SAUSAGE PECAN MORNING CASSEROLE
This is a great breakfast or brunch casserole to make the day before needed because it sits overnight to soak in all the flavor and then the finishing touches are added just before baking. This recipe is from the Jones Dairy Farm by Philip Jones.

Steps:
- Prepare a 13-by-9-inch glass baking pan with nonstick spray. Cube raisin bread and put in the baking dish.
- Brown sausage; drain and cut into bite-sized pieces. Mix with bread in the baking dish.
- In a large mixing bowl, beat eggs, milk, half-and-half, vanilla, nutmeg and cinnamon until blended. Pour over bread and sausage. Cover with plastic wrap and refrigerate for 8 hours or overnight.
- Heat oven to 375 degrees. Combine brown sugar, butter, syrup and pecans. Spoon by teaspoonfuls over casserole. Bake uncovered for 35 to 40 minutes, or until knife inserted in center comes out clean. Serve warm.

MORNING PECAN CASSEROLE

Steps:
- 1. Brown the sausage patties according to package directions. Cut patties into bite size pieces. Spread bread cubes in bottom of a lightly greased 3 quart rectangular baking dish. Top with sausage pieces.
- 2. In a large bowl, whisk together milk, eggs, vanilla, nutmeg & cinnamon. Pour over bread and sausage, pressing lightly to thoroughly moisten the bread. Cover and chill for 8 hours or overnight.
- 3. For topping, in a small bowl combine pecans, brown sugar, butter, and maple syrup. Drop by teaspoonfuls over top of egg mixture.
- 4. Bake, uncovered, at 350^ for 45 to 50 minutes or until a knife inserted near the center comes out clean. Let stand for 15 minutes before serving.
PECAN PIE FRENCH TOAST CASSEROLE
Pecan pie french toast casserole takes your standard baked french toast up a notch with a crunchy pecan pie filling topping. Your brunch guests will love it!

- Preheat the oven to 350 degrees.
- For the french toast: Grease a 9-by-13-inch baking dish with butter or nonstick spray. Cut the bread into 16 slices, about 1-inch thick.
- In a large bowl, mix together the eggs, milk, cream, sugars, cinnamon and vanilla. Dip slices of bread, four at a time, in the egg mixture. Let each slice rest in the mixture for 1 minute per side (2 minutes total). Once soaked, place the slices in the baking dish, shingling them slightly. Continue until all of the bread has been soaked. Pour any remaining egg mixture over top of the bread and let rest while you make the topping.
- For the topping: Roughly chop the pecans, leaving some whole. Combine the butter, brown sugar, corn syrup and maple syrup. Once the sugar is dissolved, remove from the heat and stir in the pecans. Place spoonfuls of the mixture all over the top of the bread. Cover and bake for 20 minutes. Uncover and continue baking for 25-30 more minutes, until the egg custard is set and the topping is golden brown. Let rest for 10 minutes before serving.
- Cut into squares and serve with a drizzle of syrup from the bottom of the pan.
PRALINE PECAN FRENCH TOAST CASSEROLE

- Mix half-and-half, eggs, vanilla, and 1 tablespoon dark brown sugar together in a large shallow bowl; add French bread. Cover bowl with plastic wrap and refrigerate 8 hours to overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Place butter in a 9x13-inch casserole dish. Place casserole dish in the preheating oven to melt butter, about 5 minutes. Swirl butter over bottom of the dish.
- Spread brown sugar, maple syrup, and pecans over the melted butter. Arrange soaked bread atop pecan mixture.
- Bake in the preheated oven until French toast is cooked through, 30 to 35 minutes. Sprinkle with confectioners' sugar.

- Preheat the oven to 350 degrees F (175 degrees C).
- Pour melted butter into a 9x13-inch heat-resistant glass container (such as Pyrex®). Cut each cinnamon roll into 8 pieces and spread in the dish.
- Beat eggs using a whisk in a large bowl. Beat in heavy cream, cinnamon, and vanilla extract until combined. Pour over cinnamon rolls. Sprinkle with pecans and maple syrup.
- Bake in the preheated oven until golden brown, about 25 minutes. Remove from the oven and let cool 15 minutes.

MORNING CASSEROLE
I like the recipe because it is easy. If you don't want to get up early and have to make breakfast early it is already made the night before. All you have to do is pop it in the oven in the morning and let it cook while you are getting ready for the day. It came from my late Grandma...may God bless her soul. I miss her. This makes a great Christmas morning casserole as you can cook it while opening Santa's gifts. Try it. It is yummy and saves time on Christmas morning--or anytime.

- In a large skillet, brown sausage; crumble and drain.
- Butter a 9 x 13-inch casserole dish.
- Place bread (torn into bite-sized pieces) in bottom of dish.
- Place sausage on the top of bread.
- Sprinkle cheese over top.
- In a large bowl, mix beaten eggs, milk, salt, and dry mustard; blend well.
- Pour over the other ingredients.
