APPLESAUCE COOKIES
This recipe makes 18-20 cookies. These are fluffy, soft cookies that disappear quickly from the cookie jar!

Steps:
- Preheat oven to 375F.
- In a medium bowl, stir together flour, baking powder, salt and cinnamon until mixed well. Put this bowl to the side.
- In a large bowl, beat applesauce, brown sugar and butter with an electric mixer on medium speed until mixed well (about 2 minutes).
- Beat in vanilla and egg.
- Gradually add flour mixture to applesauce mixture while beating on low speed until blended well.
- Place cookies (2-tablespoon sized) onto silicone mat lined baking sheet about 2 inches apart from each other.
- Bake for 10 minutes. Let cool for 5 minutes on cookie sheet before removing.
- Cool on cookie racks.

- In a large bowl, cream shortening and 1 cup sugar until light and fluffy. Beat in the egg, molasses, milk and vanilla. Combine the flour, baking soda, cinnamon, salt and nutmeg; gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour., Roll into 1-1/4-in. balls; roll in remaining sugar. Place 2 in. apart on greased baking sheets. , Bake at 350° for 10-14 minutes or until tops crack and edges are slightly firm. Remove to wire racks to cool.

Steps:
- Melt shortening and let cool. Add 1 c sugar, molasses and egg. Beat well.
- Sift dry ingredients, except the remaining sugar. Add to first mixture. Mix well.
- Chill at least 1 hour. (Don't skip this step!).
- Form in 1 inch balls and roll in remaining sugar. Bake at 375 degrees for 8-10 minutes on greased cookie sheets. (As low as 7 minutes in a convection oven).
- NOTE: To get the texture just right, follow the directions closely. Specifically three things: don't substitute butter or margarine for the shortening, melt the shortening, and hand form the cookies.
MOM'S MOLASSES COOKIES
This is my mothers recipe. Ive never come across anything better for a molasses cookie. Full of flavor and so incredibly soft. Top it off with some frosting and your in pure heaven! They are so delicious that you wont just stop at one! Trust me! :)

- 1. Preheat oven to 350 degrees. Cream crisco shortening and sugar. Add molasses and eggs. Mix well. Then add water and vanilla and mix.
- 2. Add dry ingredients, flour, soda, salt, ginger, and cinnamon. Mix well until all is blended together. Drop by tablespoon full onto greased cookie sheet or line your pan with parchment paper for easy cleanup. (I used a small ice cream scoop to drop my mixture). Bake for 9 minutes. Do not overbake. Ovens vary and I have a new oven and it took 9 minutes. You may want to check at 7 minutes if you do smaller cookies. Let cool and frost.
- 3. This is a creamy mixture and makes a lot of cookies. These cookies freeze very well.
- 4. For frosting.....I just used 1 stick of butter, 3 cups of powdered sugar, 1 teaspoon of vanilla extract and 2 tablespoons of milk. Mix well and frost your cooled cookies.

- Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
- In a medium bowl, cream together the brown sugar and shortening until smooth. Stir in the egg, and then the applesauce until well blended. A real old fashioned molasses cookie for you to sink your teeth into. These cookies are cut out into circles and each one has a decorative raisin in the middle. To make sour milk, just add 1 teaspoon of vinegar to a cup of milk and let it stand for 5 minutes.

- In a large bowl, cream together the sugar and shortening until smooth. Stir in the molasses and vanilla. Combine the flour, cinnamon, baking soda and salt; stir into the mixture alternately with the sour milk. Cover the dough and chill for at least one hour.
- Preheat the oven to 375 degrees F (190 degrees C).Grease cookie sheets. On a lightly floured surface, roll out about 1/3 of the dough to 1/4 inch in thickness. Cut into circles about 3 inches in diameter using a cookie cutter or drinking glass. Place cookies 2 inches apart onto the prepared cookies sheets. Place a raisin onto the center of each cookie.
