Applesauce Muffins image

These moist applesauce muffins have a delicious apple cinnamon flavor and are sweetened with applesauce. They're the perfect easy muffin recipe, and the cinnamon sugar topping makes them extra drool-worthy.

2 cups all-purpose flour
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter (, melted)
1/2 cup white sugar
1/4 cup brown sugar
2 teaspoons vanilla extract
2 large eggs
1 cup unsweetened applesauce
1/3 cup unsalted butter (, melted)
1/4 cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 375F degrees. Line a muffin pan with muffin papers.
  • Sift together the flour, cinnamon, nutmeg, baking powder, baking soda and salt.
  • In a large bowl whisk together the melted butter and sugars. Then whisk in the eggs, vanilla extract and applesauce.
  • Whisk about 1/2 of the flour mixture into the wet ingredients, then gently fold in the rest using a rubber spatula or wooden spoon.
  • Spoon the batter into the prepared muffin pan.
  • Bake for 17-22 minutes, or until the tops are slightly firm to the touch and an inserted toothpick comes out clean. Cool for 10 minutes.
  • In a small bowl whisk together the sugar and cinnamon.
  • Dip the top of a warm muffin in the melted butter, shaking off any excess. Then dip the top in the bowl of cinnamon sugar. Repeat the process with the rest of the muffins.

1 cup butter, softened
2 cups sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups applesauce
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/4 teaspoon ground cloves
1 cup chopped walnuts, optional
Cinnamon-sugar, optional

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture. If desired, fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks. If desired, sprinkle with cinnamon-sugar.

1 egg, beaten
1 cup applesauce
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1 teaspoon baking soda
1/4 teaspoon salt
2 cups all-purpose flour
1 cup raisins
1/2 cup butter, softened
3/4 cup all-purpose flour
3/4 cup quick-cooking oats, uncooked
1/2 cup brown sugar, packed
2 teaspoons cinnamon

Steps:

  • Combine all ingredients; stir until moistened.
  • In a separate bowl mix all ingredients for crumble topping until crumbly.
  • Fill lightly greased muffin cups 3/4 full; sprinkle with Crumb Topping. Bake at 350 degrees for 25 to 30 minutes.

1 tablespoon ground cinnamon
1 tablespoon ground allspice
2 teaspoons baking soda
1 cup butter, softened

Steps:

  • In a bowl, combine flour, cinnamon, allspice and baking soda; set aside. In a bowl, cream butter and sugar. Beat in eggs, applesauce and vanilla; stir into dry ingredients just until moistened. Fold in raisins. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes; remove to a wire rack.

2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 large egg, beaten
1 cup unsweetened applesauce
1/2 cup butter, melted
crystal sugar

Steps:

  • Heat oven to 375 degrees.
  • Spray muffin tins with nonstick spray.
  • Mix flour, sugar, baking powder, cinnamon, and salt in a bowl.
  • Mix in beaten eggs, applesauce and melted butter. (by hand, do not need mixer).
  • Evenly scoop mixture into muffin pans.
  • Sprinkle crystal sugar sprinkles on tops of muffins.
  • Bake for 18 to 20 minutes. Test to see if toothpick comes out clean.
