1 small butternut squash (peeled and cubed (1/2-inch cubes -- approximately 2 cups))
2 large plum tomatoes (seeded and chopped)
1 medium onion (finely chopped)
4 cloves garlic (minced)
1 can (15-ounce) garbanzo beans (chickpeas) (drained and rinsed)
1 cup chicken broth
1/2 cup golden raisins
1/2 cup pitted Kalamata olives (halved)
2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon ground turmeric
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
2 tablespoons olive oil
4 chicken thighs (with the skin on the bone)
1/4 cup chopped cilantro (plus sprigs for garnish)
Lemon wedges

Steps:

  • Combine first 8 ingredients in the bottom of a slow cooker.
  • Combine coriander, cumin, ginger, turmeric, salt, cinnamon and cayenne in a small bowl.
  • Heat olive oil over medium-high heat in a nonstick skillet or saute pan. Sprinkle approximately half the spice mixture over the chicken thighs. Stir the remaining spice mixture into the butternut squash/chickpea combination.
  • Place chicken thighs in hot oil then brown well 6-8 minutes. Turn over and brown the other side in the hot, spicy fat for another 3-4 minutes.
  • Place chicken thighs in the slow cooker and pour any accumulated fat from the skillet into the slow cooker.
  • Cover and cook on High for 4 hours or Low for 8 hours.
  • Stir chopped cilantro into butternut squash/chickpea combination.
  • Place butternut squash/chickpea combination on a platter, top with chicken and sprinkle with cilantro. Garnish with cilantro sprigs and lemon wedges and serve immediately.

Easy Moroccan chicken tagine with butternut squash is a perfect flavoursome family meal taking just one hour to make. It's delicious served over couscous!

1 tbsp olive oil
1 onion (roughly chopped)
250 g butternut squash (roughly chopped)
2 cloves of garlic (crushed)
1 tsp ground cumin
1 tsp paprika
1 cinnamon stick
1 tsp ground ginger
400 g tin chopped tomatoes
1 tbsp tomato puree
250 ml chicken stock
1 tbsp honey
300 g chicken breasts (cut into bite size chunks)
8 dried apricots
Salt and freshly ground pepper
1 tbsp chopped fresh coriander

Steps:

  • Place a large casserole dish or hob proof tagine over a low heat.
  • Heat the olive oil and sauté the onion and butternut squash together for 5 to 6 minutes until soft.
  • Add the garlic and spices, stir and cook for 30 seconds before adding the tomatoes, tomato puree, chicken stock and honey. Bring to the boil, then turn down to simmer for 15 minutes until thickened.
  • Add the chicken and apricots and cook for a further 10 minutes until the chicken is cooked.
  • Season to taste, remove the cinnamon stick, scatter the chopped fresh coriander over. Serve over couscous.

Moroccan Chicken Stew with Butternut Squash image

This is NOT a spicy dish. Though if you'd like more kick, it definitely can be done. Add more cumin, curry, or even some hot sauce. At our home, we like the mix of flavors in this dish. It's great on a winter's night, or a cold wet spring evening. I fix it all year round. It's become a comfort dish. I love the currants when they POP in my mouth, adding that little bit of sweetness.

2 tablespoon(s) olive oil
2 cup(s) chopped onions
2 tablespoon(s) minced garlic
2 teaspoon(s) curry powder
1 teaspoon(s) paprika
1 teaspoon(s) turmeric, ground
1/2 teaspoon(s) all spice
1 teaspoon(s) cumin
1 teaspoon(s) ground ginger
2 pound(s) skinless, boneless chicken breasts or boneless chicken thighs, cut into 1 inch cubes
2 can(s) petite diced tomatoes, with juice
1 cup(s) currants
2 cup(s) chicken stock
1/2 cup(s) white cooking wine
6 cup(s) butternut squash, cut into 1/2 inch cubes and steamed till just tender* (i usually just cut up a medium size butternut.)

Steps:

  • Heat oil in a large dutch oven or 4-6 quart sauce pan, over medium heat. Add onion when oil just starts to smoke. Stirring occasionally. When onion starts to get golden, add minced garlic and cook for a minute.
  • Stir in all the spices with the onion and garlic. Add the chopped chicken, (and possibly a little more oil). Stir, and lightly brown the chicken as it gets coated in the spices, until no more pink is showing. About 5 minutes.
  • Stir in the cans of tomatoes, chicken stock, white wine, currants, and steamed squash cubes. Reduce heat just a little below medium and cover. Let it cook for 45 minutes, or until the squash is easy to break apart. Taste and season with salt and pepper to personal choice.
  • Serve over rice, couscous, or quinoa * If you don't want to steam your squash first, add an additional 30 minutes to the cooking time. I find steaming it first, while I'm chopping the onion, and chicken, just speeds things up.

Moroccan chicken one-pot image

You don't need a clay pot to whip up a fragrant, North Africa tagine - throw it all in a casserole dish and top with feta, mint and lemon.

