This treasured dill pickle recipe is like an old friend. These crispy spears have a slightly salty, tart flavor with a good balance of dill, garlic and peppers. -Betty Sitzman, Wray, Colorado

Number Of Ingredients 7

11 cups water
5 cups white vinegar
1 cup canning salt
12 pounds pickling cucumbers, quartered or halved lengthwise
9 dill sprigs or heads
18 garlic cloves
18 dried hot chilies

Steps:

  • In a stockpot, bring water, vinegar and salt to a boil; boil 10 minutes. Pack cucumbers into nine hot quart jars within 1/2 in. of top. Place one dill head, two garlic cloves and two peppers in each jar. , Carefully ladle hot mixture into jars, leaving 1/2-in. headspace. . Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

Now that Mom has difficulties standing for long periods of time, I have received her recipes for all the great stuff that we enjoyed growing up! This was always one of my favourites and had this as a side with any meat and potato meal that we were served.

Yield 10 500 ml jars

Number Of Ingredients 14

2/3 cup salt
10 cups water
2 cups sugar
1/2 cup flour
1/2 cup dry mustard
1 1/2 teaspoons celery seeds
1 1/2 teaspoons mustard seeds
1 1/4 teaspoons turmeric
3 1/2 cups vinegar
10 cups cucumbers, peeled and diced
1 small cauliflower, cut in flowerets
1 1/2 cups Spanish onions, coarsely chopped
2 tablespoons salt
2 cups water

Steps:

  • Peel and slice cucumbers, cut onions (or use pearl onions) and break cauliflower into flowerets.
  • MAKE BRINE: Add salt to water. Boil and pour over vegetables. Cover loosely and set aside to cool (or overnight). Drain and add vegetables to sauce.
  • SAUCE: Combine dry ingredients and stir in vinegar. Heat and boil to thicken, stirring constantly. Add vegetables and bring to a boil, stirring occasionally. Ladle into hot jars and seal.

My mom always made this when she needed to bring an appetizer to a party. It's a super easy recipe. The thing that makes it tastier than other cheeseballs are the pickles.

8 ounces cream cheese (room temperature)
1 cup grated cheddar cheese
1/2 cup diced dill pickle
2 tablespoons mayonnaise
1 teaspoon Worcestershire sauce
1/2 cup chopped walnuts

Steps:

  • Mix first 5 ingredients together in a medium sized bowl (you will probably have to use your hands for this to mix it thoroughly).
  • Shape into ball.
  • Roll in chopped walnuts until ball is covered.
  • Refrigerate for at least an hour to harden it up a bit before serving. Serve with crackers.

17 -18 lbs pickling cucumbers (3-5-inch Long)
1 1/2 cups pickling salt
32 cups water
6 cups vinegar
3/4 cup pickling salt
1/4 cup sugar
9 cups water
2 tablespoons whole mixed pickling spices
2 tablespoons alum
14 teaspoons mustard seeds
17 garlic cloves
21 heads fresh dill

Steps:

  • Wash cucumbers using cloth and cold water.
  • Drain, Place in large crock or pot.
  • Mix 1 1/2 cups salt and 32 cups water to make 5% brine. If you need to, mix more in same proportions to cover cucumbers.
  • Poor brine over cucumbers and let stand 24hrs, then drain.
  • Wash and sterilize jars and lids. Keep jars in boiling hot water untill ready to use. Keep lids with seals in simmering (NOT BOILING)water untill ready to use.
  • Combine Vinegar, 3/4 cups salt, sugar, and 9 cups water.
  • Tie mixed pickeling spices in cheese cloth and add to vinegar, sugar, salt and water.
  • Heat to boiling then discard cheese cloth.
  • Pack cucumbers in clean HOT jars.
  • Add 2 teaspoons mustard seed, alum, 1-2 garlic cloves, 3 heads dill or 1 tabelspoon dill seed to each jar.
  • Cover with boiling water, filling jars 1/2" from top.
  • Put seals and lids on, process in a canner. If you don't have a canner, you can cover the jars with BOILING water and place in your oven at 200F for about 20 minutes. The jars and liquid need to be hot in order for it to seal.

8 pieces Medium Pickling Cucumbers (8-12 pieces)
2 pieces Bay Leaves
2 cloves Garlic
2 pinches Black Pepper (if tolerated)
1 piece Horseradish (3")
3 tablespoons OR Prepared Horseradish
2 pinches Allspice (if tolerated)
1 bunch Fresh Dill Weed
2 cups Water (purified or boiled and cooled)
1 tablespoon Sea Salt (reg. or pink Himalayan)
1 Cabbage Leaf (large)

Steps:

  • Wash and dry the cucumbers and place them tightly in a dry 1-qt jar.
  • Add the bay leaves, garlic, pepper, horseradish, and allspice to the jar and place the dill on top.
  • Mix the water with salt to create a brine and fill the jar to 1/2" above the top of the cucumbers.
  • Add a cabbage leaf to the top of the jar to hold the cucumbers in place, so they stay submerged.
  • Close the jar moderately tightly and store in a cool, dark place like a pantry, allowing it to ferment for 7 to 10 days.
  • Store in the fridge until ready to serve to ensure the survival of the beneficial microbes. Microbes will only stay active outside the fridge for up to 2 weeks, but will stay alive for months if kept refrigerated.
