SENSATIONAL CHICKEN NOODLE SOUP

Number Of Ingredients 6

4 cup Swanson® Chicken Broth (Regular, Natural Goodness™ or Certified Organic)
Generous dash ground black pepper
1 medium carrot, sliced (about 1/2 cup)
1 stalk celery, sliced (about 1/2 cup)
1/2 cup uncooked extra wide egg noodles
1 cup shredded cooked chicken or turkey

Steps:

  • Heat the broth, black pepper, carrot and celery in a 2-quart saucepan over medium-high heat to a boil.
  • Stir the noodles and chicken into the saucepan. Reduce the heat to medium. Cook for 10 minutes or until the noodles are tender.
  • Asian Soup: Add 2 green onions cut into 1/2-inch pieces, 1 clove garlic, minced, 1 teaspoon ground ginger and 2 teaspoons soy sauce. Substitute uncooked curly Asian noodles for egg noodles.
  • Mexican Soup: Add 1/2 cup Pace Chunky Salsa, 1 clove garlic, minced, 1 cup rinsed and drained black beans and 1/2 teaspoon chili powder. Substitute 2 corn tortillas (4 or 6-inch) cut into thin strips for the noodles, adding them just before serving.
  • Italian Tortellini Soup: Add 1 can (about 14 1/2 ounces) diced tomatoes, drained, 1 clove garlic, minced, 1 teaspoon dried Italian seasoning, crushed and 1 cup spinach leaves. Substitute 1/2 cup frozen cheese tortellini for egg noodles. Serve with grated Parmesan cheese.

3 tablespoons extra-virgin olive oil
1 large chopped onion
3 chopped fresh garlic cloves
3 medium carrots, but diagonally into 1/2 -inch-thick slices
3 center cut celery, halved lengthwise, and cut into 1/2-inch-thick slices
3 fresh thyme sprigs
2 bay leaves
3 quarts fresh chicken stock
6 ounces cooked penne pasta
2 cups shredded cooked chicken
Kosher salt and freshly ground black pepper to taste

1 handful fresh flat-leaf parsley, finely chopped

Steps:

  • Place the pot over medium and add extra virgin olive oil. Add the onion, garlic, carrots, celery, thyme and bay leaf. Cook and stir for about 6 minutes, until the vegetables are softened but not browned. Pour in the fresh chicken stock and bring the liquid to a boil. Add the pasta and simmer for 1 minute until tender. Fold the chicken, and continue to simmer for another couple of minutes to heat through; season with salt and pepper. Sprinkle with chopped parsley before serving.

4 cups cooked medium size egg noodles
3 eggs, lightly beaten
1 teaspoon vanilla
1/4 cup dark brown sugar
1/4 cup sour cream
1 cup cottage cheese, smoothed in a food processor
2 tablespoons unsalted butter, melted
1 cup (1/4 pound) toasted pecans, chopped
1 cup golden raisins

Steps:

  • Preheat oven to 350 degrees. Cook noodles for 5 minutes, then drain, rinse under cold water and drain again. Lightly butter a 9-inch square pan. In a bowl whisk the eggs and vanilla together. Add the sugar, sour cream, cottage cheese, whisk in melted butter and raisins. Fold in cooked noodles and turn into prepared baking pan
  • Bake for about 30 minutes or until eggs have set. Let stand for 5 minutes before serving. Dust with cinnamon if you wish.
