MONKEY MEAT

Monkey Meat image

This recipe goes real well with my Lumpia recipe. This came from the same party as the Lumpia did. Awesome, tender and very tasty. No monkeys were harmed in any way in the preparation of this recipe. Enjoy!

3 cups 7-up
2 cups soy sauce
2 cups vinegar
2 cups oyster sauce
3 cups brown sugar
1 tablespoon ground black pepper
1 cup garlic, peeled and minced
10 Thai chili peppers (siling labuyo), minced
2 cups banana ketchup

  • In a large bowl, combine 7-up, soy sauce, vinegar, 1 cup of the oyster sauce, brown sugar, garlic, black pepper, and chili peppers.

Categories     Meat

Time 1h30m

Yield 6-12 serving(s)

Number Of Ingredients 15

3 lbs veal
3 lbs lean pork
6 garlic cloves, chopped
3/4 cup water
1/4 cup wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups breadcrumbs
1/2 teaspoon curry powder
salt
pepper
2 eggs
oil
2 medium onions, chopped
1 tablespoon butter, softened

Steps:

  • Cut veal and pork into 1-inch cubes and place cubes in a large bowl.
  • Chop garlic.
  • In a small bowl, mix garlic, water, wine vinegar, salt, and pepper.
  • Pour over meat cubes and stir.
  • Marinate meat cubes for at least 3 hours, or overnight, to allow flavours to blend.
  • Leaving about 2 inches at the bottom of each skewer, arrange pork and veal cubes alternately on wooden skewers.
  • Squeeze cubes together.
  • Continue to add meat until all the meat is used. You should fill 12 skewers.
  • In a shallow bowl, combine breadcrumbs, curry powder, salt, and pepper.
  • In a second shallow bowl, beat eggs.
  • Dip skewered meat cubes in breadcrumbs.
  • Coat with egg, then dip in crumbs again.
  • Gently squeeze sticks with hands to make breadcrumbs flat and sticks more rounded.
  • In a large skillet, heat about 1 inch of cooking oil.
  • Fry skewers of meat cubes, a few at a time, until meat is lightly browned.
  • Combine onions and butter and spread in a large shallow baking dish.
  • Place meat sticks on top of onions.
  • Bake in a 275 degree Fahrenheit oven for about 45 to 60 minutes, or until meat is no longer pink.

My younger brother is a very picky eater. He does love the meat on the skewers at Chinese buffets. My mom created a much healthier version for him at home. It was also great when my father was on his low carb diet.

MONKEY MEAT

Monkey Meat image

A wonderful recipe for shredded beef with a Mexican flair. Remove seeds from chiles and peppers if less heat is desired. Serve this meat with tortillas, guacamole, sour cream, salsa, etc. If fresh tomatoes are not in season, a 14.5 ounce can of diced tomatoes may be substituted.

Categories     World Cuisine Recipes     Latin American     Mexican

Time 4h

Yield 12

Number Of Ingredients 17

4 pounds tri tip roast
3 teaspoons salt, divided
¾ teaspoon ground black pepper, divided
3 tablespoons chili powder, divided
3 tablespoons ground cumin, divided
⅓ cup olive oil, divided
2 large onions, chopped
4 cloves garlic, chopped
2 Anaheim chile peppers, chopped
1 poblano chile pepper, chopped
2 jalapeno chile peppers, chopped
1 green bell pepper, seeded and chopped
1 carrot, chopped
2 stalks celery, chopped
4 roma (plum) tomatoes, chopped
1 whole dried red chile pepper, seeded and chopped
1 (14 ounce) can beef broth

Steps:

  • Trim the beef roast of excess fat and tissue, and cut into 4 or 5 large chunks. In a cup or small bowl, mix together 2 teaspoons of salt, 1/2 teaspoon of pepper, 1 tablespoon of chili powder, and 1 tablespoon of ground cumin. Rub this mixture into the meat, and let stand at room temperature for 15 minutes.
  • Heat 3 tablespoon of olive oil in a large deep skillet or Dutch oven over medium-high heat. Sear the meat on all sides. Remove meat from the pan, and pour in the remaining olive oil. Reduce heat to medium, and add onions, garlic, Anaheim peppers, poblano peppers, jalapeno peppers, green pepper, carrot and celery. Cook, stirring frequently, for about 5 minutes to release the flavors.
  • Add roma tomatoes to the pan, and season with remaining chili powder, cumin, salt and pepper, as well as the dried chile pepper. Bring to a simmer and cook for 5 minutes.
  • Return the meat to the pan, and stir in the beef broth. Bring to a boil, then simmer over low heat for 3 to 3 1/2 hours, until meat is very tender. Taste and adjust seasonings if necessary. Remove meat from the pot, shred, and return to the pot. Reheat if necessary before serving.

MONKEY MEAT KABOBS

Monkey Meat Kabobs image

I got this recipe from a friend years ago. In the Philippines they actually used monkey meat, but here in the USA we use pork steak. The number of bamboo skewers used depends on the amount of meat you prefer on each skewer. I guessed for this recipe.

Provided by Color Guard Mom

Categories     Pork

Time 1h

Yield 12 serving(s)

Number Of Ingredients 7

2 lbs pork steaks
1/2 cup teriyaki marinade
1/4 cup chicken broth
1 tablespoon garlic, minced
1/2 tablespoon ginger, crushed
pepper, to taste
12 bamboo skewers (soaked in water)

Steps:

  • Cut up pork steaks into bite size pieces.
  • Mix the teriyaki, chicken broth, garlic, ginger and pepper together.
  • Place the meat in a container and pour the marinade over it.
  • Place an air tight lid on the container and marinate overnight.
  • Place on presoaked bamboo skewers.
  • Grill on a foil covered grill that has been sprayed with cooking spray.
  • Grill until dark brown; 20 minutes is a guess; it really depends on the cut of the meat and the temperature of your grill.
  • Great served with rice.
