MOUNTAIN DEW CAKE
This fun from scratch Mountain Dew cake is a great way to enjoy an especially flavored cake.

Steps:
- Preheat the oven to 350 degrees.
- In a medium-sized mixing bowl combine the lemon cake mix, instant vanilla pudding, vegetable oil, eggs, and all purpose flour stir to combine. Then add the soda and mix by hand until the batter is smooth.
- Bake at 350 degrees for 20-25 minutes, if using 9-inch rounds. Refer to the box of cake mix for other cooking times. Cool the cake completely before frosting.
- Place 2 ounces of butter in a medium-sized pan over medium heat. Add 20 ounces of crushed pineapple, sugar, and cornstarch. Cook until hot and bubbly. Then add the coconut. Allow the frosting to cool, then spread over cooled cake.

- 1. Preheat oven to 325.
- 2. Lightly grease and flour 10 cup bundt pan.
- 3. In a large bowl, combine cake mix and pudding mix.
- 4. Add soda, oil and eggs.
- 5. Beat with an electric mixer until smooth.
- 6. Pour batter into prepared pan, and bake 50 minutes, check with wooden pick.
- 7. Let cool for 10 minutes.
- 8. Remove from pan and let cool completely.

- Mix the cake mix, pudding and the oil in a bowl. Add eggs, one at a time, beating well after each. Add the Mountain Dew.
- Grease and flour 3 9" pans and pour the batter, baking at 325 degrees for 30 minutes.
- While the cake is baking, mix and cook the first three icing ingredients, stirring until thick. Remove from heat and add butter and coconut flakes.
- Ice while the mixture is still hot.

- 3. For icing...melt butter, remove from heat and add 1/4 c. mountain dew, and enough powder sugar to make a thin icing.

- 1. Pre-heat the oven to 350 F
- 2. In a medium bowl, add cake mix, oil, pudding mix and eggs. Mix to combine.
- 3. Add the Mountain Dew; beat with electric mixer on medium speed for 2 or 3 minutes.
- 4. Pour batter into prepared bundt cake pan (sprayed with cooking spray with flour.) My handwritten recipe suggested a bundt pan but I really prefer to use a 9 x 13 cake pan.
- 5. Bake for 35 to 40 minutes or until a toothpick inserted in the cake comes out clean.
- 6. In a medium saucepan, combine sugar, pineapple and cornstarch. Stir and cook until thick.
- 7. Remove from heat and add butter and coconut. Stir to combine well. Slowly pour hot icing over cake.
