- Heat the olive oil in a skillet over medium heat. Place chicken in the skillet, and season with garlic powder and garlic. Cook 12 minutes on each side, or until juices run clear. Set chicken aside, and keep warm.
- Stir mushrooms into the skillet, and cook until tender. Return chicken to skillet, layer with mushrooms, and top with cheese. Cover skillet, and continue cooking 5 minutes, or until cheese is melted.

EASY CREAMY CHICKEN WITH MUSHROOMS AND ONIONS
This is one of those meals I fix when I haven't got much time. It uses ingredients I usually always have at hand. My BF loves it. Serve with pasta, rice or potatoes or just some crusty bread to mop up the sauce. This is enough for two people, but can easily be doubled. Or if you want some greens, just add frozen peas or some steamed broccoli florets for the last few minutes.

Steps:
- Heat a little oil in a skillet and add chicken, fry over medium heat until the chicken is sealed.
- Add onions and continue to fry until they are starting to become transparent.
- Add mushrooms and fry for a further 3-5 minutes.
- Pour in the chicken stock.
- Mix in the flour paste and bring to a boil, simmer till sauce begins to thicken.
- Stir in the cream and herbs (if using) and serve imidiately over pasta, rice or potatoes.
MOZZARELLA CHICKEN AND MUSHROOMS

- Preheat oven to 350 degrees F.
- Place 2 cups of the mushrooms in a 13x9 inch baking dish.
- Dip chicken breasts into beaten eggs, then roll in breadcrumbs to coat.
- Heat butter or olive oil over medium heat in a large skillet.
- Brown chicken (approximately 2 minutes per side) in skillet. Place browned chicken in baking dish, on top of mushrooms. Sprinkle remaining mushrooms on top of chicken, then top evenly with mozzarella. Pour broth in pan around chicken.
- Bake for 30-35 minutes, or until chicken juices run clear.

CHEESY CHICKEN AND MUSHROOM BAKE
This recipe is a tasty blend of chicken breasts browned in butter, then topped with sauteed mushrooms and onions, and finally baked with grated Parmesan, mozzarella, and scallions. A favorite in my household.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish lightly.
- Sprinkle salt and pepper on chicken. Heat butter in a pan over medium-high heat. Add chicken and brown on all sides, 5 to 7 minutes. Remove chicken and place in the prepared baking dish.
- Stir mushrooms, onion, garlic, and flour into the remaining butter in the saucepan and saute over medium-high heat until softened, about 5 minutes. Add chicken broth and bring to a boil while scraping the "good stuff" off of the bottom of the saucepan, letting it add to the flavor. Cook until thickened to your liking; drizzle over chicken.
- Bake in the preheated oven for 30 minutes. Sprinkle with Parmesan cheese, mozzarella cheese, and scallions. Continue to bake until chicken is no longer pink in the center and cheese is melted, about 10 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- PREHEAT OVER TO 350.
- COMBINE FLOUR WITH SALT, PEPPER, PARSLEY, AND DILL WEED.
- LIGHTLY DREDGE CHICKEN IN FLOUR MIX.
- IN LARGE HEAVY SKILLET MELT 2 TBLS BUTTER.
- ON MEDIUM HEAT, SAUTE CHICKEN TILL BROWN ON BOTH SIDES.
- REMOVE CHICKEN TO GLASS BAKING DISH.
- ADD ANOTHER 2 TBLS BUTTER TO SKILLET.
- SAUTE MUSHROOMS AND ONIONS UNTIL ONIONS ARE A VERY LIGHT BROWN COLOR.
- ADD WINE.
- REDUCE HEAT AND SIMMER ABOUT 3 MINUTES.
- POUR MIXTURE OVER CHICKEN AND COVER.
- BAKE 20 MINUTES.
- REMOVE COVER AND SPRINKLE CHEESE ON TOP.
- BAKE FOR 10 MINUTES UNCOVERED UNTIL CHEESE IS MELTED AND BUBBLY.
- SERVE OVER RICE OR WITH MASHED POTATOES.
- PASS PARMIGANA CHEESE, IF DESIRED.
MUSHROOM AND ONION MOZZARELLA CHICKEN
I found this on another recipe site and tweaked it a little. We ate it last night with super fresh mozzarella and LOVED it. We made some garlic mashed potatoes to go with it and also added some fresh mozzarella to the mashed. Excellent dinner.
