These simply delicious chicken and dumplings have thousands of fans - this family-favorite dinner is my most popular recipe on Pinterest. The chicken stew takes help from a rotisserie chicken, but the dumplings are made from-scratch and practically fool-proof!

1 rotisserie chicken (white and dark meat shredded and skin removed)
6 small carrots (peeled and diced)
3 ribs celery (diced (about 1 cup))
1 sweet onion (diced)
1/2 cup fresh parsley (finely chopped)
2 tbsp unsalted butter
1 tsp salt
1/2 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp black pepper
4 cups chicken stock
1 can cream of onion soup (you can also use cream of chicken or cream of celery)
2 cups all-purpose flour
4 tsp baking powder
1 tsp salt
3/4 cup milk
4 tbsp unsalted butter (melted)

Steps:

  • In a large stock pot over medium heat, melt the two tablespoons of butter and add the carrots, celery, onion, parsley and all the seasonings, salt through pepper. Cook until the vegetables are starting to soften, about 5 - 8 minutes.
  • Add the cream of onion soup, chicken stock and shredded rotisserie chicken. Stir well. Bring to a low boil and reduce heat to a gentle simmer.
  • To make the dumplings, whisk together the flour, baking powder and salt. Whisk together the milk and melted butter. Pour the milk mixture into the flour mixture and stir together with a spatula until a smooth ball of dough forms.
  • Using a 1.5 tablespoon capacity cookie scoop, drop the dumpling batter balls into the simmering stew one at a time until all the dough has been used. The dough should make 15 dumplings.
  • Cover the pot and allow to cook (without uncovering) on a low simmer for 25 minutes.
  • Serve immediately.

1 stewing chicken (about 5 pounds), cut up
10 cups water
1 large onion, chopped
2 medium carrots, sliced
3 celery ribs, chopped
4 garlic cloves, minced

1/8 teaspoon pepper
1/2 cup half-and-half cream
DUMPLINGS:
2 cups all-purpose flour

2 large eggs, room temperature
1/2 cup buttermilk
1/4 cup butter, melted

Steps:

  • In a stockpot or Dutch oven, combine first seven ingredients. Bring to a boil; skim foam from broth. Reduce heat; cover and simmer until chicken is tender, about 1-1/2 hours. Remove chicken; when cool enough to handle, debone and dice. Strain broth, reserving broth and vegetables. , In the same pot, melt butter. Stir in flour, paprika and pepper until smooth. Gradually stir in 6 cups reserved broth (save remaining broth for another use). Bring to a boil; boil and stir for 2 minutes. Reduce heat; stir in the cream, reserved vegetables and chicken. Cover and bring to a boil; reduce the heat to simmer. , For dumplings, combine flour, baking powder, sugar and salt in a bowl. Combine eggs, buttermilk and butter; stir into dry ingredients to form a stiff batter. , Drop by tablespoonfuls onto simmering mixture. Cover and simmer until a toothpick inserted in a dumpling comes out clean (do not lift cover while simmering), about 20 minutes. Serve immediately.

4 to 6 boneless, skinless chicken breasts, cooked and cut into small pieces
2-32 oz cartons chicken broth (you may not need as much. start with 1 1/2 cartons and if it seems too thick, add the remaining broth).
3 can(s) cream of chicken soup
1/2 to 1 tsp hot sauce (optional)
1 dash(es) black pepper
DUMPLINGS
2 c all purpose flour
2 c self-rising flour
1 c shortening
1 1/2 - 2 c milk
NOTE: THIS RECIPE CAN BE CUT IN HALF FOR SMALLER FAMILIES

Steps:

  • 1. Cook chicken breasts. Cool and cut into bite-sized pieces, set aside while making the dumplings.
  • 2. DUMPLINGS: In a large bowl, mix together flours and shortening until mixture resembles a coarse meal. Add milk a little at a time and mix until it forms a soft dough. On a floured surface, roll or pat out dough to about 1/4" thickness. Cut into small squares using a pizza wheel. Squares do not have to be uniform. NOTE: You may also drop dumplings by heaping teaspoons into broth, but we prefer them rolled out and cut.
  • 3. BROTH: In a large Dutch oven, combine broth, soups, and hot sauce and bring to a boil. Add chicken and then add dumplings one at a time and stir very lightly, sprinkle with black pepper. Return to boil and reduce heat. Cover and simmer for about 15 to 20 minutes or until dumplings are cooked and sauce has thickened. If sauce is too thin, mix a couple of tablespoons flour and water and mix into a pourable paste. Add to broth to thicken.
  • 4. SPECIAL NOTE: It is very important to add the dumplings one at a time. Do not add them all at once or you will have one big clump.

