in slow cooker sprayed with cooking spray.
  • Heat butter in large skillet on medium heat. Add mushrooms and garlic; cook and stir 3 to 5 min. or until liquid evaporates. Transfer mushroom mixture to large bowl. 4 slices bacon
1 small onion, finely chopped
1 (10 ounce) can mushrooms, drained and finely chopped
4 ounces cream cheese
14 slices bread
1/4 cup butter, melted

Steps:

  • In a skillet, cook bacon, onions and mushrooms until tender.
  • Add cheese,combine and set aside.
  • Trim crusts from bread and flatten slices slightly with rolling pin.
  • Spread each slice with approximately 2 Tbsp of mixture.
  • Roll up jelly roll fashion and secure with toothpicks.
  • Place seam side down on parchment lined baking sheet.
  • Cover and chill for at least 1 hour or freeze in a single layer.

¼ cup butter
1 large onion, finely chopped
½ pound button mushrooms, chopped
½ teaspoon salt
½ teaspoon ground black pepper
1 cup Italian seasoned bread crumbs
12 skinless, boneless chicken breast halves
12 slices Black Forest ham
2 cups shredded Havarti-pepper cheese
24 slices bacon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat butter in a skillet over medium heat; cook and stir the onion and mushrooms with salt and pepper until the mushrooms are dark and juicy, about 5 minutes. Remove skillet from heat and stir in the bread crumbs. Set aside.
  • Place each chicken breast half between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to an thickness of about 1/4 inch. Lay a flattened chicken breast out onto a work surface, and place a slice of ham on the chicken. Spoon about 3 tablespoons of the mushroom stuffing onto the chicken breast, and top with about 2 1/2 tablespoons of the Havarti cheese. Roll the chicken breast around the stuffing, wrap 2 slices of bacon firmly around each roll, and secure with toothpicks. Place the rolls into a 9x13-inch baking dish.
  • Bake in the preheated oven until the chicken is no longer pink and the stuffing is melted and hot, about 35 minutes. An instant-read thermometer inserted into the center of a roll should read at least 165 degrees F (74 degrees C). Remove the chicken rolls from the oven, and place an oven rack about 6 inches from the oven's broiler heat source. Turn on the broiler, and broil the rolls until the bacon is brown, 5 to 10 more minutes.

2 boneless chicken breasts
4 ounces portabella mushrooms, coarsely chopped
3 cups white wine
2 tablespoons butter, for frying
1 cup spinach
3 tablespoons ground coriander, divided use
salt, to taste
1/4 cup flour, to coat

Steps:

  • Marinate chicken in wine for a minimum of ½ hour.
  • Then, remove the chicken from the marinade and pound it as flat as you can.
  • Preheat oven to 350 degrees.
  • Place butter and mushrooms in a frying pan.
  • Heat mushrooms thru.
  • Add cleaned, stemmed spinach, stir and cover.
  • Turn off heat.
  • Three minutes later, check the mushroom mixture and add some salt and 1 tbsp coriander, adjusting to taste.
  • Place ½ of mushroom mixture on one end of a flattened chicken breast.
  • Roll the chicken breast up.
  • Try to tuck in the ends.
  • Repeat with 2nd chicken breast.
  • On a plate, mix flour, 2 tbsp coriander and ¼ tsp salt.
  • Carefully dredge the chicken rolls in the flour mixture.
  • Brush off any excess flour.
  • Place the chicken in a small baking dish and bake for about 40 min, or until the chicken reaches an interior temperature of 188 degrees or juices stop running.
  • The outside of the rolls should by golden brown.
  • Slice carefully and arrange on a plate.
  • Serve with the remainder of the wine you chilled after using 3 c for a marinade, (you did chill it, didn't you?) a side of rice pilaf, and a small loaf of fresh brown bread with flavored butter.
