MOM'S ALABAMA WILTED LETTUCE
This is the way my mom always made wilted lettuce- she learned it from her mother's mother, Grandma Gallimore, who lived in Mobile, Alabama in 1924.

Steps:
- 1. Put lettuce, onion, eggs,zucchini and tomato in a large salad bowl. Set aside. Cook bacon in a heavy skillet over medium heat, turning until crisp, about 5 minutes. Place on newspaper(paper towels) to drain and pour off all but 2 Tablespoons of grease from the skillet. Add vinegar, and sugar to grease and cook over low flame, stirring until sugar dissolves.Stir in cream, salt, pepper and paprika, then boil until thickened slightly, about 2 minutes.
- 2. Pour hot mixture over salad and toss to coat well. Season with salt and pepper to taste, if needed, Crumble bacon over top. This is- To die for!

- Cut lettuce.
- add sliced onion and sugar, toss.
- Fry bacon till crisp- remove from pan.
- Drain and crumble bacon.
- Add vinegar and water to bacon grease- let come to a boil.
- Pour over lettuce onion and bacon.
- Mix well.
- Serve at once.

- In a small bowl, beat the eggs, milk, vinegar, salt and pepper until smooth; set aside. In a large skillet, cook bacon over medium heat until crisp. Remove bacon to paper towels to drain, reserving drippings., Whisk egg mixture into drippings. Cook and stir over medium heat until mixture reaches 160° or is thick enough to coat the back of a metal spoon. , In a large salad bowl, combine the lettuce, onion and bacon. Pour dressing over salad; toss to coat. Serve immediately.

This was my ma's recipe passed on to me--don't know any other way to make it and I'm 58 years old. This is really an old-fashioned dish.

- Clean and cut the onions into the lettuce.
- Sprinkle with salt and pepper to taste.
- Dressing: Heat dressing ingredients to boiling; pour over lettuce while boiling hot.

- Cut up lettuce and onion tops, place in a large bowl.
- Place bacon on top of lettuce.
- Have all the rest of the ingredients ready, because this goes quickly!
- Pour out all but 3T. of the bacon grease.
- Set the skillet on medium heat and add the cream, salt and sugar.
- From this point you will be whisking constantly.
- Heat the cream until it begins to steam - don't let it bubble.
- Add the vinegar slowly, whisking constantly until the mixture begins to steam.
- Pour the mixture over the lettuce, toss and serve immediatly.
- Make sure you have some good bread to soak up the leftover juices - trust me, folks will fight for the last drops!
- Note: All the whisking is to keep the dressing from "breaking", or separating. If it does, no problem. It's not as pretty, but it still tastes fabulous.

- Toss lettuce and onions slightly,just enough to combine ingredients and set aside for now.
- Mix sugar and vinegar.
- Pour off half the bacon grease,to the remainder,add the sugar and vinegar.
- Cook until thickened.
- When mixture has thickened slightly pour hot dressing over lettuce and add crumbled bacon,serve immediately.
