MOROCCAN-SPICED CHICKEN SLIDERS
Steps:
- In a small bowl, stir together 2/3 cup yogurt, mustard and zests. Refrigerate until serving., In a large bowl, combine remaining 2 tablespoons yogurt, mint, garlic, ras el hanout, pepper, cumin and salt. Crumble chicken into bowl; mix lightly but thoroughly. Shape into 8 1/2-in.-thick patties; press small indention in middle of each patty. , In a large nonstick skillet, heat oil over medium heat. Add patties; cook until golden brown and no longer pink, 4-5 minutes on each side. Serve patties inside pita pocket with sauce, lettuce and tomato.

MOROCCAN SPICE COOKIES
This is adapted from an old recipe of my mother's, which I believe was from a church cookbook. I was looking for a way to use the wonderful ras-el-hanout spice blend I had on hand and came up with this. I take them to my office holiday cookie swap every year and they're always a hit. Ras-el-hanout can be found at Middle Eastern grocery stories, but I recommend the blend sold by The Spice House (www.thespicehouse.com).

Steps:
- Sift flour, salt, ras-el-hanout and cinnamon into a small bowl.
- In a medium bowl, whisk together butter and sugar.
- Add almond (or vanilla) extract and whisk until fluffy.
- Stir in flour mixture and mold dough into a ball.
- Wrap dough in plastic wrap and refrigerate at least 1 hour.
- Preheat oven to 350°F
- Roll dough into 3/4 inch balls and roll lightly in sugar if desired.
- Place cookies on parchment-lined cookie sheet.
- Flatten cookies with bottom of glass or back of fork and press a whole almond into center of each cookie.
- Bake 12 minutes until edges are lightly golden.

- Heat oven to 350°F. Line cookie sheets with cooking parchment paper. In medium bowl, stir flour, baking soda, 2 1/2 teaspoons of the Moroccan spice blend and the salt until well blended. Set aside.
- In large bowl, beat brown sugar, coconut oil, molasses and egg with electric mixer on medium speed until well blended. Stir in flour mixture.
- In small bowl, mix granulated sugar and remaining 1/2 teaspoon Moroccan spice blend. Shape dough by tablespoonfuls into balls; roll in sugar mixture. Place balls 3 inches apart on cookie sheets.
- Bake 8 to 10 minutes or until set. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.

- Place sweet potatoes in 4-quart saucepan. Add water to cover. Heat to boiling. Reduce heat; boil gently (simmer) about 12 minutes or until tender.
- Drain; return potatoes to pan. Add 1 cup of the Greek yogurt, the butter, 3 tablespoons of the brown sugar, the salt and remaining spices. Mash with potato masher until smooth.
- In small bowl, mix remaining 1/2 cup Greek yogurt and remaining 1 tablespoon brown sugar until smooth.
- Serve potatoes warm, topped with sweetened yogurt and chives.

- Place butter, oil, sugar, vanilla, lemon zest, and eggs in a large bowl. Mix with a whisk until everything is well mixed together and the sugar is dissolved. The mixture should be completely homogenous.
- Add the flour, baking powder, and pinch of salt to the wet ingredients, and mix using a spatula. Mix gently and slowly at first to avoid losing some flour on your work surface. Once the mixture has mostly come together, mix with your hands to bring the dough together to form a ball with the dough. The dough should feel soft but not sticky.

Try not to just eyeball the size, rather, stick to a form of measurement and roll swiftly in your hands to form evenly sized dough balls. Place your cookie balls on your baking sheet.
