HAM AND CHEESE STROMBOLI
With just five ingredients, you can whip up our favorite easy lunch: Ham and Cheese Stromboli. We take frozen bread or pizza dough, layer it up with salty ham, gooey white American cheese, and then roll it up and bake. Cheesy and so delish.

Steps:
- If defrosting, pull out the bread dough the night before and follow instructions to defrost.
- Preheat the oven to 400 degrees. Line a large baking sheet with parchment paper.
- Lightly dust a large working surface as well as a rolling pin. Roll the dough out to a rectangle 8x13 inches long. Transfer the dough to the parchment covered baking sheet.
- Lay ham across the dough. Layer cheese on top. Cover with another layer of ham. Sprinkle with basil. Season with a little bit of salt and black pepper.
- Tightly roll up the dough, jelly-roll style. Tucks the ends over and pinch eveyrthing closed. (You can also brush the edges with egg wash to help them seal. Cut three slits in the top of the stromboli. Take a pastry brush and brush the top with egg wash. Sprinkle with more dried basil and plenty of salt and pepper.
- Bake until golden brown and cooked through, about 25-30 minutes. Let the stromboli rest for 5 minutes before gently slicing with a serrated knife. Serve right away.

- Preheat oven to 375°. Unroll dough on a baking sheet. Place ham down center third of dough to within 1 in. of edges; top with onion, bacon and cheese. Fold long sides of dough over filling, pinching seam and ends to seal; tuck ends under. Cut several slits in top., Bake until golden brown, 20-25 minutes. Cut into slices. If desired, serve with honey mustard. Freeze option: Securely wrap and freeze cooled unsliced Stromboli in heavy-duty foil. To use, reheat Stromboli on an ungreased baking sheet in a preheated 375° oven until heated through and a thermometer inserted in center reads 165°.

HAM AND PEPPERONI STROMBOLI

- Preheat the oven to 375 degrees F.
- Sprinkle a clean dry work surface with flour. Roll the dough into a 10- by 14-inch rectangle, making sure not to flip the dough over, rotating by 90 degrees as needed. After rolling the dough, apply the egg whites to cover inner section (10- by 3-inch). Then add 1/4 cup mozzarella followed by both hams, another 1/4 cup cheese and then finish with the pepperoni. To finish stuffing, add the remaining cheese and drizzle with the sauce and herbs.
- Next, brush the edges with some of the egg whites. Fold the bottom and top edges over the filling, and then fold the sides over twice, 1 inch at a time, resulting in a 6- by 14-inch tube. Brush the outside of the stromboli with the remaining egg whites, place on a sheet pan lined with parchment paper and bake until firm and golden brown, 15 to 18 minutes. Remove from the oven and let rest for 5 minutes. Cut into 5 to 6 portions and serve.

A pizza in half, much better than calzones. Had them all over in the Italian areas in Philadelphia growing up. Serve with spaghetti sauce or Ranch dressing.

- Preheat oven to 425 degrees F (220 degrees C). Let dough rise according to package instructions, then punch down, and divide into 4 pieces.
- On a floured surface, roll each piece of dough into a long oval shape. Spread each with sauce, then layer with ham, capacola, salami, and pepperoni. Sprinkle with garlic powder, then top with mozzarella, onion, mushrooms and bell pepper. Bring the long sides together over the center, and pinch together to seal. - Heat a large skillet over medium-high heat; cook and stir sausage until crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.

- Whisk the warm water, yeast, and granulated sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to rest for 5 minutes. *If you don’t have a stand mixer, simply use a large mixing bowl and mix the dough with a wooden spoon or rubber spatula in the next step.
- Add the olive oil, salt, and flour. Beat on low speed for 2 minutes. Turn the dough out onto a lightly floured surface. With lightly floured hands, knead the dough for 3-4 minutes (for a visual, watch me do it in the video above!). The dough can be a little too heavy for a mixer to knead it, but you can certainly use the mixer on low speed instead. After kneading, the dough should still feel a little soft. Poke it with your finger – if it slowly bounces back, your dough is ready to rise. If not, keep kneading.
- Lightly grease a large bowl with oil or nonstick spray– just use the same bowl you used for the dough. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise at room temperature for 60-90 minutes or until double in size. If using instant yeast, this takes about 1 hour. (Tip: For the warm environment on a particularly cold day, heat your oven to 150°F (66°C). Turn the oven off, place the dough inside, and keep the door slightly ajar. This will be a warm environment for your dough to rise. After about 30 minutes, close the oven door to trap the air inside with the rising dough. When it’s doubled in size, remove from the oven.)
- Preheat oven to 400°F (204°). Line 2 large baking sheets with parchment paper or silicone baking mats.
