1 lemon jelly, for diabetics
1 (8 ounce) can evaporated low-fat milk
1 (15 ounce) can crushed pineapple in juice
2 kiwi fruits
chocolate, grated

Steps:

  • Dissolve jelly in HALF required boiling water, leave to cool.
  • Add the can of pineapple and all the juice.
  • Whip up the milk, as much as you can (best if it has been in the fridge first).
  • Fold into the jelly until the milk changes colour.
  • Put into the fridge to set.
  • It's almost like a soufflé, light and tangy. Decorate with fresh fruit or grate some diabetic chocolate over the top.

1 (8 ounce) can pineapple in juice, drained and liquid reserved
1 (3 ounce) package sugar-free orange gelatin
1 cup sugar-free ginger ale
1 cup plain nonfat yogurt
3/4 teaspoon grated fresh ginger
1/2 cup whipping cream
1/2 teaspoon sugar substitute
1/4 teaspoon vanilla

Steps:

  • Combine reserved pineapple juice with enough water to equal 1/2 cup liquid. Pour into a small saucepan and bring to a boil over high heat.
  • Place gelatin in a medium-sized bow.; add pineapple juice mixture. Stir until gelatin is dissolved. Add ginger ale and half of the crushed pineapple, stir until well blended. Add yogurt, whisk until well blended. Pour into 5 individual ramekins. Cover each with plastic wrap; refrigerate until firm.
  • Meanwhile, combine remaining half of pineapple with ginger in a small bowl. Cover with plastic wrap and refrigerate.
  • Just before serving, beat cream in a small deep bowl on high speed of electric mixer until soft peaks form. Add sugar substitute and vanilla; beat until still peaks form.
  • To serve, top each bavarians with 1 tablespoon whipped topping and 1 tablespoon pineapple mixture.

1 (14 ounce) can raspberries in juice
1 (1/2 ounce) package sugar-free raspberry gelatin
1 3/4 cups low-fat evaporated milk, chilled
fresh raspberries, to decorate
mint sprig, to decorate

Steps:

  • Drain raspberries over a bowl, reserving juice.
  • Add enough water to juice to make 1-1/4 cups.
  • In a saucepan over low heat, stir juice mixture and gelatin.
  • When gelatin dissolves, remove from heat and set aside to cool.
  • In a large bowl, beat evaporated milk until thick.
  • Add raspberries and cooled gelatin mixture and mix well.
  • Pour mixture into a glass serving bowl. Cover and refrigerate until set.
  • Turn out mold onto a serving plate. Decorate with raspberries and mint sprigs before serving.

PEACH BAVARIAN

1 (15 1/4 ounce) can sliced peach halves in syrup
2 (3 ounce) packages peach Jell-O or 2 (3 ounce) packages apricot gelatin
1/2 cup sugar
2 cups boiling water
1 teaspoon almond extract
1 (8 ounce) carton Cool Whip (I used fat free)
additional peach (to garnish) (optional)

Steps:

  • Drain peaches, reserving 2/3 C syrup.
  • Chop peaches into small pieces and set aside.
  • In a pot on the stove, dissolve gelatin and sugar in boiling water.
  • Stir in reserved syrup.
  • Chill until slightly thickened.
  • Stir extract into cool whip and gently fold into gelatin mixture.
  • Fold in peaches.
  • Pour into a 6 C mold coated with pam (I use mayo to coat my dish) Chill until set.
  • Unmold and garnish with additional peaches if desired.
  • I make this in a pretty glass bowl and that works also.

  • Add drained pineapple and nuts.
  • Stir and chill.