¼ cup butter
2 ribs celery, quartered
1 large carrot, quartered
1 small onion, chopped
1 teaspoon mashed garlic
2 large bay leaves
½ teaspoon dried thyme

2 pounds bone-in chicken breasts
water to cover
2 tablespoons self-rising flour (such as White Lily®)
2 cups self-rising flour (such as White Lily®)
¼ cup cold shortening
¼ cup chicken broth, slightly chilled

Steps:

  • Melt butter in a stock pot over medium-high heat. Add celery, carrot, onion, garlic, bay leaves, thyme, salt, pepper, and poultry seasoning; cook and stir until flavors combine, about 5 minutes. Push vegetable mixture to the sides and add chicken; cook until browned, 3 to 5 minutes per side.
  • Pour enough water over the chicken to cover by 3 inches; bring to a boil. Stir, scraping the browned bits off of the bottom of the pot. Reduce heat; simmer until chicken is tender, about 1 hour. Transfer chicken and carrots to a serving plate with a large slotted spoon; let cool.
  • Ladle 1/4 cup cooking liquid into a bowl; cool slightly, about 5 minutes. Mix in 2 tablespoons flour. Stir back into the pot.
  • Place 2 cups flour in a large bowl; cut in shortening with 2 knives until mixture forms pea-sized bits. Mix in chilled chicken broth until dough is combined.
  • Turn dough out onto a floured work surface. Knead 5 to 6 times; pat down to 1-inch thickness. Sprinkle lightly with flour; roll out to about 1/8-inch thickness. Cut dough into squares with a sharp knife.
  • Drop squares, in batches, into simmering cooking liquid, moving squares to the side with each addition. Partially cover pot; simmer until dumplings are firm, about 12 minutes. Separate any dumplings that stick together. Remove from heat; keep covered.
  • Bone chicken; cut into bite-sized pieces and return to the pot. Chop carrot; return to the pot. Cool chicken and dumplings, about 30 minutes, before serving.

When I was a child my Mother made "Chicken and Dumplings" that were out of this world. They approached Paradise. After I was grown and took up cooking I tried in vain to find "her" recipe. I never developed a taste for drop dumplings.A few months ago I was watching an regional home cooking show on the TV, suddenly there was "Mom's Chicken and Dumplings" on a program about Pennsylvania Dutch cooking. How Mom came by it originally is one of life's mysteries. This is so good, chickens volunteer for the privilege of being part of it.

3 1/2-4 lbs whole chickens
1 bunch celery, divided in half
3 teaspoons chicken bouillon powder
1 (28 ounce) can crushed tomatoes, with liquid (optional)
1 pinch saffron
5 eggs
1/2 cup water
4 cups flour

Steps:

  • In a 6 quart pot, simmer the chicken and 1/2 of the celery in 2 quarts of water for 1 hour or 'til tender.
  • Remove the bones and discard. Set the meat aside.
  • Add water to the pot enough to make 3 1/2 quarts. Bring to a boil.
  • Add tomatoes (If you chose, Mom didn't), celery, bouillon, and saffron. Bring to a simmer.
  • Prepare dumplings.
  • Beat eggs and water in a large bowl.
  • Gradually add flour, mixing with a whisk 'til it thickens.
  • Switch to a spoon and mix 'til a soft dough forms.
  • Turn out on a floured board, knead for 1-2 minute.
  • Divide into 3 parts.
  • Roll out to about 3/16 of an inch thick.
  • Cut into strips 1/2 X 1 inch with a floured knife or a pizza wheel.
  • Drop these 2 or 3 at a time into the chicken broth, stirring gently as you go.
  • Cook 'til tender about 15 minutes.
  • Add chicken meat. Cook 'til heated through.
  • Salt and pepper to taste.