4 boneless, skinless chicken breasts
3 tbsp olive oil
2 onions, 1 roughly chopped, 1 sliced
100g tomatoes
100g ginger, roughly chopped
3 garlic cloves
1 tsp turmeric
1 tbsp each ground cumin, coriander and cinnamon
1 large butternut squash, deseeded and cut into big chunks
600ml chicken stock
2 tbsp brown sugar
2 tbsp red wine vinegar
100g dried cherries
1 small red onion, finely chopped
zest 1 lemon
handful mint leaves
100g feta cheese, crumbled
couscous and natural yogurt

Steps:

  • Season 4 boneless, skinless chicken breasts. Heat 2 tbsp olive oil in a flameproof dish, then brown the chicken on all sides. Remove the chicken to a plate.
  • Whizz 1 chopped onion, 100g tomatoes, 100g chopped ginger and 3 garlic cloves into a rough paste.
  • Fry 1 sliced onion in 1 tbsp olive oil in the dish until softened, then add 1 tsp turmeric, 1 tbsp cumin, 1 tbsp coriander and 1 tbsp cinnamon and fry for 1 min more until fragrant. Add the paste and fry for another few mins to soften.
  • Return the chicken to the dish with 1 large butternut squash, cut into big chunks, 600ml chicken stock, 2 tbsp brown sugar and 2 tbsp red wine vinegar.
  • Bring to a simmer, then cook for 30 mins until the chicken is cooked through.
  • Lift the chicken out and stir in 100g dried cherries, then continue simmering the sauce to thicken while you shred the chicken into bite-sized chunks. Stir the chicken back into the sauce and season.
  • Mix 1 finely chopped small red onion, the zest of 1 lemon, a handful of mint leaves and 100g crumbled feta cheese. Scatter over the dish, then serve with couscous and natural yogurt.

2 cups spiralized butternut squash
3 tablespoons olive oil, divided
salt and ground black pepper to taste
2 tablespoons butter
1 ½ pounds skinless, boneless chicken breasts, thinly sliced
1 teaspoon Moroccan spice mix (such as McCormick®), or to taste
½ cup orange juice
¼ cup chopped dried apricots
¼ cup dried cranberries
¼ cup chopped dates
¼ cup almond slivers
2 cups cooked rice

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place spiralized butternut squash in a bowl; add 1 tablespoon oil, salt, and pepper. Toss to coat and transfer to a baking sheet.
  • Bake in the preheated oven until just tender, 7 to 10 minutes.
  • Heat butter and remaining 2 tablespoons oil in a large saute pan over medium-high heat. Add chicken and sprinkle both sides with Moroccan spice, salt, and pepper to taste. Cover pan and cook, turning occasionally, until chicken is no longer pink in the center and the juices run clear, 5 to 7 minutes. Remove chicken and set aside.
  • Add orange juice, apricots, cranberries, and dates to the same saute pan over medium heat. Cook and stir until orange juice thickens, 3 to 4 minutes. Add almonds and toss to coat. Remove topping from heat.
  • Plate each portion with butternut squash, cooked rice, chicken, and topping.

7 tablespoons olive oil
1 lemon, zest grated and juiced (about 2 to 3 tablespoons juice) plus 2 lemons, quartered, for garnish
1 teaspoon harissa
4 skinless chicken thighs, (about 2 pounds)
1/2 cup chicken broth
Pinch saffron strands
1 large onion, chopped
3 medium zucchini, cut into 1/2-inch half moons or chunks
3 yellow squash, cut into 1/2-inch half moons or chunks
3 medium plum tomatoes, quartered
1/2 cup dried pitted prunes (about 10)
1/4 cup black olives, pitted
Coarse salt and freshly cracked black pepper
1/4 cup almonds
2 tablespoons chopped fresh flat-leaf parsley
Serving Suggestion: flatbread
Spice Mixture, recipe follows
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/4 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon sweet paprika
1/2 teaspoon ground ginger
1 1/2 teaspoons kosher salt
1/2 teaspoon cracked black pepper

Steps:

  • In a medium glass bowl, combine the spice mixture, 2 tablespoons of the olive oil, the lemon zest, lemon juice, and harissa. Add the chicken thighs and stir to coat. Cover the bowl with plastic wrap and refrigerate at least 1 hour or up to 3 hours. Warm the chicken broth and add the saffron strands, then allow to steep at least 1 hour or up to 3 hours.
  • Preheat the oven to 350 degrees F.
  • Remove the chicken thighs from the marinade. In a Dutch oven over high heat, brown the chicken thighs on both sides in 2 tablespoons olive oil, about 2 to 3 minutes per side. Set chicken aside on a plate. Reduce the heat to medium, add 1 tablespoon olive oil to the pan, and saute the onion until golden, about 5 minutes. Place the chicken thighs on top of the onions and add any accumulated juices from the plate. Arrange the zucchini and yellow squash and tomato quarters on top of the chicken and tuck in the prunes and olives. Season well with salt and pepper. Pour over the chicken broth and saffron. Cover and place on the bottom rack of the oven. Let cook undisturbed 1 1/2 to 2 hours, until the vegetables are tender and the chicken is falling off the bone. Remove from the oven and transfer the contents of the Dutch oven to a large serving dish.
  • Heat 2 tablespoons olive oil in a small saucepan over high heat until hot but not smoking. Add the almonds and fry until the skins begin to crackle, about 2 to 3 minutes. Pour the almonds and hot oil over the vegetables and chicken on the serving dish. Sprinkle with the chopped parsley and serve, spooning over the sauce in the dish and garnishing each plate with the lemon quarters.
  • Combine the spices in a coffee grinder and grind to a medium-fine powder. Add the kosher salt and pepper. Store in an air-tight container, if not using immediately.
