Steps:
- Heat a pan or grill pan with oil. Saute garlic and onions until onions turn golden.
- Add mushrooms and saute until they are cooked yet crunchy. Set these aside.
- Smear ¼ to ½ tbsp butter over each bread slice.
- Spread the mushrooms over the inner side of the bread (buttered side out).
- Top the bread with mushrooms & grated cheese. Then sprinkle herbs and chilli flakes.
- Place another slice of bread (buttered side out).
- Toast this in a sandwich toaster or on a pan until the cheese melts. If doing it on a pan, toast it on a low heat and press down the mushroom sandwich with a spatula. Flip and gently toast again until the cheese melts.
- Slice the mushroom sandwich and serve hot.

- 1. Toast your English muffin, rub one side with the jam and one side with the vegan butter - and set aside. 2. Heat sauté pan over high heat burner. Add oil and toss in the mushrooms. Allow them to sauté until tender and edges have caramelized and turned brownish. Remove mushrooms and place over top the slice of English muffin and set aside. 3.Add in your patty. Cook about 1-2 minutes on each side. 4. Melting the cheese is quite simple. Add cheese over top the patty, still in the skillet. Keep the pan on high heat and add a few splashes of cold water or one small ice cube to the pan while quickly covering with a lid. The steam and heat will melt the cheese in a minute or so. Remove patty and place on top of the buttered slice or your muffin. 5. Add the spinach over top the hot, vegan cheesy patty

- Preheat oven to 200°F. Heat oil in a large nonstick skillet over medium-high heat. Add shallot and cook, stirring often, until softened, about 3 minutes. Add mushrooms and thyme; cook, stirring occasionally, until the mushrooms soften and begin to brown, about 10 minutes. Add vinegar; cook, stirring often, until mostly evaporated, about 2 minutes. Transfer the mushroom mixture to a bowl and set aside.
- Coat 1 side of each bread slice evenly with butter and set 4 slices aside. Place the remaining 4 slices, coated-sides down, on a cutting board. Top each with 1 slice Swiss cheese, 2 ½ tablespoons mushroom mixture and 2 tablespoons Gruyère. Top with the remaining bread slices, coated-sides up.
- Wipe the skillet clean and heat over medium heat. Add 2 sandwiches; cook until the bottom side is crispy and browned, 2 to 3 minutes. Carefully turn the sandwiches over and continue cooking until the cheese has completely melted, about 2 minutes more. (Alternatively, heat a panini press to medium. Place 2 sandwiches on the cooking grates and close the press. Cook until both sides of the sandwiches are browned and crisp and the cheese is melted, about 2 minutes.) Remove from the skillet; keep warm in the oven. Repeat with the remaining sandwiches.