1 whole 3 1/2 to 4 pound chicken
1 bunch celery, divided
3 teaspoons granulated chicken bouillon
2 (14-ounce) cans whole tomatoes, roughly chopped and liquid reserved
3 to 5 small white potatoes cut into quarters (optional)
Pinch saffron threads
Bott Boi dough, recipe follows
Salt and pepper
5 eggs
1/2 cup water
4 cups flour

Steps:

  • In a 6-quart stockpot, simmer chicken and half of the celery in 2 quarts of water for 1 hour or until chicken is tender. Remove meat from bones and set aside, discard bones. Add more water to the chicken broth to make about 3 1/2 quarts. Bring to a boil, add reserved tomato liquid, tomatoes, remaining celery, bouillon and saffron, then simmer.
  • In a separate pot bring water to a boil, add potatoes, and cook for 15 minutes. Drain and set aside.
  • Drop bott boi squares into simmering broth and cook until tender, about 15 minutes. Add the chicken meat back to the broth along with cooked potatoes, salt, and pepper, to taste. Cook until heated through. Serve hot.
  • Beat eggs and water together in a large bowl. Gradually add flour and continue to mix with a whisk until it begins to thicken then switch to a spatula and mix until a soft dough is formed. Place dough on a floured surface and knead for 1 to 2 minutes. Divide the dough into 3 parts. Roll each part on a floured wooden surface in a rectangular shape as thin as you can. Use a wet towel underneath the board to keep it from slipping around. Add another cup of flour to the board if you needed
  • Cut into 1-inch squares with a pastry wheel and drop into the boiling broth.

MOM'S CHICKEN AND DUMPLINGS (CHICKEN PAPRIKA)

This was a staple at our house when I was growing up. My mom made this about two times a month and often had to double the dumplings! Since my mom is not good at exact measurements, I tried my best to recreate this great one pot meal from her verbal instructions. She calls this Chicken Paprika, but I am told it would have to have sour cream in it, and it doesn't, which is fine with me :) ****NOTE 1/15/08: I've adjusted the quantities of salt and paprika because depending on what kind of chicken you use, different amounts of water will be used, needing different amounts of spicing. You may also increase the pepper and garlic, if desired, but be careful as garlic should not be a dominant flavor in this dish.

4 lbs chicken thighs, skin removed (boneless thighs if you can find them)
water
2 small onions, chopped
1 tablespoon butter or 1 tablespoon oil
1/2 teaspoon garlic powder
1 -2 teaspoon salt

1 -2 tablespoon paprika
2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper

1 large egg, beaten
water

Steps:

  • In a stock pot or dutch oven saute onions in butter until tender.
  • Add water until pot is about 1/3 full.
  • Add chicken thighs, garlic powder, salt, pepper and paprika.
  • Make sure water is covering the chicken, if not add more until it just covers.
  • Bring to a boil and then simmer for 90 minutes, covered, stirring occasionally.
  • In the meantime, make the dumplings: Mix the flour, salt, pepper and paprika in a medium bowl until combined.
  • Make a well in the center and drop in the egg and about 1/2 cup water.
  • Stir and add more water by the tablespoon until you have a sticky dough that just leaves the side of the bowl.
  • In a different large pot from chicken, boil water.
  • Drop dumpling mixture by the teaspoon into the boiling water.
  • (I use a regular teaspoon from my flatware, not a measuring spoon.) If dumpling mix is too sticky to drop from spoon, then dip the spoon into the boiling water, the dumpling should slide right off.
  • When dumplings start floating on top, remove them with a slotted spoon or drain them.
  • You may have to reduce the heat to see when they are floating.
  • About 30 minutes before chicken should be done, add the dumplings to the pot with the chicken.
  • After 30 minutes, you should have a delicious dish: the chicken should be tender enough that it is falling off of the bone and the dumplings should have made a thicker sauce out of the liquid the chicken was cooking inches.

1 -4 lb whole chicken, cut up (can also use thighs and legs only, I always just grab whatever i have frozen)
1 medium onion (cut into 1/8 pieces)
2 -3 stalks celery (cut into 1 inch pieces)
baby carrots (about 20)
chicken bouillon cube
water
2 1/2 cups Bisquick baking mix
2/3 cup milk

Steps:

  • Clean chicken thoroughly, pat dry and season with salt and pepper.
  • Place in pasta pot with onion, celery, carrots and bouillon cubes and fill with water (just enough to cover the chicken).
  • Bring to boil, then simmer on medium heat for 45 minutes to an hour (check the chicken with a fork to test doneness).
  • About 5 minutes before chicken is done, make the Bisquick Dumplings Recipe (exactly as it states on the box - 2 1/2 cups Bisquick with 2/3 cup milk).
  • Mix Bisquick into dough and then drop spoons fulls into the boiling chicken pot.
  • Let cook, UNCOVERED, for 10 minutes. Then cook for an additional 10 minutes covered.
  • VOILA! Dinner is served!

