A Chili with noodles in it. No, not Chili-mac, but similar. If you want, you can use macaroni instead of egg-noodles and think of it as Chili-mac. Actually, you can use any kind of pasta you want. I's a quick and surprisingly tasty dish. I personally prefer spicy foods but I often find myself craving this down-home food from my childhood. This is a VERY BASIC recipe. Mrs. Lundin (my grandmother) was married to a Swede who didn't have much taste for spicy foods. I have on occasions added garlic, (to the ground beef & onions while browning) various types of hot peppers, cilantro, cumin & extra chili powder (added with the tomato products) and when used conservatively these added ingredients don't spoil the original recipe at all.

1 lb ground beef
1 medium onion
2 (15 ounce) cans tomato sauce or 2 (15 ounce) cans tomato soup, and
1 (15 ounce) can diced tomatoes
1 tablespoon mild chili powder
2 (15 ounce) cans red kidney beans
8 ounces wide egg noodles (uncooked)
salt & pepper

Steps:

  • Brown the ground beef with the onion, then drain off excess fat.
  • While the ground beef & onions are cooking, in a large pot put the tomato sauce & soup and 1-1/2 cans of water for each can of soup.
  • Stir in the chili powder and bring to a boil.
  • Add the cooked ground beef & onion. Cook over medium heat for about 10 minutes.
  • Add the beans and noodles. The noodles don't need to cook very long, you can turn off the heat after 3-4 minutes.
  • Let the hot chili stand on the stove (10 minutes or so) and as the noodles get done the chili will thicken so add water if you think it's getting too thick, according to your own preference.

Chili with Noodles is both easy to prepare and versatile; this is my version. You can use any kind of pasta, adjust the amount of water to obtain preferred consistency, and add or change the types of hot peppers to personalize the heat index.

1 lb ground beef
1 medium onion (fresh, chopped)
2 garlic cloves (fresh, minced)
3 (15 ounce) cans tomato sauce
4 cups water
1 (15 ounce) can diced tomatoes (mild or hot)
1 tablespoon chili powder (preferred variety, mild, hot or xtreme)
1 tablespoon red pepper (ground or flakes)
salt & pepper (to taste)
2 (15 ounce) cans red kidney beans
8 ounces wide egg noodles (uncooked)

Steps:

  • Brown ground beef with onion and garlic, then drain off excess fat.
  • While browning, pour tomato sauce and water into large pot.
  • Stir in chili powder, red pepper, salt and pepper. Bring to a boil.
  • Add browned ground beef mixture. Cook over medium heat for about 10 minutes.
  • Add beans and noodles. Cook for additional 3-4 minutes, then turn off heat.
  • Let the hot chili stand on the stove (10 minutes or so until noodles are cooked).
  • Add more water if it's thicker than you prefer and/or when reheating leftover soup.

I've placed in my workplace's annual Halloween chili cook-off for the last three years. Looks strange -- tastes great! Serve with shredded Monterey Jack cheese and warm flour tortillas.

1 tablespoon vegetable oil
3 pounds skinless, boneless chicken breast meat - cubed
1 cup chopped onion
2 cups chicken broth
2 (4 ounce) cans chopped green chile peppers
5 (14.5 ounce) cans great Northern beans, undrained
1 tablespoon garlic powder
1 tablespoon ground cumin
1 tablespoon dried oregano
2 teaspoons chopped fresh cilantro
1 teaspoon crushed red pepper

Steps:

  • In a large skillet over medium-high heat, place the vegetable oil and chicken. Cook the chicken, stirring occasionally, until all pieces are evenly brown. Stir in the onions. Cook until translucent. Drain mixture and set aside.
  • In a large saucepan over medium heat, bring the chicken broth and green chile peppers to a boil. Stir in 3 cans great northern beans, garlic powder, cumin, oregano, cilantro and crushed red pepper. Stir in the chicken and onion mixture, and reduce heat. Simmer 30 minutes or longer, adding additional beans from the remaining cans for a thicker consistency as desired.

Chile-Oil Noodles With Cilantro image

In this 20-minute recipe, a mixture of savory condiments coats bowlfuls of wide noodles chilled slightly by a quick rinse in cool water. While you cook the udon, take the time to prepare the sauce, abundant with contrasting flavors, and the fresh herbs. The sauce can be made in advance, but make sure it's at room temperature before tossing it with the noodles and the cilantro at the last minute. Substitutions are welcome: Swap in chile crisp in place of the chile oil with crunchy garlic, or scallions in place of garlic chives. Sichuan chile oil brings a citrusy flavor that is hard to replicate, so don't skip it. It can vary in spice level: For a milder sauce, use only the liquid oil, or add Sichuan peppercorns from the bottom of the oil for extra tingle. Fried shallots are here for texture, but omit them if you use chile crisp.

14 ounces dried udon noodles
1/4 cup chile oil with crunchy garlic
2 tablespoons pure sesame oil
2 teaspoons Sichuan chile oil, or to taste
2 teaspoons soy sauce
1/2 cup finely sliced garlic chives or scallions, plus more for garnish
2 tablespoons store-bought fried shallots, crumbled by hand (optional)
1/2 cup finely chopped cilantro (see Note), plus a few sprigs for garnish

Steps:

  • Bring a large pot of water to boil and cook noodles according to package instructions, stirring from time to time to prevent them from sticking. Drain well in a colander, then run noodles under cold water until cooled.
  • Meanwhile, in a large bowl, combine all three oils with the soy sauce and 1/2 cup garlic chives.
  • Toss cooled noodles into the chile oil mixture. Gently fold in the crumbled fried shallots and chopped cilantro. Divide among four bowls, and top with more garlic chives and cilantro sprigs.

GRANNY'S CHILI (WITH NOODLES)

This is the chili recipe that I grew up with that was passed down from my Granny, to my mom, to me! I absolutely adore it, even if it's not a purist's idea of chili. Yes, there is canned Chili in the recipe, but it's still delicious and super easy. It makes plenty to freeze and reheat whenever you don't feel like making dinner!

1 lb ground chuck
1/2 large onion
2 (30 ounce) cans chili with beans (Varallo is my favorite)
4 cups water
12 ounces tomato juice
2/3 lb elbow macaroni
1/2 tablespoon chili powder
1/2 tablespoon dried basil
1/2 tablespoon oregano
1/2 tablespoon garlic powder
1 bay leaf

Steps:

  • In a large pot or dutch oven, cook ground chuck. Then, saute onion in the fat.
  • In a separate pot, boil macaroni according to instructions on box.
  • Once the onion and ground chuck are cooked, add the cans of Varallo chili, tomato juice, spices, and water. (Here's a tip, just fill both cans 2/3rds of the way up with water -- that should be plenty)
  • After the macaroni is cooked, dump in into the big pot with the chili and simmer and reduce for around 30 minutes.
  • Enjoy!
