MORAVIAN MOLASSES COOKIES

Thin and crispy Moravian Molasses cookies. Recipe slightly adapted from Martha Stewart's Christmas. Makes 7-8 dozen 2 1/2" cookies. (or more)

1 1/4 cup firmly packed light brown sugar
12 tablespoons (1 1/2 sticks unsalted butter)
2 cups dark molasses
1 Tablespoon baking soda
1/4 cup boiling water
6 2/3 cups sifted all-purpose flour
1 Tablespoon ground cloves
2 Tablespoons ground ginger
1 Tablespoons cinnamon

Steps:

  • In a heavy saucepan, combine the brown sugar, butter and molasses. Heat until brown sugar is dissolved.
  • Dissolve the baking soda in the boiling water and stir into the molasses mixture. The mixture will bubble up. Remove from heat.
  • Sift the flour and spices together and gradually add to the saucepan, stirring with a wooden spoon until well incorporated. Form the dough into a rectangle, wrap and let set overnight in refrigerator.
  • The next day, remove from fridge and allow to soften, until easy to roll, about 15 minutes.
  • Pre-heat oven to 275 degrees F. and line baking sheets with parchment or silpat baking sheets.
  • On a floured board, roll small pieces of dough as thin as possible. (dough should be thin enough to see one's hand through it.) Cut with cookie cutter and set 1" apart on baking sheets.
  • Bake for 10-12 minutes. Allow to cool on baking sheets for 2-3 minutes before transferring to wire racks to finish cooling.

8 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground ginger
2 ¼ cups brown sugar
1 cup lard
1 cup butter
1 teaspoon white vinegar
½ teaspoon baking soda
4 cups molasses

Steps:

  • Sift flour, cinnamon, and ginger together in a large bowl. Add sugar and mix well. Work lard and butter into the flour mixture using a pastry blender.
  • Combine vinegar and baking soda in a small bowl; mix to dissolve. Add mixture to the flour mixture in the bowl. Add molasses and mix thoroughly. Place dough in the refrigerator until chilled, about 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Roll dough out very thin on a floured surface. Cut into shapes using fancy cookie cutters.
  • Bake in the preheated oven until lightly browned, about 10 minutes.

This is a rolled cookie recipe, that you cut with cookie cutters. You will need a stockinette for your rolling pin, and pastry cloth, because these cookies are rolled out very thin. They are crisp and sweet, and I like them so much better than a regualar sugar cookie.

1/2 cup butter, softened
1 cup sugar
1 egg
1/2 teaspoon vanilla extract
2 1/4-2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup buttermilk
superfine sugar

Steps:

  • Cream butter; gradually add sugar, beating well at medium speed with electric mixer. Add egg and vanilla, beat well. Combin 2 1/4 cups flour, soda, and salt; add to creamed mixture alternately with buttermilk, mixing well. Add remaining 1/4 cup flour if dough seems very sticky. Cover and chill 8 hours.
  • Work with one-fourth of dough at a time, and store remainder in fridge. Place stickinette cover on rolling pin; flour well. Roll dough to 1/16 inch thickness on a lightly floured pastry cloth. Cut with a 3 inch roud cutter, and carefully place on lightly greased cookie sheets. Bake at 375F for 6-8 minutes or just until cookies brown around the edges. Cool slightly on cookie sheets and sprinkle with superfine sugar. remove to wire racks, and cool completely. repeat with reaminingdough. Store in airtight containers.

1 tablespoon cinnamon
1 teaspoon ground ginger
2 1/4 cups brown sugar
2 cups butter or 2 cups shortening
1 quart molasses
1 teaspoon vinegar

Steps:

  • Sift flour, soda, salt and spices together.
  • Add sugar and mix well.
  • Work in the butter or shortening with a pastry blender or two knives.
  • Add molasses and vinegar; mix thoroughly.
  • Chill.
  • Roll very thinly on a floured board and cut out with fancy cookie cutters.
  • Bake at 350F for ten minutes.

1 cup dark molasses
1 1/3 cups brown sugar, firmly packed
1/2 cup lard or 1/2 cup shortening
1 1/2 teaspoons baking soda
1 tablespoon orange extract
4 -5 cups flour
1/2 teaspoon cinnamon
1/2 teaspoon mace
2 tablespoons water
1/2 teaspoon ginger
1/2 teaspoon clove

Steps:

  • Combine molasses, sugar, lard and soda dissolved in 2 tablespoons hot water over low heat. Melt and cool.
  • Add orange extract. Gradually add flour sifted with spices.
  • Dough should be firm.
  • Mix and knead thoroughly.
  • Cover well and set in cool place to ripen.
  • Roll small amounts of dough to 1/16" - 1/8" thick on a well floured board.
  • Cut into shapes with floured cutters. Use old-fashioned cookie cutters for added interest.
  • Place on greased tins, smoothing out any air bubbles.
  • Bake at 350° for 12 minutes or until light brown--watch carefully.