I have been looking for a recipe my mom used to make us as kids, for a long time and someone helped me out in the Zaar forums recently and told me the real name of it. This is what I came up with after reviewing many recipes and concocting one of my own. I am thinking the noodles aren't quite what I remember so I will be tweaking them and may repost a 2nd revised recipe later. Since this is a stew it freezes beautifully, and it makes a lot so I serve half of it and freeze the rest for a quick dinner some other time.

2 1/2 cups flour, unsifted
1 teaspoon salt
3 large eggs
1 tablespoon cold water
2 tablespoons olive oil
2 large carrots
2 stalks celery
6 boneless skinless chicken breasts
3 tablespoons poultry seasoning
9 cups water
2 medium potatoes
1 medium onion
3 tablespoons flour
3/4 cup water

Steps:

  • Make the dough first. Mix 2 cups flour with the eggs, salt, and water, then work in enough of the remaining 1/2 cup of flour to make a stiff dough.
  • Roll out on lightly floured surface as thin as you can get (usually 1/4 inch).
  • Cut into 1 inch squares, and set aside until needed.
  • Heat the oil in a deep saute pan and cook chicken breasts until browned on both sides and almost done in the center. Remove from pan and set aside.
  • While the chicken is cooking dice your carrots and celery, slice the potatoes into 1/4 inch slices, and slice the onion very thin.
  • After removing the chicken from the pan, add the carrot and celery and saute over med-high heat for 8-10 minutes.
  • Slice the chicken and add it back to the pan.
  • Add the poultry seasoning and the 9 cups of water and bring to a boil.
  • Add the dough pieces one at a time layering with the potatoes and onions, gently pushing down after everything is in so that it is covered with broth.
  • Bring to a simmer and cover and reduce heat. Simmer about 15 mins stirring gently every 5 mins or so.
  • Mix the 3 tbsp flour with the 3/4 cup water mashing all the lumps, then stir into the pot. This with slightly thicken the broth to make it more like a stew.
  • Enjoy!

I have found I don't have the time to start from scratch and that this version tastes just as good with less fuss! You can substitute freshly cooked chicken, if desired. You can line the slow cooker with a slow cooker liner for easy clean-up.

This is one of those recipes of my mom's that I simply can't master as well as she has. Barbara Mooers requested that I post it, so I did. My mom being a "dump cook" just throws it together and it tastes wonderful. I follow this recipe to the letter and it never tastes as good as hers though. Hope you have some luck with it.

1 whole fryer
flour
chicken soup base
salt and pepper

Steps:

  • Place chicken in large pot, cover completely with water.
  • Boil chicken until cooked through.
  • Remove chicken and let cool.
  • When chicken is cool begin pulling meat from the bird.
  • Meanwhile, when broth is still warm add chicken soup base/boullion.
  • Season to your tastes, I use approx.
  • 2 tablespoon.
  • Some people may want more.
  • You may also add salt and pepper if you choose.
  • The broth will be fairly salty, so I would taste to be sure.
  • Mix flour and broth to create dough.
  • You will mix 1/2 cup of flour for every cup of dough.
  • I would begin by starting with 1/2 cup of flour to 1 cup of dough, as that makes quite a bit.
  • Repeat if you want to double the recipe.
  • Stir, and then work with hands to form dough.
  • This dough will be sticky.
  • Place on well floured surface, cover outside of doughball with flour, so rolling pin won't stick.
  • Turn chicken broth up to about medium heat, you want it really hot, but not to the point of boiling.
  • Roll dough out to approximately the width of 1/8 inch.
  • Cut into long strips, and then cut long strips into sections approximately 2 inches long.
  • When broth is ready begin dropping dough strips into pot.
  • Do not stir, just push down to bottom of pot.
  • When dumplings are done, add chicken meat.
