CREAMY PASTA PUTTANESCA WITH BACON AND SHRIMP
Steps:
- Bring a large pot of salted water to a boil. Drop the pasta into the water and cook for 8 to 9 minutes or as directed by the package. Once cooked, drain the pasta and place in a large baking dish or serving platter and drizzle with a little olive oil.
- Heat the 2 tablespoons olive oil in a large saute pan over medium-high heat. Add the chopped bacon and cook, stirring occasionally, just until fully crisp. Remove the bacon with a slotted spoon and let drain on a paper towel-lined plate or tray. Leave the bacon grease in the pan.
- Heat the pan with the bacon grease over medium-high heat. Add the shrimp, season with salt and black pepper and cook just until pink, 1 to 2 minutes per side. Remove the shrimp from the pan and let rest with the bacon.
- Add the garlic, anchovy, olives, oregano and red pepper flakes to the pan and cook, stirring, just until the garlic begins to toast, 3 to 4 minutes. Add the red wine and cook, scraping up any browned bits from the bottom of the pan, until the liquid reduces by half, 1 to 2 minutes.
- Add the crushed tomatoes to the pan, reduce the heat to a simmer and cook the sauce for about 5 minutes, stirring occasionally.
- Add the cream, bacon and shrimp to the sauce and simmer for 1 minute to bring everything together. Taste the sauce and season with salt and black pepper.
- Pour the sauce over the pasta to completely cover it. Or you can toss the pasta into the sauce if your pan is large enough.
- To finish the dish, grate the cheese over the top and garnish with the basil and a drizzle of olive oil.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Heat the oil in a skillet over medium heat. Stir in onion and garlic, and cook until onion is tender. Mix in wine and tomatoes, and continue cooking 10 minutes, stirring occasionally.
- Mix shrimp into the skillet, and cook 5 minutes, or until opaque. Toss with pasta and top with Parmesan cheese to serve.

- Cook penne paste until al dente. Drain and let cool.
- In a saute pan heat olive oil and add bacon. Cook until bacon is crisp. Remove bacon and set aside, but leave grease in saute pan.
- Add onions and garlic to bacon grease and cook until golden.
- Remove onions and garlic, set aside with bacon.
- Add shrimp and cook until done.
- Turn heat to low, return bacon, onion, and garlic to pan.
- Add paprika, red chili pepper flakes, and penne pasta.
- Add cream and parmesan cheese.
- Add salt and pepper to taste.

- Bring a large pot of salted water to a boil. Add the lobster tails and cook until they begin to curl, 5 to 7 minutes. Using tongs, remove the lobster tails and set aside until cool enough to handle. Add the pasta to the boiling water and cook, stirring occasionally, until tender but still firm to the bite, 10 to 12 minutes. Drain and place in a large serving bowl.
- Using kitchen scissors or a heavy knife, cut along the underside of the lobster tails and remove the meat. Chop the meat into 3/4-inch chunks. Set aside.
- In a large nonstick skillet, cook the bacon over medium-high heat until brown and crispy, about 10 minutes. Remove the bacon and drain on paper towels.
- In the same skillet, add the garlic and cook until aromatic, about 30 seconds. Add the tomatoes (and juices), clam juice, cream, 1/2 cup basil, 2 teaspoons salt and 1/2 teaspoon pepper. Bring to a boil and scrape up the browned bits from the bottom of the pan with a wooden spoon. Reduce the heat to medium and simmer until slightly thickened, about 5 minutes.
- Add the shrimp and cook, stirring occasionally, until just cooked through, about 3 minutes. Add the lobster and bacon. Simmer until warmed through, 1 to 2 minutes.
- Pour the tomato mixture over the cooked pasta and toss until coated. Garnish with the remaining 1/2 cup basil and season with salt and pepper.

- Place the chopped bacon and onion in a skillet over medium heat, and cook and stir until the bacon is crisp and the onion is beginning to brown, about 10 minutes. Add garlic and crushed red pepper flakes and cook another 2 - 3 minutes, being careful not to burn the garlic.
- While the bacon and onion are cooking, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through, but is still firm to the bite, about 11 minutes. Drain pasta, transfer to a large serving bowl, and stir in the olive oil to coat the pasta.
- Drain the bacon grease from the skillet, leaving a couple of tablespoons or to taste. Stir the cooked bacon mixture into the pasta, and sprinkle the Parmesan cheese over the pasta. Stir to mix in the cheese, and serve.

- In a large skillet, on high heat, heat 2 tablespoons of olive oil until hot. Add shrimp and cook on one side on high heat for 1 minute. While it cooks, sprinkle the uncooked side of shrimp with salt, paprika and Italian seasoning. Flip the shrimp over, and cook on the other side for 1 minute on high heat. Reduce heat to medium, flip shrimp over again a couple of times, making sure all shrimp is covered in spices and until the shrimp turns pink in color, for a couple of minutes. Remove shrimp from the pan and keep shrimp warm.
- To the same pan (but without shrimp), add chopped tomatoes, garlic, half the bacon (already cooked and drained of fat), crushed red pepper flakes. Mix everything, and cook for about 1 minute, stirring everything on medium heat.
- Add half and half and bring to boil. Add another 1/4 teaspoon salt, stir. Only after half and half starts boiling, add Parmesan cheese (freshly shredded) and start stirring. Once the cheese start melting, immediately reduce heat to medium and stir, while simmering, until the cheese completely melts and the sauce becomes creamy, which should take 1 minute (at most 2 minutes). Then, reduce heat to low, add fresh spinach, cover with the lid and let the sauce sit, simmering on very low heat, for about 1 minute. Remove the lid, stir the sauce, the spinach should start to wilt, keep stirring on low heat, until the spinach wilts, for another minute.
