Moroccan Fish Tagine image

This delicious healthy dish common to North Africa, particularly Morocco, is one of my favorites when entertaining guests. The wonderful spices blended with fresh vegetables and fish is a crowd pleaser. The fish is marinated in a chermoula sauce to soak up all the wonderful spices prior to cooking. This dish is prepared in a traditional method in a ceramic tagine, but can be prepared in a heavy lidded pot. This dish as it cooks emits some of the most wonderful smells throughout the house. Serve with couscous or rice and crusty bread to mop up all the wonderful sauce!

½ cup olive oil
½ cup chopped fresh cilantro
½ cup chopped fresh parsley
½ lemon, juiced
6 cloves garlic, minced
1 teaspoon ground paprika
½ teaspoon ground ginger
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon ground saffron
1 ½ pounds cod fillets, cut into bite-sized pieces
1 tablespoon olive oil
1 large onion, cut into rings
1 large carrot, peeled and cut into matchsticks
2 potatoes, peeled and sliced 1/4-inch thick
1 large green bell pepper, sliced into rings
3 tomatoes, seeded and cut into strips
¼ cup chopped fresh cilantro

Steps:

  • Mix 1/2 cup olive oil, 1/2 cup cilantro, parsley, lemon juice, garlic, paprika, ginger, cumin, salt, and saffron in a large glass or ceramic bowl. Add cod and mix well. Cover and marinate in the refrigerator for 2 hours.
  • Heat 1 tablespoon olive oil in a large pot or tagine. Layer onion rings, carrot matchsticks, and potato slices in the pot in that order. Remove cod from marinade and spread evenly over potatoes. Cover cod with green bell pepper rings and tomato strips. Sprinkle 1/4 cup cilantro on top. Pour marinade over cilantro.
  • Cover pot tightly and cook over low heat until potatoes are tender and cod flakes easily with a fork, about 1 hour.

Fish fillets poached in a spicy tomato sauce, an abundance of vegetables and chickpeas. This Moroccan Fish Tagine is the perfect topping for couscous and it is done in 30 minutes! Delicious and healthy doesn't get any better!

2 tbsp olive oil
1 medium onion, sliced
4 bell peppers (red, yellow, orange & green) sliced
2 tsp smoked paprika
1 tbsp ground cumin
1/2 tsp ground turmeric
1/2 tsp coriander seeds, lightly crushed
1/4 tsp chilli pepper/cayenne (optional)
1 tomato, skinned and diced
1 head of garlic, finely diced
1-2 tbsp harissa
1 small can of chickpeas (approximately 1 cup)
1 cup of water
1 tsp bouillon powder
1 bunch of cilantro, washed, dried and roughly chopped
4 frozen cod fillet (or any firm white fish.)
A pinch of freshly ground pepper
salt (only if needed)

Steps:

  • Heat the tagine. Set the tagine on a low heat until warm; once the tagine is warm, increase the heat to a medium-high. If you're not using a tagine pot, skip the warm-up on low and heat your pot at medium-high.
  • Sauté onions & peppers. Coat the tagine with a generous amount of olive oil (about 2 tbsp or more). Add in the onions, sauté until translucence, then add the bell peppers. Cover the tagine and cook for 3 minutes.
  • Add spices, tomatoes, garlic & harissa. Once the bell peppers have begun to soften, add in the spices and stir to coat the peppers and bloom the flavours. Add the tomatoes and garlic. Cover the tagine and simmer for 3-4 minutes ⏤ if the tomatoes are really dry, add 2 tbsp of water from your water cup.
  • Toss in the chickpeas, bouillon powder, & water. Open the lid, add the chickpeas and bouillon powder and give everything a good stir. Pour the water over the mixture and cover the tagine for 10 minutes.
  • Time for cilantro & fish. Remove the lid and taste the sauce; you may wish to adjust the salt at this point. I don't usually add any salt to the dish since the bouillon powder is pretty salty already, but it's a good time to check. Stir in the cilantro, then place the fish on top of the sauce. Cover the tagine, and simmer for 7 minutes.
  • Braise, Simmer & Cover. Now the fish has been cooking for 7 minutes and is becoming soft. Scoop some of the sauce on top of the fish and move the chickpeas to the side so the fish can be submerged into the sauce. Cover and continue cooking for 4 minutes
  • Serve and enjoy.

Moroccan Tagine with Fish and Rice - Our Moroccan tagine recipe is a flavorful and easy one-pot meal that cooks fish and rice together with traditional Moroccan ingredients.

3 tablespoons olive oil
1 cup chopped onion
4-5 cloves garlic (minced)
½ cup chopped cilantro
2 tablespoons fresh grated ginger
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon ground cinnamon
1 ½ cups basmati rice (or long grain)
15 ounce can diced tomatoes
15 ounce can chickpeas (drained)
6 ounce pitted green olives (drained)
¾ cup golden raisins
½ cup dried apricots (halved)
1 lemon (zested and juiced)
4-6 thin white fish fillets: flounder, grouper, or snapper ((optional))
salt and pepper
½ cup toasted almonds
½ cup fresh chopped mint
¼ cup cilantro
pickled red onion ((optional))

Steps:

  • Set a large Moroccan Tagine over low heat. (You could also use a large sauté pan with a tight lid.) Add the oil, onions, cilantro, garlic, and ginger. Sauté for 5-8 minutes.
  • Then mix in the cumin, coriander, cinnamon and rice. Stir and toast the spices and rice another 2 minutes.
  • Add the diced tomatoes, chickpeas, raisins, apricots, lemon zest and juice, and 1 ½ teaspoons salt to the rice. Mix well and spread evenly across the bottom of the pan. Then pour 1 ½ cups water over the top.
  • Place the cover over the tagine and cook for 15-20 minutes. Do not lift the lid until the 15 minutes mark. The rice should look dry on top, and there should be vent hole apparent. If it does not look fully cooked, cover and continue cooking for 5 more minutes.
  • Adding Fish: If you plan to add fish at the end, pat the fish fillets dry. Then salt and pepper them liberally on both sides.
  • One the rice has cooked for at least 15 minutes, lay the fish fillets over the top of the rice and cover. You can either turn off the heat and let them steam for 5-10 minutes, or if needed, you can continue cooking the rice for another 5 minutes, then turn off the heat. Either way, fish fillets under ½ inch thick will cook through on top of the rice in 5-10 minutes.
  • Then remove the lid and sprinkle the top with fresh chopped mint, cilantro, and toasted almonds. Serve warm.

