8 medium-large potatoes
10 hard boiled eggs (chopped)
2 cups chopped yellow onion
1 cup diced dill pickles
1 cup mayo
3/4 cup yellow mustard
3/4 cup dill pickle juice
salt & pepper to taste
paprika (optional)

Steps:

  • Boil the potatoes whole in the skin until fork tender, about 20-30 minutes. Run water over the potatoes to cool. Peel & chop the potatoes. In a large bowl, combine the potatoes, eggs, onion, dill pickles, mayo, & mustard. Pour in the dill pickle juice & stir to combine. Season to taste with salt & pepper. Sprinkle with paprika, if desired. Refrigerate until serving.

4 cups cubed peeled potatoes
3 hard-boiled large eggs, chopped
2 celery ribs, thinly sliced
1/4 cup chopped green onions
1/2 cup sour cream
1/2 cup mayonnaise
2 tablespoons vinegar
2 tablespoons sugar
1 teaspoon prepared mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place potatoes in a saucepan and cover with water; bring to a boil. Reduce heat. Cook for 20-25 minutes or until tender; drain. Place in a large bowl; add eggs, celery and onions. , In a small bowl, combine the remaining ingredients. Pour over potato mixture and toss to coat. Cover and refrigerate for at least 1 hour.

l2 egg yolks
l cup sugar
l round tsp. dry mustard
2 heaping tsp celery seed
l tsp. salt
l/2 tsp paprika
l/4 tsp pepper
3/4 c. apple cider vinegar
l pint thick cream (whipping) plus l/2 c. milk.
Butter the size of a hen's egg (about 1/4 cup)
l dozen eggs (hard boiled)and chopped
l2 cups potatoes, cooked and cubed
2 large onions, chopped
l tsp. salt

Steps:

  • Mix the egg yolks, sugar, mustard, celery seed, salt, paprika, and pepper. Then add vinegar. Stir. Add the cream, milk, and butter. Have water boiling in a double boiler. Stir and cook until like a thick gravy or it coats a spoon.
  • In the meantime, put all the rest of the salad ingredients together in a large bowl. Mix these items together. Pour the dressing over this and cool. Delicious!

2 lbs equal-size potatoes
3 tablespoons cider vinegar
salt, to taste
3/4 cup chopped celery
1/2 cup chopped white onion
3 hard-boiled eggs, chopped (large)
1 cup mayonnaise

Steps:

  • Cover the potatoes with salted cold water by 2 inches in a 3-quart saucepan and simmer, uncovered, until just tender, 15 to 25 minutes, depending on the size of the potatoes.
  • Drain in a colander and cool slightly.
  • While the potatoes are simmering, whisk together the vinegar and salt in a large bowl until salt is dissolved.
  • When the potatoes are just cool enough to handle, peel and cut them into 1-inch pieces, adding them to the vinegar mixture as they are cut, and toss gently with a rubber spatula to combine.
  • Let cool to room temperature, then add the remaining ingredients and salt and pepper to taste and stir gently to combine.
  • Serve at room temperature or chilled.

1 large onion (grated)
2 stalks celery (finely chopped)
1/4 cup vegetable oil

MRS. ROCKEY'S SECRET POTATO SALAD

The late, great culinary genius James Beard once labeled this particular recipe as his favorite potato salad. It was a "secret" family recipe of a lady whom he had encountered along his endless gastronomical sojourns -- and, after much prodding by Beard, one of the family members finally elected to let the rest of the world enjoy it too. This potato salad falls into an old fashioned (but good!) category by utilizing a type of "boiled dressing". Often, such dishes were served hot (like German potato salad) but I like this one because it is served cold, which is my personal preference. I decided to save the recipe here so that I wouldn't lose it.

6 potatoes, equally sized (about 2.5 # total)
1/3 cup cider vinegar
4 eggs, beaten
1 tablespoon butter
1 cup heavy cream
4 tablespoons fresh parsley, finely chopped
2 tablespoons onions, finely chopped
1 teaspoon dry mustard (powder)
1 teaspoon salt
1/2 teaspoon white pepper
1/8 teaspoon cayenne pepper

Steps:

  • Boil the potatoes unpeeled. When they are just fork tender (not too soft!), peel and slice them (or, leave them unpeeled if you wish) while they are still fairly hot. Place them in a large mixing bowl and set aside, covered (so they'll stay warm while you make the dressing, etc.).
  • In a small pan, bring the vinegar to the boiling point.
  • In a mixing bowl, SLOWLY whisk the vinegar into the beaten eggs. Don't pour the hot vinegar in too fast or the eggs will scramble a bit.
  • In a double boiler, over medium heat, pour in the egg-vinegar mix and whisk until the blend thickens some, then whisk in the butter and allow to cook for one minute.
  • Next, stir in the cream (pre-warmed to about 100 degrees F.), TWO tablespoons of the parsley, the onion, and the seasonings.
  • When the mix is well-blended, pour it over the sliced potatoes and carefully mix the dressing with the potatoes -- I use a big spatula for this.
  • Allow to cool a bit and sprinkle remaining parsley over the top. Refrigerate and serve cold.

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and chop.

Easy Baked Potato Salad image

This is a very delicious potato salad recipe that we all really enjoyed for dinner. I love the use of sour cream in this recipe - it gives the salad a lot of creaminess without being heavy. You can adjust the amount of seasonings, cheese, and bacon to your personal preferences.

2 pounds red potatoes, scrubbed
¾ thick slice bacon, divided
1 cup shredded Cheddar cheese, divided
¾ cup sour cream
¼ cup mayonnaise
¼ teaspoon salt, or to taste
¼ teaspoon freshly ground black pepper, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Prick potatoes several times with a fork and place onto a baking sheet. Bake in the preheated oven until potatoes are easily pierced with a fork, 50 minutes to 1 hour.
  • Line a baking sheet with aluminum foil. Lay bacon strips in a single layer on the sheet. Add baking sheet to the oven while potatoes are baking and cook bacon until browned and crisp, about 15 minutes. Drain bacon slices on paper towels.
  • Remove cooked potatoes from oven and set aside to cool completely.
  • Crumble cooled bacon and cut potatoes into bite-sized pieces. You can either peel the potatoes or leave the skins on, depending on your preference.
  • Combine most of the Cheddar cheese, most of the bacon, mayonnaise, sour cream, salt, and pepper in a large bowl. Stir to blend. Add diced potatoes and toss gently with a spatula until evenly coated.
  • Sprinkle remaining Cheddar cheese and bacon over the top of the salad before serving.
