My sister-in-law's mom, Evelyn Brandenberger, whom I always called "Mrs. B", made this every Thanksgiving. It is simply delicious! And it's very easy too! Now that she has graduated to Heaven, her daughters & granddaughters are making sure the tradition continues.

1/2 cup(s) butter
3/4 cup(s) sugar
3 - eggs, beaten
pinch(es) salt
1 can(s) (large) crushed pineapple
6 slice(s) bread, cubed

Steps:

  • Preheat oven to 325 degrees
  • Spray a 1 1/2 quart casserole lightly with non-stick spray
  • In a large bowl, cream together butter and sugar
  • Add eggs and beat
  • Add other ingredients. Mix well
  • Pour into casserole dish and bake for 40 to 50 minutes

Mrs. Bruce's Delicious Sweet Potato Casserole is a tried and true, low-sugar holiday side dish that is deliciously satisfying for everyone at the table.

1 (29 oz.) can Bruce's Yams Cut Sweet Potatoes with Splenda®; drained and mashed
3 tbs. low-fat evaporated milk
2 tbs. melted butter
1/4 tsp. salt
3/4 tsp. vanilla extract
2 large eggs
Topping:
1/4 cup flour
1/4 cup Splenda® Brown Sugar Blend
1/8 tsp. salt
4 tsp. melted butter
1/3 cup chopped pecans

Steps:

  • Heat oven to 350°F.
  • In a large bowl, combine the Bruce's Yams Cut Sweet Potatoes, low-fat evaporated milk, salt and vanilla extract. Mix thoroughly before beating in 2 large eggs.
  • Pour the mixture evenly into a greased 8 x 8 glass baking dish.
  • In a separate bowl, combine the flour, Splenda® Brown Sugar Blend and salt. Whisk together, and stir in the melted butter.
  • Sprinkle brown sugar topping over sweet potato mixture, then top with chopped pecans.
  • Bake for 20 minutes, then broil until topping is bubbling. Remove, let cool and serve.

This is a yummy homemade mac and cheese recipe from the former associate pastor's wife at the church I attend. There is never any left when she makes it.

1 (8 ounce) box elbow macaroni
1 (16 ounce) package extra-sharp cheddar cheese, shredded (do not use pre shredded it's not as good)
4 1/2 cups milk
4 eggs
1/4 cup butter
salt and pepper

Steps:

  • Preheat oven to 350.
  • Cook elbow noodles until tender and drain.
  • Beat eggs in a 9x13 baking dish that has been sprayed with Pam.
  • Mix noodles with eggs in baking dish.
  • Spread cheese over the top of noodles.
  • Blend together with milk - one cup at a time, stirring well after each addition.
  • Add salt and pepper to taste and stir again.
  • Place butter pats on top of noodles and bake at 350 for about 50 minutes.

This recipe came from a local church fund raising cook book. Mrs. Geraldine is a good friend of the family. She reminds me so much of Mrs. Clause, that I can't help but smile every time I think of her. This recipe freezes well. Do not bake before freezing. Just put it together, freeze it, thaw it and cook.

1 lb ground beef
1 (15 ounce) can tomatoes
1/4 cup chopped onion
1/4 cup chopped bell pepper
1/4 cup chopped celery
1 (8 ounce) can mushrooms
2 tablespoons brown sugar or 2 tablespoons sweet pickle juice
2 tablespoons Worcestershire sauce
1 (10 3/4 ounce) can cream of mushroom soup
1/4 lb sharp cheddar cheese
1 (6 ounce) package angel hair pasta, cooked, this is an estimated size bag- the original recipe called for 1 small bag
1 (8 ounce) can tomato sauce
salt and pepper

Steps:

  • Brown meat in large skillet or Dutch oven.
  • Add onions, pepper and celery and simmer for 15 minutes.
  • Add tomatoes and tomato sauce, mushrooms, brown sugar and Worcestershire sauce.
  • Add salt and pepper to taste.
  • Cook in skillet for 1 hour.
  • Place cooked pasta in bottom of large casserole dish.
  • Spoon mushroom soup over pasta.
  • Pour sauce over the soup and top with cheese.
  • Bake in 350°F oven for 30-45 minutes.
  • Can sizes do not have to be exact, just as long as they are within a close range, everything will work out.

1 lb ground beef
1 green bull nose pepper, chopped
1 medium size onion, chopped
2 cloves garlic, chopped
Salt & pepper to taste
Olive oil or butter
2 cups elbow macaroni (par boiled)
2 cups Kraft Shredded Cheddar Cheese
1 can Campbell's tomato soup (mix it with 1 can of milk)

Steps:

  • Saute ground meat with the peppers, onion, garlic and salt & pepper with olive oil or butter till red disappears in the meat.
  • Lightly butter medium casserole dish and start to layer with macaroni, then the meat mixture, cheese and then the soup mixture. Do this till you reach the top and cover, ending with the soup mixture.
  • Bake at 325 degrees F for 45 minutes.