Tagines are Moroccan slow-cooked meat, fruit and vegetable dishes which are almost invariably made with mutton. Using lamb cuts down the cooking time, but if you can find good hogget (older than lamb, younger than mutton, commonly labeled 'baking legs' and sold cheaply) that will do very well.

1 tablespoon olive oil
2 large onions, peeled and sliced into rings
2 pounds lamb meat, cut into 1 1/2 inch cubes
1 teaspoon ground cumin
1 teaspoon ground coriander seed
1 teaspoon ground ginger
1 teaspoon ground cinnamon
salt to taste
1 teaspoon ground black pepper
4 pears - peeled, cored and cut into 1 1/2 inch chunks
½ cup golden raisins
½ cup blanched slivered almonds

Steps:

  • Heat the oil in a large pot or Dutch oven over medium heat. Fry the onion in the oil until soft. Add the lamb meat to the pan, and fry until just browned on the outside. Season with cumin, coriander, ginger, cinnamon, salt and pepper. Pour just enough water into the pot to cover the meat. Cover, and simmer over low heat for 1 1/2 to 2 hours, until meat is tender and the mixture is stew-like. Displace lid a little after an hour if there appears to be too much liquid.
  • Add the pears, golden raisins and almonds to the stew, and cook for another 5 minutes or so, until the pears are soft. Serve with rice.

This is a real comfort dish, don't be put off by the sweet and savoury combination, it works really well. If you have a tagine, you could use it for the recipe, I however do not. Serve over couscous.

2 teaspoons vegetable oil
2 cups chopped onions
2 garlic cloves, crushed
2 boneless skinless chicken breasts, diced 1/2 cm cubes
1 cup carrot, sliced 1/2 cm thick
1 large red capsicums (also known as a bell pepper) or 1 large green capsicum, cut into strips (also known as a bell pepper)
1 teaspoon ground cumin
1/2 teaspoon ground allspice
1/2 teaspoon ground ginger
1/2 teaspoon turmeric
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon cayenne
1 cup water
1 medium eggplant, cut into 1 cm cubes
1/2 cup raisins (I have substituted sultanas)
1 (400 g) can chickpeas, drained and rinsed (I understand these are called garbanzo beans in other places)
1/2 cup dried apricot (optional)

Steps:

  • Heat oil in a saucepan over medium heat.
  • Add the onion and garlic, stirring for a few minutes until onion is translucent.
  • Add chicken and lightly colour, stirring. Remove from pan.
  • Add carrots, capsicum, and spices.
  • Stir dry to toast.
  • Once a nice aroma comes from the pan, add 1/2 cup of water.
  • Cook stirring occasionally for 5 minutes.
  • Add remaining ingredients.
  • Cover and simmer over a medium heat for 30 minutes until veggies are tender.
  • Stir frequently during cooking, to prevent catching on the bottom.
  • You may need to add additional water.
  • Serve with couscous.
  • NB: You only need to salt your eggplant if there are lots of black seeds when you cut it open.
  • Make sure you rinse the excess salt off and dry well in that case.

This is a simple dish to make with a lot of flavor. Any of these firm white-fleshed fish can be used in this tagine; sea bass, stripped bass, red snapper, porgy, halibut, cod, haddock, or pollack. I adjusted the amount of lemon juice in this recipe after the reviews said it was too much. Thanks for the great input.

1/4 cup cilantro, finely chopped
1/4 cup parsley, finely chopped
3 -4 medium garlic cloves
2 tablespoons white vinegar
1/4 cup lemon juice

2 lbs firm white fish fillets

Steps:

  • Charmoula:.
  • Blend the herbs together in a bowl with the garlic & vinegar until pasty. Stir in the lemon juice & spices.
  • Tagine:.
  • Cut the fish into 2 inch pieces. Rub each piece with the charmoula & then place into the bowl to marinate (at least 30 minutes).
  • Preheat the oven to 400 degrees.
  • Slice the carrots in half down the middle. Peel the potatoes & slice thinly. Slice the tomatoes crosswise. Remove the seeds from the peppers & slice into large pieces. Set aside --
  • Place the carrots across the bottom of a 9x13 cake pan (fat end, skinny end, fat end, etc). This becomes a sort of bed for the fish, keeping it from sticking to the bottom & assuring that there is always sauce underneath to give it flavor.
  • Arrange the fish on top of the carrots. Dip the sliced potatoes into the charmoula & spread over the fish. Repeat with tomatoes & peppers. Sprinkle the garlic over the vegetables.
  • Mix the remaining charmoula with the tomato paste, lemon juice, oil, & water. Pour this over the vegetables.
  • Cover with aluminum foil & bake 35 minutes. Remove the cover. Raise the oven heat to the highest setting & move the pan to the uppermost shelf of the oven. Bake additional 20 minutes, or until the fish is cooked & a nice crust has formed over the vegetables.
  • Serve warm, not hot.
