MOM'S ZUCCHINI BREAD
Really, really good and moist- my kids eat it as quickly as I can make it. Bread will freeze well, and keep in refrigerator for weeks.

Steps:
- Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
- Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
- Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
- Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

I don't remember where this recipe came from, but we've enjoyed it for years. I like to let the cheese get golden brown on top. Can be used as a side dish or appetizer. (cooking time may vary).

- Preheat oven broiler or toaster oven broiler.
- Arrange zucchini slices on cookie sheet.
- Spread each with a little soft margarine.
- Sprinkle with garlic powder, to taste.
- Top with shredded or sliced mozzarella.
- Place in broiler and broil until cheese is melted and bubbly.

- In a small bowl, combine bread crumbs, parmesan cheese and pepper. In a separate bowl, whisk together eggs.
- Dip zucchini slices into the eggs, then coat in the breadcrumb mixture.
- Spray air fryer basket with non-stick cooking spray. Add the zucchini slices in a single layer in the bottom of the air fryer basket.
- Cook for 5 minutes, flip zucchini slices over, spray the zucchini with non-stick cooking spray and continue cooking for 5 minutes or until done.
