ULTIMATE CHEESY POTATO CASSEROLE RECIPE
A family recipe for Cheesy Potato Casserole. This is a hash brown potato casserole full of cheese, green onions, and lots of seasonings. It is a super easy potato casserole to make. Steps:
- Preheat the oven to 350.
- In a large bowl mix together all the ingredients (EXCEPT FOR THE POTATO CHIPS), until the ingredients are well combined.
- Pour into a 9x13 baking pan.
- Top with the crushed potato chips and cover with foil.
- Bake for 30 minutes, remove the foil and bake for an additional 20 minutes, until the chips are lightly browned.
- Let the casserole rest for a few minutes before serving.

MOM'S POTATO PUFF CASSEROLE
My mom used to make this often. It's NOT tater tots! Great warming winter meal. NOTE: Don't skip the dill weed. It makes the whole meal.

Steps:
- Prepare Hungry Jack mashed potatoes. Substitute cottage cheese for milk.
- Stir in dill. Care should be taken not to get potatoes pasty.
- Brown ground beef in a large skillet; drain fat.
- Add onion five minutes before end of browning.
- Stir in garlic powder and salt.
- Add mixed vegetables and 2 cans of soup - DO NOT ADD WATER.
- Pour hamburger mix into 9x13 pan and spread evenly.
- Spoon potato mix on top of hamburger mix to make individual clumps for each serving.
- Bake at 350° for 45 minutes or until potatoes start to brown.
MOM'S SWEET POTATO CASSEROLE
This is a wonderful holiday side dish that we always have in our family. It is like mashed sweet potatoes with a sweet and crunchy topping. If you like sweet potatoes, it will be a must at your house too! And remember sweet potatoes are so good for you too!

- Cook 3-4 fresh sweet potatoes in plain water (chop potatoes into even pieces for faster cooking) when tender, drain and beat with mixer.
- Mix together first 8 ingredients and pour into greased casserole dish.
- Topping- Mix together remaining 4 ingredients, butter, flour, brown sugar and walnuts.And sprinkle on top of sweet potatoes.

- PREHEAT oven to 325°F Place sweet potatoes on microwaveable plate. Microwave on HIGH 8 minute Turn potatoes over; continue microwaving 9 to 10 minute or until very tender. Let stand 5 minute Cut potatoes in half lengthwise. Scoop pulp into large bowl; discard skins.
- ADD cream cheese, brown sugar, cinnamon and nutmeg to potato pulp. Mash with potato masher to desired consistency. Spoon into 9-inch square glass baking dish.
- MIX cereal and butter in medium bowl until well blended. Stir in marshmallows. Sprinkle evenly over potato mixture.
- BAKE 30 to 35 minute or until topping is golden brown and mixture is heated through.
- **Note**.
- Mashed potato mixture can be prepared ahead of time. Cover and refrigerate up to 2 days. When ready to serve, uncover, sprinkle with streusel topping and bake as directed.
MOM'S SWEET POTATO CASSEROLE

- Preheat oven to 350°.
- Place a pot of water on the stove and bring the water to a boil.
- Peel and chop the potatoes into 1 inch cubes. Once the water is boiling put your potatoes in for 10 to 15 minutes or until the potatoes are soft.
- Place potatoes in a large bowl; add sugar, sweet and condensed milk, 3 tablespoons of melted butter, 1/2 teaspoon salt, and vanilla.
- Beat with a mixer at medium speed until smooth. Add eggs; beat well.
- Pour potato mixture into a 13 x 9 inch baking pan coated with cooking spray.
- To prepare topping, combine flour, brown sugar, and 1/8 teaspoon salt; stir with a whisk. Stir in 2 tablespoons melted butter.
- Sprinkle flour mixture evenly over potato mixture; arrange pecans evenly over top.
- Bake at 350° for 25 minutes or just until golden.
- Preheat broiler (remove casserole from oven).
- Broil casserole 45 seconds or until topping is bubbly. Let stand a little bit before serving.
MOM'S SALMON AND POTATO BAKE
During World War II when meat was scarce, my mother used to feed her large family casseroles using whatever meat or fish was available. My favorite is a type of baked casserole with salmon and potato which not only tasted great, but one which satisfied her family of seven kids.

- Preheat the oven to 350 degrees F (175 degrees C). Butter a casserole dish.

- Put the cabbage in a medium pot and cover with water.
- Salt and pepper to taste.
- Cook for approximately 10 to 15 minutes once boiling. Drain.
- Spray a 3 quart casserole dish with non stick cooking spray.
- Layer 1/2 the cabbage, the onion, and sprinkle with half the bacon.
- Add salt and pepper to taste.
