MOM'S RAISIN OATMEAL COOKIES

Soft cake-like cookie studded with plump raisins and sweetened with brown sugar - a childhood favorite.

Number Of Ingredients 11

1 ½ cups all-purpose flour
½ teaspoon baking soda
1 teaspoon salt
¼ teaspoon ground cinnamon
1 ½ cups quick cooking oats
1 egg
1 cup packed brown sugar
½ cup vegetable oil
½ cup milk
1 teaspoon vanilla extract
1 cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Sift the flour together with the soda, salt, and cinnamon. Stir in the oats. Combine the other ingredients and add them to the flour mixture, stirring thoroughly.
  • Drop by tablespoonful onto ungreased cookie sheet. Bake 15 to 18 minutes. Remove to wire rack to cool.

This recipe was given to me by a friend who knows Oatmeal Cookies are my favorite. I have not tried them yet but plan to this weekend. They sound delish to me. They make a lot but I am sure the recipe could be halved.

8 c quick cooking oatmeal
4 c brown sugar
2 c vegetable oil
4 eggs, beaten
2 tsp almond extract
2 tsp salt

Steps:

  • 1. Mix oatmeal with brown sugar and oil. Let stand overnight. Next morning, stir in beaten eggs, flavoring and salt. Drop from teaspoonful onto greased cookie sheet. Bake at 325 degrees for 15 minutes or until lightly browned. ENJOY!
  • 2. Craisins, raisins, nuts, coconut, etc. can be added to these cookies.

These are the oatmeal cookies I grew up with. I know there are tons of recipes for oatmeal cookies on here already, but I didn't find any exactly like this one, or even quite close enough to call the same. The yield is an estimate, because I don't remember how many this actually makes. Enjoy!

1 cup shortening
1 1/2 cups brown sugar
2 eggs
1/2 cup buttermilk (or sour milk)
1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon baking powder
3 cups oats
1 cup raisins

Steps:

  • Cream shortening, sugar, and eggs til light and fluffy. Stir in buttermilk.
  • Stir dry ingredients into creamed mixture. Stir in oats and raisins.
  • Drop from tablespoon 2" apart on lightly greased cookie sheet.
  • Bake at 400* about 8 minutes. Cool slightly; remove from pan.

My mom and grandma made these cookies- I can remember the spicy fragrance of these cookies baking when I would come home from school or in from skating nice and hot with a glass of milk.

NIGHT BEFORE:
4 c quick cooking oatmeal, uncooked
2 c brown sugar,packed
1 c vegetable oil
1/2 c raisins
NEXT MORNING:
2 large eggs
1 tsp almond extract
1 tsp salt
1 tsp cinnamon
1/8 tsp cloves
1 pinch nutmeg
1 c chopped walnuts

Steps:

  • 1. Night Before: Combine ingredients in a glass bowl in the evening. Cover overnight on the cupboard.
  • 2. Next Morning: Combine all ingredients with the oatmeal mixture. Drop from a teaspoon or Tablespoon on a lightly greased cookie sheet. Sprinkle tops with cinnamon/sugar, if desired. Bake at 325^ for 15 minutes. Remove from cookie sheet, and cool on wire rack.
  • 3. Note: Chips, crasins, coconut or chopped dried fruits may be added, if desired.

From an old Tupperware cookbook.This is my family's favorite oatmeal cookie recipe. I have been making this since I was little. I give a favorite uncle this every year for Christmas. He hides them so no one else can have any. You can either sift the flour or not. If you sift it the cookies spread more. My family prefers unsifted, the cookies stay more compact & moist. I changed it a little bit, original recipe made a base cookie mix for 12 dozen cookies.

2 cups sifted flour
1 teaspoon baking soda
1 teaspoon salt
1 1/4 cups granulated sugar
1/2 cup brown sugar
2 cups quick-cooking rolled oats
1 cup shortening
3 eggs
1/2 cup milk, little more than 1/2 cup
3 teaspoons vanilla

Steps:

  • Sift flour, soda, salt & sugar together.
  • Add brown sugar, oats and shortening.
  • Mix together with pastry blender until in fine crumbs.
  • Add eggs, milk and vanilla.
  • Use your imagination. I add 1 cup chopped walnuts, 3/4 cup coconut and sometimes raisins for my hubby. You could add M & M's, chocolate chips or whatever.
  • Drop unto greased cookie sheet. Bake at 375 degrees for 15-18 minutes.
