Time 1h

Yield 6

Number Of Ingredients 15

¼ cup butter
1 small onion, chopped
3 celery ribs, chopped
3 carrots, chopped
⅔ cup frozen peas
3 tablespoons chopped fresh parsley
¼ teaspoon dried thyme
¼ cup all-purpose flour
2 cups lower-sodium chicken broth
⅔ cup half-and-half cream
salt and ground black pepper to taste
3 cups cooked chicken, cut into bite-size pieces
1 (16.3 ounce) can refrigerated flaky-style biscuits (such as Pillsbury Grands®)
1 egg yolk, beaten
1 tablespoon water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium-low heat, and cook the onion, celery, and carrots until the celery and carrots are tender, about 15 minutes, stirring occasionally. Stir in peas, parsley, thyme and flour, and cook, stirring constantly, until the flour coats the vegetables and begins to fry, about 5 minutes. Whisk in chicken broth and half-and-half, and cook until the sauce is thick and bubbling. Season to taste with salt and black pepper, and mix in the chicken meat.
  • Transfer the chicken, vegetables, and sauce into a 2-quart baking dish. Arrange biscuits on top of the filling. In a small bowl, beat egg yolk with water; brush egg yolk on the biscuits.
  • Bake in the preheated oven until the biscuits are golden brown and the pie filling is bubbling, 20 to 25 minutes. Let rest 10 minutes before serving.

MOM'S CREAMY CHICKEN PIE, 1940'S RECIPE

Mom's Creamy Chicken Pie, 1940's Recipe image

I know that there are a bunch of recipes for chicken pot pie, but I found no other exactly like this on here. Mom always started with fresh vegetables, (no frozen or canned) and a home-made creamy sauce (no canned soups, etc.). Once you try this, you will never make another recipe... guaranteed. Because nothing matches "from...

Time 1h30m

Number Of Ingredients 16

VEGETABLES
1 c carrot, chopped
1 c onion, chopped
1 stalk(s) celery, chopped
1 c potato, chopped
SAUCE
1/2 c flour
1 c half and half or milk
2 c canned chicken broth
1 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder, optional
ADDITIONAL INGREDIENTS
1/3 c butter, no substitutes
2-3 boneless skinless chicken breasts, poached and cubed.
1 double pie crust, home-made (if you don't like making your own pie crust, betty crocker makes a boxed mix found in the baking isle that is pretty good... much better than the refrigerated red boxed one.)

Steps:

  • 1. Preheat oven to 350 degrees. Cook vegetables in a large pan in butter until tender. Add flour to vegetables, cooking flour for a minute or so. Add milk or half and half and broth gradually to pan. Continue to cook on med/low until it starts to thicken and get bubbly. Remove from heat. Add garlic powder, salt, pepper and cubed chicken.
  • 2. Place bottom crust in deep pie plate. Pour in filling. Lattice cut remaining pie crust, if desired, or use solid top crust. Cut slits in top crust. Bake for 45 minutes at 350 degrees or until it starts to bubble from the top. Cover with a loosely fitting foil tent half way through to prevent crust from getting too brown.
  • 3. Allow to cool slightly before serving.

MOM'S CHICKEN

Provided by Michael Symon : Food Network

Categories     main-dish

Time 1h40m

Yield 4 servings

Number Of Ingredients 10

1/4 cup fresh lemon juice
1/4 cup extra-virgin olive oil
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh rosemary
2 teaspoons chile flakes
1 teaspoon freshly grated nutmeg
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
12 cloves garlic, smashed
One 4- to 6-pound chicken, cut into 8 pieces

Steps:

  • In a mixing bowl, whisk together the lemon juice, olive oil, oregano, rosemary, chile flakes, nutmeg, salt, pepper and garlic. Place the chicken pieces in a resealable bag and pour the marinade in, coating all of the meat. Allow the chicken to marinate, refrigerated, 1 to 4 hours or up to overnight.
  • Set up a grill for cooking with indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Allow the temperature to come up to 375 degrees F.
  • Remove the chicken from the marinade. Place the chicken pieces skin-side up on the indirect-heat side of the grill and close the lid. Cook the chicken until almost cooked through, about 10 minutes. Move the chicken pieces over to the direct heat side of the grill and cook until nicely charred and cooked through, 2 to 3 minutes per side. Remove from the grill and allow to rest for 5 minutes before serving.

MOM'S CHICKEN POT PIE

Slightly varying from any other pot pie I've seen on here. I like my mom's hope you will too. Mom makes hers in a 9x9" baking dish, but you can use a regular 9" round pie shell just the same.

MOM'S CHICKEN POT PIES

Mom's Chicken Pot Pies image

This is the only chicken pot pie I will eat - Mom's recipe, the best ever, my favorite dish from childhood (it is fun to eat the little pies).

Provided by larchie

Categories     Savory Pies

Time 50m

Yield 4 serving(s)

Number Of Ingredients 9

3 -4 boneless skinless chicken breasts
1/2 cup chopped celery
1 tablespoon chopped toasted almond (optional)
1/2 cup mayonnaise
1 (15 ounce) can cream of mushroom soup (get regular size can)
1 (15 ounce) can chicken broth (get regular size can)
1/4 cup dried breadcrumbs
1/4 cup grated parmesan cheese
1 (16 ounce) package frozen tart shells (in freezer section with regular frozen pie shells. They come 8 to a pkg. We don't know if this is th)

Steps:

  • Boil chicken or cook in a pressure cooker. I use a pressure cooker and use the water from it as the chicken broth. You could also cook in a microwave and use canned broth.
  • Chop the chicken. In a bowl mix all ingredients except bread crumbs and grated cheese.
  • Fill uncooked tart shells with chicken mixture. Combine some bread crumbs and cheese; sprinkle on top of the pot pies.
  • Place on baking sheet and cook in 350 degree oven about 30 minutes or until the pie shells are brown. You can also make this in a regular pie shell.
