Spice rubs are great for when you don't have time to marinate your meat.

1 1/2 teaspoons whole black peppercorns, coarsely crushed
1 teaspoon whole coriander seeds, coarsely crushed
1 1/2 teaspoons whole dill seeds, coarsely crushed
1/4 to 1/2 teaspoon red-pepper flakes, coarsely crushed
1 1/2 teaspoons coarse salt
4 bone-in strip steaks (10 to 12 ounces and 1 to 1 1/2 inches thick each)
Vegetable oil, for grates

Steps:

  • Combine peppercorns, coriander, dill, red-pepper flakes, and salt in a small dish. Rub spice mixture evenly over both sides of steaks.
  • Heat grill to medium-high; lightly oil grates. Place steaks on grill; cover. Cook, turning once, until meat is desired doneness, about 8 minutes for medium-rare.

I tried to do a little research to see what was a top loin steak. Turns out is is about the most popular cut. It goes by many different names including: New York Strip, Top Loin Steak, Hotel Steak, Kansas City Steak, Strip Steak, Shell Steak, Delmonico, Club Steak.

2 teaspoons cumin seeds, toasted
1 teaspoon brown sugar
1 teaspoon ground cinnamon
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground cayenne pepper
1/4 teaspoon garlic powder
36 ounces beef top loin steaks, cut 1 inch thick

Steps:

  • To toast cumin seeds, place in a small heavy saucepan and cook over medium heat until aromatic, 1 to 2 minutes.
  • Slightly crush cumin seeds and combine with brown sugar, cinnamon, oregano, salt, cayenne pepper., and garlic powder.
  • Trim fat from steaks, then rub all over with spice mix.
  • Coat grill with nonstick cooking spray and prepare for medium direct heat.
  • Grill steaks, turning once, to desired doneness; 11-15 minutes for medium rare, 14-18 minutes for medium.

2 teaspoons brown sugar
1 teaspoon ground cinnamon
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon ground cayenne pepper

36 ounces beef loin steaks, 1 inch thick (3 12 oz steaks)

Steps:

  • To toast cumin seeds, place them in a heavy saucepan, over medium heat, cook 1 or 2 minutes until fragrant.
  • Slightly crush toasted cumin seeds; in a small bowl combine with brown sugar, cinnamon, oregano, salt, cayenne, and garlic powder.
  • Trim fat from steaks; rub both sides with spice mixture.
  • Coat grill with nonstick cooking spray; preheat grill for medium direct heat.
  • Grill steaks to desired doneness, 11 to 15 minutes, turning once for medium rare, 14 to 18 minutes for well done.

From the Washington Post - another great grill recipe. "This is a homemade take on the popular Montreal steak rub. If your grill is covered in snow, you can always broil these steaks." 4 New York strip steaks, 1 1/2 to 2 inches thick (2 1/2 pounds total New York strip)
1 -2 teaspoon olive oil
2 teaspoons kosher salt
2 teaspoons black pepper, coarsely ground
1 teaspoon garlic powder
1 teaspoon sweet paprika
1/2 teaspoon cayenne pepper (hot paprika fine too)
1/2 teaspoon thyme, ground
1/2 teaspoon brown sugar
1/2 teaspoon orange peel, dried (optional)

Steps:

  • Let the steaks come to room temperature. Pat dry with paper towels. Rub both sides of each steak with the oil and set aside.
  • In a small bowl, combine the remaining ingredients with the orange peel, if desired, to create the spice rub. Sprinkle the rub on both sides of the steaks, pressing to adhere to the surface of the meat (some spice rub will be left over).
  • If using a gas grill, preheat to medium- to medium-high, depending on your grill. If using a charcoal grill, distribute the hot charcoal or wood briquettes evenly under the cooking area for direct heat. Oil the grate.
  • Grill for about 7 minutes per side, or until an instant-read thermometer registers 140 degrees for medium-rare. Let steaks rest, covered, for 5 minutes before serving.
