Moose Steak With Sautéed Mushrooms and Red Wine Sauce image

Make this delicious seared and pan-roasted moose sirloin steak recipe with sautéed mushrooms and a satiny red-wine sauce.

4 (7-ounce) moose sirloin steaks
2 tablespoons plus 1 teaspoon olive oil
Few dashes kosher salt
Dash of freshly ground pepper
2 tablespoons shallot (minced)
1 cup red wine
1/2 teaspoon coarsely ground pepper
1 cup beef stock (homemade or packaged, not canned)
6 tablespoons unsalted butter, divided
10 ounces sliced white or brown mushrooms

Steps:

  • Gather the ingredients.
  • Take the steaks out of the refrigerator 1 hour before cooking them, and let them come to room temperature. Pat the steaks dry with paper towels and massage them with 2 tablespoons of olive oil. Season both sides of the steaks with kosher salt and freshly ground pepper.
  • Melt 1 tablespoon of the butter in a small saucepan over medium heat. Add the minced shallot, and sauté for 3 to 4 minutes until just starting to caramelize.
  • Stir in the wine and coarsely ground pepper, and bring to a low boil. Let the wine boil down until it is reduced to 1/2 cup, about 10 minutes.
  • Stir in the beef stock and bring it to a low boil, letting it reduce half again, about 10 more minutes. The sauce should now be shiny with a deep rich brown color. Take the saucepan off the heat. You can prepare the sauce ahead of time and then rewarm it when you're ready to serve the steaks.
  • Preheat the oven to 450 F. Melt another 1 tablespoon of the butter in a heavy-bottomed skillet over medium heat. When the foam subsides, add the sliced mushrooms. Sprinkle them with salt and pepper, and sauté them until golden brown. Use a slotted spoon to transfer the mushrooms to a plate and set aside.
  • Heat 2 tablespoons of the butter and the remaining 1 teaspoon of olive oil in the same skillet over medium-high heat. When the foam subsides, add the moose steaks and brown both sides, 2 minutes per side.
  • Transfer the skillet to the preheated oven, and roast the steaks for 8 to 10 minutes, depending on the thickness of the steaks, to medium-rare. Take care to not overcook, as the meat easily dries out.
  • Take the skillet out of the oven and pour the cooking juices from the steaks into the sauce. Rewarm the sauce over low heat, and whisk in the 2 remaining tablespoons butter, 1/2 tablespoon at a time, until the sauce takes on a satiny sheen.
  • To serve, scatter some mushrooms over each moose steak, and drizzle the sauce on top and around each steak. Enjoy.

1 large moose steak
3 tablespoons bacon drippings
1/2 cup bouillon or 1/2 cup consomme
1 md onion, chopped
1/2 teaspoon garlic powder
3 tablespoons tomato paste
1/2 cup water or 1/2 cup sherry wine
1 cup sliced fresh mushrooms
2 tablespoons unbleached all-purpose flour
1/4 cup cream
1 dash paprika

Steps:

  • Heat the bacon drippings in a large skillet and brown the steak on both sides, thoroughly.
  • Add the broth, onion, garlic, and tomato paste diluted in the water or sherry.
  • Cover the pan and simmer for 1 hour or until the meat is tender.
  • Remove the steak from the pan and keep hot.
  • Add the mushrooms to the pan liquid; cover and simmer for 1 minute.
  • Thicken with flour and water mixture.
  • Dilute with the cream.
  • Heat thoroughly.
  • Taste for seasoning and pour over the steak.
  • Sprinkle with the paprika.

2 tablespoons extra-virgin olive oil, or more to taste
1 ½ cups sliced fresh mushrooms
1 small onion, thinly sliced
1 stick butter
1 tablespoon steak sauce
1 teaspoon Worcestershire sauce
salt and ground black pepper to taste

Steps:

  • Heat a large skillet over medium heat. Pour olive oil into the pan. When hot, add mushrooms and onion into the pan; saute until soft, 5 to 7 minutes. Add butter, steak sauce, and Worcestershire; cook until butter melts, about 2 minutes.
  • Reduce heat to low and simmer, uncovered, until everything is really soft, 15 to 20 minutes. Season with salt and pepper. Serve immediately over any type of steak.

I just made this for the first time last night and what a way to have steak! My DH has diverticulitis and loves steak, not good, but this was a great way for him to get his steak fix with out having an entire steak. Don't be put off by cooking steak in a skillet, it comes out so tender and the sauce compliments it sooo nicely. I used tarragon in place of thyme (all I had) and it came out mouthwatering...literally! I served with Sandi (from CA)'s Herb Infused Red Potatoes and a salad and was surprisingly stuffed! Hope you enjoy!

1/4 teaspoon salt
1/4 teaspoon pepper
1 lb sirloin steak, 3/4 inch thick
1 tablespoon butter or 1 tablespoon margarine
1 medium onion, finely chopped
3 cups sliced mushrooms
1/2 teaspoon dried thyme
2 tablespoons all-purpose flour
1 cup beef stock
1 cup milk
1 tablespoon prepared horseradish or 1 tablespoon Dijon mustard
chopped fresh parsley (to garnish)

Steps:

  • Rub both sides of steak with salt and pepper.
  • Melt 1/2 butter in a large skillet over high heat and brown steak 2 minute per side and transfer to plate.
  • Reduce heat to medium-high and cook onion, mushrooms and thyme in remaining butter until liquid is released and mushrooms start to brown.
  • Add flour and cook for 1 minute.
  • Gradually stir in milk, beef stock and horseradish (or mustard).
  • Reduce heat and simmer, stirring for 5 minutes until thickened.
  • Return steak and any accumulated juices to pan.
  • Simmer steak for 5 minutes or to desired doneness.
  • Let steak rest for 5 minutes.
  • Season sauce with more salt and pepper to taste if desired.
  • Slice steak thinly across the grain and serve with sauce.
  • Sprinkle with parsley and serve.

4 beef tenderloin steaks, 1 in thick
1 cup sliced fresh mushrooms
2 tablespoons sliced green onions

Steps:

  • Heat oil and 2 T butter in large skillet.
  • Add steaks and cook on med-hi for 6-7 minutes per side.

4 boneless beef top loin steaks (8 ounces each)
1/4 cup all-purpose flour
2 tablespoons canola oil
1 pound sliced mushrooms
2 medium onions, sliced
1 teaspoon minced garlic
1/3 cup white wine
1 can (14-1/2 ounces) beef broth
Salt and pepper to taste

Steps:

  • Sprinkle both sides of steaks with flour. In a large skillet, cook steaks in oil to desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).
