MOM'S MOLDED SALAD SUPREME
Mom's Molded Salad Supreme family recipe is easy to make ahead. The texture and taste of this light yet flavorful sugar free jello salad is wonderful. Diabetic friendly!

Steps:
- Dissolve gelatin in boiling water*Let it cool a bit, and add the mayonnaise.*Let it cool more, but not set. --This allows the mayonnaise to blend in evenly.
- When the gelatin is cool, add the remaining ingredients.*Partially freeze the pineapple and pecans before adding to the gelatin to help keep the ingredients in suspension. (If they are added while everything is warm, the pineapple and pecans settle a bit.)
- Pour into a mold or into a pretty bowl, and chill until set.Unmold onto a serving plate just prior to serving.
- Serve with extra pecan pieces, if desired.
- ** For a more "festive look" if molding the salad, add a few maraschino cherries to the bottom of the mold and freeze: then add the thick salad contents and when you unmold, the cherries provide a nice color contrast.

- Combine the romaine, tomatoes, cucumber and onions in a large bowl.
- Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
- Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.
MOM'S ' MOLDED' (JELLO) SALAD
I hate the term 'molded salad' - it sounds like something green & fuzzy. This is my mother's Jello salad recipe. Most people I know will turn up their nose when I say Jello salad but there are never leftovers. Hmmmm...... I'm not positive on the exact ounces - small boxs of jello, big can of cranberry & small can of pineapple. This multiplies easily & can be made several days ahead & kept refrigerated.

- Drain fruit, mix together and set aside.
- Whip 1/2 pint cream, add 1/2 cup sugar and set aside.
- Beat the cream cheese and add mayonnaise and set aside.
- Dissolve gelatine in lemon juice over hot water, then add to mayonnaise and cheese mixture.
- Add fruit, then fold in whipped cream, marshmallows and nuts.
- Pour into mold or 9X13, and chill until set.

- Dissolve lemon gelatin in boiling water in a bowl; stir in cold water. Chill in refrigerator until partially thickened, 30 to 40 minutes.
- Chop cranberries in a food processor and mix sugar into cranberries, pulsing once or twice to combine. Let cranberry mixture stand a few minutes to let sugar dissolve. Stir cranberry mixture, pineapple, celery, and walnuts into gelatin. Pour into a gelatin mold or serving dish. Refrigerate until fully set, about 4 hours.

- Dissolve gelatin completely in 2 cups hot water and pour into desired mold. Mix crushed pineapple, bananas, and 1 1/2 cup cold water into gelatin mixture; top with miniature marshmallows. Chill until firm.
- Whisk reserved pineapple juice, sugar, flour, and egg in a saucepan over low heat and cook, whisking constantly, until mixture almost comes to a simmer and becomes thick, about 5 minutes. Mix cream cheese into sauce, transfer to a large bowl, and cool to room temperature. Stir whipped topping into cream cheese mixture. Spread over gelatin. Chill thoroughly before serving.

MOM'S EASY POTATO SALAD RECIPE
Everyone loves a good potato salad on a hot summer day! If you haven't made it for awhile, this is a new recipe you NEED to try!

- Bring two pots of water to a boil. In one pot boil your potatoes for about 30-40 minutes, or until fork can easily pierce through the potato, but not too soft that they just fall apart. Drain water off of potatoes and let them cool (I usually put the potatoes in the fridge to cool).
- Once your potatoes are cool, peel and dice. Place diced potatoes, diced celery, and pickles in a large bowl. Dice the eggs and add it to the bowl (sometimes I will set aside 1 egg and slice it to put on top of the potato salad for presentation - totally not necessary, it's just what my mom always did).
- In a separate small bowl, mix your mayonnaise, mustard, sugar, vinegar all together. Pour your sauce over the potato mixture in the big bowl and gently fold together. Add salt and pepper to taste. If it is dry, you can add more mayo to get it the texture you like. Top with Salad Supreme seasoning. As mentioned before, you can also save 1 hard boiled egg to slice and add it to the top.
