A totally unique salsa that's great with tortilla chips, and keeps for several days. This salsa tastes even better the second day!

Ingredients

2 cups shredded Monterey Jack cheese
5 green onions, chopped
1 avocado - peeled, pitted and diced
1 tomato, chopped
¼ cup chopped fresh cilantro
1 (4 ounce) can diced green chiles
1 (6 ounce) can chopped black olives
1 cup zesty Italian dressing
1 teaspoon monosodium glutamate (MSG)

Steps:

In a medium bowl, mix together cheese, onions, avocado, tomato, cilantro, chile peppers, olives, dressing, and monosodium glutamate. Serve.

1 lb monterey jack cheese, shredded
4 ounces sliced black olives
4 ounces diced green chilies
6 tablespoons fresh cilantro, chopped fine
2 small tomatoes, diced
4 green onions, chopped
3/4 cup Italian salad dressing

Steps:

Mix all ingredients except dressing.
Add dressing and toss.
Refrigerate 5-6 hours or overnight.
Serve w/tortilla chips.

2 lbs monterey jack cheese
1/4 cup flour
1 1/3 cups beer
1/2 cup chopped fresh cilantro
1 pickled jalapeno pepper, minced
2 cloves garlic, minced
1/4 teaspoon ground cumin
salt
white pepper

Steps:

Grate the cheese and toss with flour in a large bowl.
In a large saucepan, bring the beer to a boil.
Reduce the heat to low and add cheese gradually, at about 1/2 cupful at a time, constantly stirring.
Stir in the cilantro, jalapeno, garlic, cumin, and salt and pepper to taste.
It's easiest to serve this in a fondue pot, to keep it warm, with wedges of bread, tortilla chips, or raw veggies alongside.
