1/2 ounce dried porcini mushrooms
1 tablespoon olive oil
3/4 lb raw skinless turkey (breasts and legs)
1 medium sweet onion, minced
1 red bell pepper, julienned
2 carrots, diced
1 large celery rib, minced
4 garlic cloves, minced
2 tablespoons minced flat leaf parsley
2 sprigs fresh rosemary leaves or 1 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon dried mustard powder
1/2 teaspoon smoked paprika
1 pinch red pepper flakes
3/4 lb button mushroom, sliced
1/2 lb shiitake mushroom, stemmed and sliced
1/2 cup red wine
28 ounces no-salt-added diced tomatoes
1/2 tablespoon cocoa powder
3 tablespoons tomato paste
salt and pepper
1 red potatoes, cut into small cubes (keep skin on)

Steps:

  • In a spice mill or coffee grinder reserved for spices, grind the porcinis to a fine powder. Set aside.
  • In a large, heavy pot, heat the oil until shimmering. Season turkey pieces with salt and pepper and add to the pot.
  • Brown on all sides, in 2-3 batches. Transfer the browned pieces to a bowl.
  • Reduce heat to medium and add the onion, pepper, carrots and celery.
  • Cook, stirring, until the vegetables begin to soften, about 5-10 minutes.
  • Add the garlic, parsley, rosemary, thyme, mustard powder, paprika and red pepper flakes, stirring well. Salt to taste.
  • Cover and cook over low heat, stirring often, for 8-10 minutes.
  • Stir in the sliced mushrooms, increase heat to medium and cook, stirring occasionally, until the mushrooms are tender.
  • Add wine and bring to a boil.
  • Cook, stirring vigorously, until the wine has reduced by about half.
  • Add the diced tomatoes, ground mushroom powder, cocoa, tomato paste and salt and pepper to taste.
  • Return the turkey pieces to the pot with the potato cubes and stir well.
  • Cover and simmer 30 minutes, until the turkey and potatoes are done.

2 turkey thighs (3 lbs. total)
1 (10 ounce) can Rotel tomatoes & chilies
1 (10 ounce) can tomato soup
1/3 cup white wine
1/2 cup diced onion
1/2 cup thinly sliced mushroom
1/2 cup stuffed green olive, halved
1 teaspoon celery seed
1/2 teaspoon thyme
1 bay leaf
1 tablespoon white sugar

Steps:

  • Season thighs with salt and pepper.
  • Place into crockpot.
  • Top with all other ingredients.
  • Cook on low for 7 1/2 hours.
  • Carefully remove thighs from pot and shred meat from the bones.
  • Place meat on piping hot rice, top with sauce.

These Turkish traditional cookies are somewhere between Brazilian cornstarch cookies and melting moments. The mushroom-lookalikes are melt-in-your-mouth good with a light character. When they bake, the cocoa impression makes them look like little button mushrooms: very unique and a cute addition to a cookie tray!

2 eggs
1 cup butter
1 cup powdered sugar
2 cups cornstarch
2 teaspoons vanilla extract
2 teaspoons baking powder
1 3/4 cups flour
4 tablespoons cocoa

Steps:

  • Preheat the oven to 375.
  • Cream the butter and sugar.
  • Add eggs and beat well.
  • Add in the rest of the ingredients except for cocoa. Mix well by hand and knead. The dough will be quite soft.
  • Allow the dough to rest for 5 minutes.
  • Roll dough into 1-inch balls.
  • Place cocoa in a small bowl and pour 1 tbsp water in another small bowl. Soak the rim of a bottle cap in the water, then dust it with cocoa. Press the rim of the bottle cap lightly on the dough. You'll need to wipe the rim of the bottle with a tissue occasionally.
  • Bake for about 18 minutes. Don't let them turn a golden brown or they will lose the melt-in-your-mouth character!
  • Arrange them on the wire rack until they cool down.
