CARAMELISED PEACHES WITH FROZEN RASPBERRIES & MASCARPONE



Caramelised peaches with frozen raspberries & mascarpone image

Wow family and friends with this summer dessert made with caramelised peaches, raspberries and mascarpone - it's like a deconstructed peach melba cheesecake

30g caster sugar
1 peach or nectarine, stoned and halved
2 tbsp peach schnapps (optional)
100g mascarpone
20g icing sugar
pinch of lemon thyme leaves
30ml double cream
100g amaretti biscuits , crumbled
100g frozen raspberries (shop-bought, or freeze fresh berries), roughly crushed

Steps:

  • Scatter the sugar over a plate, then dip the cut sides of the peach halves into the sugar. Heat a frying pan over a medium-high heat and cook the sugared peach halves, cut-side down, until caramelised. Transfer the peach halves to a plate and carefully add the schnapps to the pan, if using, or a splash of water. Cook the liquid until reduced and syrupy, then return the peach halves to the pan and baste in the syrup. Remove the pan from the heat and leave to cool.
  • Beat the mascarpone and icing sugar together, then fold in the thyme leaves and double cream.
  • Divide the crumbled biscuits between two plates, then put one peach half on top of each bed of crumbs. Spoon the mascarpone cream onto the plates alongside the peach halves, then scatter over the frozen raspberries. Serve immediately while the raspberries are still frozen.

Sifting through my recipe box files for Zaar World Tour 2005, I was surprised to discover that I've saved three different recipe articles on Moroccan Cuisine over the years. All from my old favourite; the Sainsbury's magazine. This one has been lurking un-tested since July 2001. Time to give it an airing! Cooking time is resting time.

8 large peaches, ripe
3 tablespoons superfine sugar
8 teaspoons rose water
fresh mint leaves, to decorate

Steps:

  • Peel the peaches (dip them in boiling water for a few seconds if the skin is reluctant to come away easily); cut each one in half round the circumference, then twist the halves apart and remove the stones.
  • Slice the peaches into a serving bowl, sprinkle with sugar and rosewater then cover the bowl with cling film and refrigerate for 2 hours to let the flavours develop.
  • Serve decorated with mint leaves.

  • Preheat a 10-inch cast iron skillet over medium heat for 5 minutes. Once warm, add oil, onions, salt and pepper. Saute for 4 minutes until onions are fragrant and translucent. Add the garlic and saute another minute.
  • Add apricots, ras el hanout spice blend, cinnamon and garbanzo beans and stir well to evenly coat the beans. Use your spatula to spread the garbanzo beans into one even layer. Leave them untouched for 5 minutes to sear them. Toss and sear again for another 5 minutes.
  • Add diced tomatoes and their juices and vegetable broth, stir and bring to a boil. Reduce to low heat and allow to simmer for 10 minutes to infuse the chickpeas with flavor and cook down the liquid. You can mash some of the chickpeas with a potato masher or the back of a fork to release some of their starches and create a thicker broth.
  • Serve hot and garnish with cilantro, mint and toasted sliced almonds. You may want to serve over rice or quinoa (it is also delicious served by itself). Store leftovers in an airtight container in your refrigerator for up to five days.
