1 box Betty Crocker™ Super Moist™ yellow cake mix
Water, vegetable oil and eggs called for on cake mix box
Halloween-themed sprinkles (bones, bats, ghosts)
1 container Betty Crocker™ Rich & Creamy vanilla frosting
1 1/2 cups Boo Berry™ cereal

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups.
  • Make cake batter as directed on box. Divide batter evenly among muffin cups, about two-thirds full. Bake 16 to 19 minutes or until cupcakes spring back when touched in center. Cool in pans 10 minutes; transfer to cooling rack to cool completely, about 30 minutes.
  • Using melon baller, scoop out center of each cupcake about 1 inch deep. Fill each with about 2 teaspoons sprinkles.
  • Frost cupcakes; top with about 1 tablespoon cereal per cupcake.

250g self-raising flour
25g cocoa powder
175g light muscovado sugar
85g unsalted butter , melted
5 tbsp vegetable or sunflower oil
150g pot fat-free natural yogurt
1 tsp vanilla extract
3 large eggs
85g unsalted butter , softened
1 tbsp milk
½ tsp vanilla extract
200g icing sugar , sifted
food colourings (optional)
sweets and sprinkles, to decorate

Steps:

  • Heat oven to 190C/170C fan/gas 5 and line a 12-hole muffin tin with deep cake cases. Put all the cake ingredients into a large bowl and beat together with electric hand beaters until smooth. Spoon the mix into the cases, then bake for 20 mins until risen and a skewer inserted into the middle comes out dry. Cool completely on a rack. Can be made up to 3 days ahead and kept in an airtight container, or frozen for up to 1 month.
  • For the frosting, work the butter, milk and vanilla into the icing sugar until creamy and pale. Colour with food colouring, if using, then create your own gruesome monster faces using sweets and sprinkles.

  • Preheat oven 350°. Spray a 11½ x 15½ inch baking pan with non stick cooking spray. Place a piece of parchment paper on top, spray the top of the paper; set aside. To a large mixing bowl add the cake mix, water, oil and eggs. Beat until smooth (about 2 minutes). Pour batter into prepared pan, bake 15 minutes. Cool on wire cooling rack 10 minutes. Place cooling rack on top of the cake and turn over onto cooling rack to cool completely. Use a 1 5/8 inch round cookie cutter to cut at least 45 rounds. Place rounds on a baking sheet lined with parchment paper and freeze (for at least 2 hours). Slice rounds in half lengthwise. Put rounds back in freezer until ready to use.
  • Add the shortening to a large mixing bowl. Beat until shortening is light and fluffy. Add vanilla exctract, almond extract and beat until incorporated into the shortening. Add the sugar 1 cup at a time; beat until smooth between each addition. Add milk only if frosting is too thick. Drizzle in 1 tablespoon at a time until the frosting reaches spreading or piping consistency. Separate frosting into three medium bowls (about 16 ounces each). Add orange to one bowl, purple to another and green to the last. Stir to combine. Add frosting to a piping bag fitted with a #12 tip.
